1/2 cup dark brown sugar
1/2 cup honey
1/2 cup fresh orange juice
1/2 cup peach nectar
4 to 5 chipotles, minced
5 pound spiral cut smoked ham

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together the brown sugar and honey. Set aside.
  • In another small bowl, mix together the orange juice, peach nectar and chipotles.
  • Arrange the ham, cut end down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and in between the layers. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.
  • Remove the ham from the oven. Reserve about 1 1/2 cups of cooked juice from baking dish. Brush the honey mixture on the ham and return to the oven to bake for an additional hour until a crust forms and the ham begins to caramelize. Remove from the oven to a serving platter and serve with the reserved baking juice.

1 pound ground beef
1 medium onion, finely diced
1 tablespoon minced garlic
1/2 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon coarse ground black pepper
1 tablespoon salt
1 jalapeno, finely diced
1/2 cup bread crumbs
1/2 cup beef broth
1 beaten egg
1 teaspoon curry powder
1 tablespoon water
2 packages premade pie crust
Special equipment: 3-inch cookie cutter

Steps:

  • Preheat the oven to 400 degrees F.
  • Brown the ground beef in a large saute pan over medium heat. Add the onion, garlic, paprika, thyme, black pepper, and salt. Stir together, and then add the jalapeno. Remove from the heat, and add the bread crumbs and the beef broth. Stir well to combine and set aside to cool completely.
  • In a small bowl, whisk together the egg, curry powder and water. Set aside.
  • On a work surface, flatten the pie crusts and cut out 3-inch rounds using a cookie cutter.
  • Add a hearty tablespoon of the beef mixture onto each round. Fold over and press the edges with your fingers. Crimp the edges with a fork. Transfer the patties to a baking sheet and brush the tops with the egg mixture. Bake in the preheated oven for 30 minutes.
  • Arrange on a serving platter and serve.

1 (8-10-pound) shank-end, spiral-sliced, bone-in ham
3 Scotch bonnet or habanero chiles, seeds removed, finely chopped
4 garlic cloves, finely grated
1 tablespoon finely grated peeled ginger
1/2 cup tamarind concentrate
1/2 cup plus 1 tablespoon honey
Kosher salt
1/2 cup dry red wine
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Let ham sit at room temperature 1 hour for even baking.
  • Place a rack in lower third of oven; preheat to 300°F. Wrap ham tightly in foil and place on a wire rack set inside a foil-lined rimmed baking sheet. Bake until an instant-read thermometer inserted into the thickest part of ham, avoiding the bone, registers 120°F, 1 1/2-2 hours.
  • Meanwhile, mix chiles, garlic, ginger, tamarind, and 1/2 cup honey in a small bowl; season lightly with salt. Set 1/3 cup glaze aside for sauce.
  • Remove ham from oven and uncover. Increase oven temperature to 450°F. Brush ham with 1/3 cup glaze and bake 10 minutes. Brush with another 1/3 cup glaze and bake until surface is crisp and looks lacquered, 10-15 minutes. Remove from oven and tent with foil; let ham rest 20 minutes before slicing.
  • Meanwhile, bring wine to a boil in a small saucepan over medium heat; cook until reduced by half, about 5 minutes. Whisk in reserved 1/3 cup glaze and remaining 1 Tbsp. honey. Cook, stirring often, until fragrant, about 2 minutes. Add butter 1 piece at a time, incorporating completely before adding more, until sauce is glossy, about 3 minutes. Taste and season with salt.
  • Serve ham with sauce alongside.

  • Glaze can be made 1 day ahead. Cover and chill. Bring to room temperature before using.

3 tablespoons smoked paprika
1 teaspoon salt
1 tablespoon onion powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon dried ground thyme
1 teaspoon dried oregano
1/2 teaspoon garlic powder
4 tilapia fillets
2 tablespoons grapeseed oil (can sub olive oil)
1/2 lemon, juiced
1/4 cup heavy cream
1/2 cup mayonnaise
1 1/2 tablespoons olive oil
1 teaspoon finely grated lemon zest
1 small garlic clove, finely minced
1 dash salt

Steps:

  • To make the aioli: beat cream in a small bowl with a whisk until stiff peaks form. Fold in remaining ingredients until blended. Cover mixture and chill. Store leftovers in an airtight container in refrigerator for up to 3 days.
  • In a small bowl combine all of the spices. Press a heaping tablespoon of the spice mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 minutes at room temperature prior to cooking.
  • In a large skillet, heat the oil over medium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 minutes on each side. Sprinkle with lemon juice or a dollop of Lemon Aioli.

