SPINACH CHEESE BUNDLES
This is from a new cookbook that I just purchased yesterday called "100 Best 4 Ingredient Recipes". I could not resist this book, simple and few ingredients are my favorite. I have not tried any yet, but could not resist sharing some of these easy recipes. Hope you enjoy!

Steps:
- Preheat oven to 400 degrees.
- Mix spreadable cheese, spinach and pepper in a small bowl.
- Roll out one sheet of pastry dough onto a floured surface, rolling into a 12 inch square.
- Cut pastry into 16 (3 inch) squares.
- Place about 1 teaspoons of cheese mixture in the center of each square.
- Brush edges each square with water.
- Bring edges together up over filling and twist tightly to seal.
- Fan out corners of pastry for a nice look.
- Place bundles about 2 inches apart on a baking sheet.
- Bake approximately 13 minutes or until golden brown.
- Repeat procedure with the remaining sheet of pastry dough and cheese mixture.
- Serve warm with dipping sauces.

SPINACH BUNDLES
These elegant and crunchy little bundles are much easier to make than they look.

- Preheat oven to 400 degrees. In a mixing bowl, whisk eggs until frothy. Squeeze out excess water from spinach, and add spinach to eggs. Fold in breadcrumbs, feta, scallions, dill, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
- Lay 1 phyllo sheet on a clean work surface. Brush phyllo lightly with oil, and lay another sheet on top. Repeat layering phyllo sheets until all are used. Cut the stacked sheets into four squares.
- Gently press phyllo squares into the four outer cups of a nonstick cupcake pan, being careful not to tear bottom. Spoon 1/4 of the spinach mixture into each lined cup. Gather excess dough at top of each filled cup, and twist to seal.
- Bake bundles in oven until golden brown, about 20 minutes. Serve warm or at room temperature.

- Preheat oven to 400º. Combine cheese, spinach, and pepper in small bowl and mix well.
- Roll out each sheet of puff pastry into 12" square on a lightly floured surface. Cut each square into 16 (3") squares.
- Place about 1 tsp cheese mixture in centre of each square. Brush edges with water, and bring together over filling, twisting lightly to seal. Fan out corners of puff pastry.
- Place 2" apart on ungreased baking sheets. Bake 13min or golden. Serve warm with sweet and sour sauce if desired.

Steps:
- Heat oven to 375°F (190°C).
- Thaw spinach.
- Drain well, pressing out excess moisture.
- In frypan, cook onion and garlic in oil over medium heat for 5 minutes or until tender.
- Combine spinach, onion mixture, cottage cheese, Parmesan cheese, egg yolk, basil, salt and pepper.
- Separate dough into 16 triangles.
- Cut each in half diagonally to form 32 triangles.
- Place 1 tbsp of spinach mixture in centre of each triangle.
- Bring corners to centre over filling, overlapping ends; press to seal.
- Place on greased baking sheets.
- Brush with beaten egg white; sprinkle with dillweed if desired.
- Bake for 12 to 15 minutes or until golden brown.
- Serve warm.
- Makes 32 appetizers.

- Heat oven to 375ºF.
- Pound chicken to 1/4-inch-thickness on work surface; turn smooth sides down. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
- Whisk egg in shallow dish until blended. Combine cracker crumbs and remaining Parmesan in separate shallow dish. Spray 13x9-inch baking dish with cooking spray. Dip chicken, 1 bundle at a time, into egg, then into crumb mixture, turning to evenly coat all sides with crumb mixture. Place, seam sides down, in prepared baking dish.
- Bake 30 min. or until chicken is done (165ºF). About 5 min. before chicken is done, cook pasta sauce on medium-low heat until heated through, stirring occasionally.
- Remove and discard toothpicks from chicken. Spoon pasta sauce over chicken; top with remaining mozzarella.

- In a large skillet, saute onion in 2 tablespoons butter until tender. Remove from the heat. Stir in the spinach, feta cheese, cottage cheese, eggs, bread crumbs, salt, dill and pepper., Melt remaining butter. Layer and brush five phyllo sheets with melted butter. - Melt the butter over medium heat & when bubbly add onion& garlic.
- Saute for 2 minutes.
- Add spinach, salt & pepper.
- Cover & reduce heat to low steam for 3-4 minutes.
- Put half of the cheese into an 8" greased casserole dish.
- Add spinach, & nutmeg.
- Cover with remaining cheese.
- Bake in 350F for apprx 20 minutes or until cheese is browned.
