Very little prep, just layer in crock pot/slow cooker, leave it for the day and a filling, delicious soup will be ready for dinner. This recipe is a very versatile base split pea soup. For a Vegan option, omit the meat. I have made this recipe using ham, ham hock, and bacon. I have used veggie broth, chicken broth and water... each tasting different but yummy! I have reduced the salt but have not adjusted the recipe as written. This soup is even better the next day, it freezes well. This tends to be a thicker soup (especially once it has cooled) so adjust liquid after cooking to desired thickness.

2 cups diced ham
3 carrots, peeled and sliced
1 medium onion, chopped

1 medium onion, diced small

1 tablespoon minced fresh thyme leaves (or 1 teaspoon dried thyme, crumbled)
2 dried bay leaves
2 small ham hocks (1 1/4 pounds total), with several 1/2-inch slits cut into skin
Coarse salt and ground pepper

Steps:

  • In a medium pot, bring broth to a boil, then carefully pour into a 5- to 6-quart slow cooker. Add split peas, onion, carrots, celery, bell pepper, garlic, thyme, bay leaves, and ham hocks; season with salt and pepper.
  • Cover and cook on high until split peas are creamy, 6 hours, stirring occasionally.
  • Remove ham hocks from pot. Discard skin and bones; dice meat. Discard bay leaves. Lightly mash peas with the back of a wooden spoon. Return ham to soup and season to taste with salt and pepper.

Steps:

  • Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
  • Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. 2 quarts cold water
1 ½ pounds ham bone
2 onions, thinly sliced

Steps:

  • In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.

1 lb dry split peas, rinsed
2 medium potatoes, peeled & diced (2 cups)

  • 1. Combine all ingredients in a large crock pot. Season with garlic powder, salt, and pepper to taste.

The parsnips add a creamy sweetness that complements the flavor of the split peas. If parsnips are unavailable, use carrots instead. Because the peas have a tendency to settle on the bottom of the pot, a quick stir midway through the cooking process is helpful. The Liquid Smoke adds a "bacony" flavor to the soup and is available in most supermarkets.   • Spray a 4 to 6 quart slow cooker with nonstick cooking spray.
  • Combine ham, split peas, onion, garlic, celery, celery leaves, carrots, parsley, thyme, pepper, salt, chicken broth, and water in the prepared crock pot and stir to combine.
  • Cover the slow cooker and cook on low for 10 to 12 hours or on high for 4 to 5 hours. Just before serving use a potato masher to mash some of the peas in the soup for a thicker consistency if desired. Note: Split peas should soften just fine in this amount of cooking time. They do not need presoaking. If your split peas are hard after this length of cooking time, there is something wrong with the peas or with your water. If the peas are very old and dried out, they won't soften. And if the water you use for making the soup is hard with lots of dissolved minerals that can stop the peas from softening. 16oz pkg dried green split pea's ; rinsed
1 ham bone or meaty ham hocks
3 medium carrots ; peeled and sliced
1 medium onion ; chopped
2 stick celery + leaves ; chopped
2 clove garlic ; minced
1 bay leaf
1/4 c parsley ; chopped
1 Tbsp seasoned salt (or to taste)
1/2 tsp fresh pepper
1 1/2 qt hot water (6 cups)

Steps:

  • 1. Layer ingredients in the crock pot ; pour in water ; DO NOT STIR.
  • 2. Cover and cook on HIGH setting 4-5 hours or on LOW setting for 8-10 hours ; until the peas are very soft and the meat falls off the bone.
  • 3. Remove bone and bay leaf before serving.