1/4 cup canola oil
1 1/2 large onions, diced small
1/2 green bell pepper, diced small
1 -1 1/2 tablespoon kosher salt
2 teaspoons fresh ground black pepper
1 1/2-2 cups all-purpose flour (it originally called for 3 cups, but that's too much)
1 tablespoon granulated onion powder
2 tablespoons garlic powder
2 1/2 lbs beef tenderloin, sliced lengthwise and cubed (you can use a less expensive cut of meat like stew meat or rump roast)
6 cups water
1/4 cup beef bouillon cube, powder
8 ounces sliced American cheese (or provolone cheese or sharp cheddar cheese)
bread bowl, hollowed out, for serving (use the bread that you hollowed out to make croutons!) (optional)
sliced chives, to garnish
chopped fresh parsley leaves, to garnish

Steps:

  • In a large stockpot or Dutch oven, heat oil. Add onions and saute for 2 to 3 minutes on high until fragrant and tender.
  • In a large bowl, mix salt, pepper, flour, onion powder, and garlic powder together. Add meat to seasoned flour. Dredge to coat and add flour(start with the 1 1/2 cups flour) and meat to pot with onions and green bell pepper.
  • Saute on medium high heat until meat is lightly browned, stirring frequently for about 8 to 10 minutes.
  • Add water and beef bouillon to pot and continue to cook and stir on high until soup begins to thicken(if not thick enough, add a little flour at a time till desired thickness). Bring to a boil. Turn heat off and add cheese. Cover the pot with a lid and allow the cheese to sit and melt.
  • Pour into bread bowls and garnish with chives and parsley. Enjoy!

SPICY MAPLE-GLAZED SPIRAL HAM

You just know a spiral ham is going to taste awesome, no matter how you cook it. But lacquer it up with maple syrup, apple juice, espresso, Worcestershire sauce, and Korean chili paste, and it becomes the kind of flavor bomb that will utterly transform your holiday experience.

1/2 cup gochujang, Korean fermented chili paste
1/2 cup apple juice
1/4 cup maple syrup
1 teaspoon Worcestershire sauce
1/4 cup espresso or strong coffee
7 pounds cooked bone-in spiral ham
Leaves from ½ bunch purple kale or cabbage
1/2 cup pomegranate seeds

Steps:

  • Preheat oven to 380 degrees F. Whisk gochujang, apple juice, maple syrup, Worcestershire sauce, and espresso in a small bowl.
  • Place ham onto a rack fitted over a sheet pan. Generously brush the glaze all over the ham with a pastry or silicone brush. The glaze will seep into the ham, giving it a burnished finish throughout. Bake 1-1½ hours, depending on the size of your ham, basting every 15 minutes.
  • After 15 minutes, for the first basting, the spiral cuts will begin to brown and separate. Baste all over, then place back in the oven. The ham will be basted 5-6 times in total, for a bubbly, burnished finish.
  • Remove ham from oven and pull away the outermost layer from the cut side (this slice will be dried out). Let rest while preparing the garnish. Lay kale or cabbage leaves onto a platter, then sprinkle with pomegranate seeds. Gently place the ham on the leaves and serve.

1/2 cup dark brown sugar
1/4 cup honey
1 orange, juice and zest of
2 teaspoons pumpkin pie spice
6 -8 scrapes fresh nutmeg, using a rasp
1 (6 -7 lb) bone-in half spiral ham
10 -12 sprigs fresh thyme
kosher salt & freshly ground black pepper

Steps:

  • Heat the oven to 325 degrees F.
  • In a bowl, mix together the brown sugar, honey, orange zest, 1/4 cup orange juice, pumpkin pie spice, and nutmeg. Season with salt.
  • Roll out enough aluminum foil to surround the ham and place the ham in the center of the foil. Peel back the layers of the ham and place a sprig of thyme between every other layer of the spirals. Pour half of the glaze over the ham allowing it to sink into the slices. Tightly wrap the ham in the foil and place on a rack in a roasting pan. Fill the pan with an inch of water and roast in the oven until the internal temperature reaches 140 degrees F, about 20 minutes per pound.
  • Pour the remaining half of the glaze in a small saucepot on medium heat and bring to a simmer. Whisk until small bubbles appear all over, then turn off the heat. The glaze will thicken as it rests.
  • Raise the oven temperature to 400 degrees F.
  • Remove the ham from the oven. Using caution and tongs to help, peel back the aluminum foil from the top, leaving the aluminum foil on the sides and underneath the ham to catch the glaze and juices. Slather the remaining glaze all over the top of the ham and place back in the oven uncovered for 15 more minutes. Remove and let rest before slicing.
