A great recipe from Cottage Living. I like to serve with toasted, salted pita triangles and fresh vegetables.

Yield 1 3/4 cups

Number Of Ingredients 9

3 tablespoons olive oil
1 small onion, chopped
4 garlic cloves, chopped
1 (15 ounce) can navy beans or 1 (15 ounce) can garbanzo beans, drained and rinsed
2 -3 tablespoons lemon juice (about 1 lemon)
1 tablespoon chopped fresh rosemary
1/2 teaspoon sea salt
1/2 teaspoon ground red pepper
1/2 teaspoon red pepper flakes

Steps:

  • Heat oil in a large skillet over medium-high heat, and add onion.
  • Reduce heat to medium and saute until tender.
  • Add garlic, cook one minute more, stirring frequently so garlic doesn't brown.
  • Remove skillet from heat, and cool to room temperature.
  • Scrape onion mixture into a blender or food processor.
  • Add beans and remaining ingredients; puree until smooth.
  • Keep refrigerated in airtight container until ready to serve.
  • Garnish with fresh rosemary and olive oil if desired.

This recipe was printed in the New York Times several years ago. I often use it for my own lunch with some fresh veggies. Flavors are best a room temp, but dip must be stored (long-term) in the fridge. Prep time does not include additional time for flavors to blend.

1 1/2 cups white beans, drained but quite moist
1 clove garlic, peeled
coarse salt
fresh ground black pepper, to taste
2 tablespoons extra virgin olive oil, plus
1 teaspoon extra virgin olive oil
1 teaspoon thyme or 2 teaspoons ground cumin
1 sprig fresh rosemary or 1 sprig thyme (to garnish)

Steps:

  • Put beans, garlic and some salt in container of a food processor.
  • Turn machine on, and add 2 tablespoons olive oil in a steady stream through feed tube; process until mixture is smooth.
  • Taste and adjust seasonings with salt and pepper.
  • Cover and refrigerate (up to 2 days), until about an hour prior to serving.
  • Just before serving, stir in herbs, drizzle with remaining olive oil, and garnish with herb sprig.
  • Serve with chips, pita crisps or raw veggies.

1 cup picante salsa or 1 cup favorite salsa
1/2 cup shredded Mexican blend cheese
1/2 cup sliced green onion
1 tablespoon chopped fresh cilantro
1/2 tablespoon finely chopped fresh jalapeno (optional)
1/4 teaspoon garlic powder

Steps:

  • In medium saucepan, combine all ingredients.
  • Cook until hot and bubbly.
  • Serve warm or room temperature.
  • Makes 2 to 3 cups.

If you're looking for something to bring to the party that will amaze, this is the dip. People can't get enough. It goes great with pita or tortilla chips. You can make it a bit healthier or vegetarian by excluding the bacon and using a tablespoon of olive oil instead. Adjust the amount of sriracha depending on how spicy you like it (1 tablespoon gives it just a small bite).

2 slices apple-smoked bacon, chopped
2 shallots, diced
2 garlic cloves, diced
1/2 jalapeno, diced
1 (15 ounce) can cannellini beans
1 tablespoon lemon juice
2 tablespoons tahini
1 -2 tablespoon sriracha sauce
1 teaspoon sesame oil
1 tablespoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
fresh ground pepper
salt

Steps:

  • Cook bacon in a small saucepan over medium heat until slightly crisp.
  • Remove bacon from pan with a slotted spoon and set aside.
  • Add shallots, garlic, and jalapeno to bacon drippings in pan and sauté for 1-2 minutes, stirring frequently.
  • Add beans (including bean water) to pan and simmer uncovered for 10 minutes.
  • Combine bean mixture, bacon, lemon juice, tahini, hot sauce, oil, and spices in a food processor and process until smooth.

Healthy, spicy, and very low fat! I think you'll like this if you like a little heat in your dip and, it's a little different than the many other good recipes posted here on 'Zaar. To reduce the heat, you can omit or use less of the adobo sauce, use only 1 chipotle pepper, or use a mild salsa (I like Pace Medium Chunky Salsa and don't measure). I use my favorite brand of refried black beans, but the recipe works just as well with refried pinto beans, which make a great foundation for bean nachos if you don't use too much salsa. Serve with tortilla chips.

2 teaspoons olive oil
1/2 cup chopped onion
3 minced garlic cloves
2 chipotle chiles in adobo, diced
1 teaspoon ground cumin
1/2 teaspoon dried oregano
2 teaspoons adobo sauce (optional)
2 (15 ounce) cans fat-free refried beans
2 tablespoons salsa or 2 tablespoons Rotel tomatoes & chilies, more to taste

Steps:

  • Heat oil in medium saucepan over medium high heat. Add onions, garlic and chipotle pepper. Stir and saute 5 to 7 minutes or until onion softens.
  • Add cumin, oregano and adobo sauce (if using), stirring to awaken herb flavors, about 2 minutes.
  • Reduce heat to medium and stir in refried beans. Splash salsa or Rotel around beans and stir to combine.
  • Reduce heat to low and continue to cook beans, stirring occasionally, until warm throughout, 5 to 10 more minutes. Serve with tortilla chips for dipping.
