SLOW COOKER TURKEY SOUP
Steps:
- Combine potatoes, celery, carrots, onion, garlic, chicken broth, salt, pepper, and poultry seasoning in a 6-quart slow cooker.
- Cover and cook on high for 3 to 4 hours, or on low for 6 to 8 hours until vegetables are tender.
- Uncover and measure out approximately 2 cups of soup and transfer into a blender*. Puree briefly until ingredients are mostly combined.
- Return pureed soup to crockpot and add shredded turkey, heavy cream, and parsley. Stir well, cover, and cook on high for another 30 minutes. Serve hot.

JERK TURKEY SLOW COOKER SOUP FROM WEIGHT WATCHERS

Steps:
- Combine allspice, cayenne, ginger, garlic salt and 1/4 teaspoon of black pepper in a medium bowl.
- Add turkey and toss to coat; set aside for 15 minutes.
- Place turkey in a 5-quart slow cooker; add any spices remaining in bowl. Add garlic, onion, tomatoes, beans, broth, salt and remaining 1/4 teaspoon of pepper; stir.
- Cover and cook on LOW setting for 6 to 7 hours.
- Stir in lime juice and cilantro; let sit for 5 minutes for flavors to blend.
- Yields about 1 1/2 cups per serving.

TURKEY SOUP FOR THE SLOW COOKER
This is how I take care of the turkey carcass. But you can make this soup by following the directions and using 12 cups of chicken broth with 1/2 teaspoon of poulty seasoning. You can freeze the carcass and make the broth when convenient for you.

Steps:
- Turkey Broth:.
- Put the turkey carcass in your slow cooker on Low with an onion, celery stalk,a carrot, salt and pepper,bay leaf, 1/2 poultry seasoning, 2 teaspoons chicken powder and water. Cook on Low overnight.
- Next morning, strain the both and pour it back in the slow cooker.
- Remove turkey meat from bones, set meat aside.
- Soup:.
- In the slow cooker with the broth, add onions, garlic, carrots, celery, thyme, salt and pepper.
- Cook at High for 4 hours; add turkey, noodles, and parsley.
- Cook another 1/2 hour.
- Enjoy!
- NOTE: Cooking time doesn't include the overnight that your broth is cooking.
SPICY CHEESE SOUP
A "hotter" twist on an old favorite. I don't remember where I got this recipe but my daddy loves it.

Steps:
- Melt the butter in a Dutch oven.
- Add the carrots, onions and celery all at once and saute' until soft but not brown.
- Add flour and stir to combine.
- Cook until mixture begins to turn light brown in color.
- Over medium high heat, add the chicken broth a little at a time.
- Stir well and continue to cook stirring with a whisk until a thick base forms.
- Add half and half being careful not to let it boil.
- Add cheese, stirring until melted.
- About 15 minutes before serving, add the parsley and finely chopped jalapeno peppers.

SPICY TURKEY SLOW COOKER SOUP (WW - ONLY 3 PTS/SERVING)
We enjoyed this simple soup which I adapted from weight watchers.com. It is a little soupy - so if you prefer a thicker soup, you may want to decrease the amount of broth or add some extra veggies. It also freezes great - and actually is better re-heated in the microwave.

- In a bowl combine spices (allspice - garlic salt plus 1/4 teaspoon pepper). Add turkey and toss. Let sit for at least 15 minutes.
- Place turkey in crockpot (plus any spices left in the bowl) and next 7 ingredients (garlic - salt plus the remaining 1/4 tsp pepper). Stir to combine.
- Cover and cook on low for 7-8 hours.
- Stir in lime juice and cilantro and let sit another 5 minutes or so.
