"I created this lighter version of a hot spinach dip after my husband and five kids raved about a similar appetizer at one of our favorite restaurants," says Debbie Marrone of Warner Robins, Georgia. TIP: "It's great with tortilla chips, bagel chips or low-fat wheat crackers," Debbie suggests.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces fat-free cream cheese
1/2 cup shredded reduced-fat cheddar cheese
1/2 cup reduced-fat sour cream
1 tablespoon spicy brown mustard
1 teaspoon minced garlic
3/4 teaspoon hot pepper sauce
1/4 teaspoon salt
Assorted fresh vegetables

Steps:

  • In a large saucepan, combine the first eight ingredients. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 7-8 minutes or until cheese is melted, stirring occasionally. Serve warm with vegetables.

3 garlic cloves, peeled and diced (we love garlic, so feel free to sub for 1 or 2 cloves)
2 cups nonfat Greek yogurt
8 oz reduced fat cream cheese
1 ½ cups parmesan cheese
15 oz artichoke hearts, drained and lightly chopped
10 oz bag frozen spinach, thawed and drained*
½ teaspoon red pepper flakes, optional for a little spice

Steps:

  • In a pot over medium-heat, add garlic cloves and cook until fragrant.
  • Next, add in all remaining ingredients.
  • Cook until all the cheese has melted, stirring often.
  • Once everything is well incorporated and mixed together, let simmer for 2-3 minutes.
  • Remove, pour onto a plate, and serve!

8 oz frozen spinach (defrosted and drained)
2 c full fat greek yogurt
4 oz cream cheese (room temperature)
8-oz can water chestnuts (drained)
1 tsp kosher salt
½ tsp onion powder
½ tsp garlic powder
½ tsp dried parsley

Steps:

  • Place the spinach in a mesh strainer; run under warm water until the spinach is defrosted. Squeeze the excess liquid from the spinach until dry.
  • Combine yogurt, cream cheese, water chestnuts, salt, onion powder, garlic powder, and parsley in the bowl of a food processor. Process 30 seconds, scrape down the sides, then process an additional 30-60 seconds until smooth.
  • Transfer the mixture to a mixing bowl. Add the spinach and mix with a rubber spatula until combined.
  • Place in the refrigerator and chill for at least 1 hour.
  • Serve with pita or your favorite sliced raw vegetables.

10 oz frozen spinach (thawed and squeezed)
1/4 cup chopped shallots
1 clove garlic
1/2 cup fat-free Greek yogurt
1/2 cup light mayonnaise
2/3 cup good quality grated parmesan
4 oz shredded part-skim mozzarella cheese
salt and fresh pepper to taste
olive oil spray

Steps:

  • Preheat oven to 375°F.
  • In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
  • Combine all the ingredients in a medium bowl.
  • Place in an oven-proof dish and bake at 375F for 20-25 minutes, until hot and cheese is melted. Serve right away.

1 cup diced artichoke heart (frozen or canned, but not marinated)
1/2 cup frozen chopped spinach, thawed
8 ounces cream cheese
1/2 cup grated parmesan cheese
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 dash ground pepper

Steps:

  • Put the artichoke hearts and spinach in a microwave-safe bowl, and cover it with plastic wrap. Cut a small slit in the plastic to let the steam out, then microwave on high for 4 minutes. Stir, and zap it again for another 2 to 3 minutes or until the artichoke hearts are tender. If you don't want to use a microwave you can also boil the spinach and artichoke hearts in a cup of water in a small saucepan over medium heat until tender, around 10 minutes. Drain in a colander when done.
  • Heat the cream cheese in a small bowl in the microwave set on high for 1 minutes. Or, use a saucepan to heat the cheese over medium heat just until hot.
  • Add the spinach and artichoke hearts to the cream cheese and stir well.
  • Add the remaining ingredients to the cream cheese and combine. Serve warm with crackers, chips, or toasted bread for dipping.
  • To make a lighter version, use reduced fat cream cheese.
