SPICY GRILLED TURKEY BURGERS

Spicy Grilled Turkey Burgers image

I'd never tried ground turkey meat before. I got curious when our small grocery store down the road got some in and I just had to try it. I came up with this recipe through a magazine I had that my (of all people) gastro doctor suggested. It's called EatingWell and it has healthy recipes. Some of them are frankly off the wall, but this one wasn't bad.

Provided by Redneck Epicurean

Categories     Poultry

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb ground turkey
2 tablespoons fresh cilantro, chopped
1 1/2 teaspoons cumin
1/2 teaspoon chili pepper
1/2 teaspoon salt
1 dash allspice
1 teaspoon oil
4 buns (I prefer onion buns from the bakery)

Steps:

  • Preheat the grill.
  • Mix together, but don't overmix, the burger ingredients and brush with oil.
  • Place on the grill when hot and grill until the center is no longer pink.
  • Place on warmed buns and top with any burger fixin's. I tried mayo and dill pickles and that was pretty good.

Yield Makes 4 servings

Number Of Ingredients 10

2 pounds bone-in skin-on turkey thighs (about 2 thighs)
1/2 cup minced onion
1/4 cup chopped fresh cilantro
2 minced garlic cloves
2 teaspoons chopped jalapeño or serrano chile with seeds
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon freshly ground black pepper
Kosher salt

Steps:

  • Cut meat into 1" cubes; discard skin and bones. Place in a single layer on a rimmed baking sheet, cover with plastic wrap, and transfer to freezer. Chill protein until very cold (it should feel firm but still give when pressed with your finger), about 15 minutes. Meanwhile, place all grinding parts (the stand mixer's grinding attachment, including the dies, or the bowl and blade of the food processor) in the freezer until very cold, at least 15 minutes. Assemble grinder attachment with chilled coarse die. Set a bowl in a large bowl of ice; arrange beneath the attachment to catch ground turkey and keep it cold.
  • Transfer turkey to a medium bowl. Mix in onion, cilantro, garlic, jalapeño or serrano chile, coriander, cumin, paprika, and freshly ground black pepper. Grind mixture in batches, with mixer on medium speed, and plunge gently to press through grinder.
  • Form into four 1/2"-thick patties. Season with kosher salt and freshly ground black pepper. Grill burgers over medium heat until cooked through, 5-7 minutes per side.

SPICY TURKEY-BULGUR BURGERS

Spicy Turkey-Bulgur Burgers image

Recipe for these burgers are in the book, The Spelt Cookbook by Helga Hughes. She wrote; By mixing spelt bulgur with ground turkey breast, and spicy mustard, you'll quickly create a spicy burger that's low on fat and high on taste and nutrition!

Provided by Michele Copley

Categories     Burgers

Time 20m

Number Of Ingredients 15

1/2 c spelt bulgur
1/2 c boiling water
1 1/2 c ground turkey breast
1/4 c 1/4 c plus 2 tbsp egg substitute (or 1 egg)
1 yellow or red onion minced for mix
1 1/2 tsp dried marjoram
1/2 tsp sea salt or to taste
1/4 tsp freshly grd white pepper
1 Tbsp spicy mustard (or bbq or thousand island)
8 spelt buns (recipe on my home)
1/2 c lowfat mayonaise, expellor pressed oil and cage free eggs)
8 lettuce leafs or choice of greens or sprouts
8 slices of onions if you please
8 sliced tomato as an option
1/2 c pickle relish or pickle slices

Steps:

  • 1. Place the bulgur in a 2-quart heatproof bowl. Add the boiling water, and set the mixture aside for 5 minutes.
  • 2. Add turkey, egg or substitute, onion, marjoram, salt, pepper, and mustard to the bulgur mixture and mix well.
  • 3. Using floured hands, form the mixture into 8 patties as thin as possible for a flatter size meat. Coat a ceramic skillet with organic olive oil and/or spray, and cook the patties over medium heat for 7 minutes on each side, or until browned and crisp. Transfer the patties to a cookie sheet to drain, works well, or a plate, because the oil makes the burger taste better, no need to drain on paper towels.
  • 4. Cut each spelt bun in half. Spread the bottom half of each bun with condiments of your choice. Follow with a patty burger, and remaining vegetables. Serve!

  • Acili Ezme. For vegans who love their dishes extra spicy, this is the right traditional Turkish side dish for you. It is usually served as an appetizer and is prepared from diced tomato, garlic, red bell pepper, and parsley.
  • Misir. There are a couple of ways to cook corn, and some of the simplest ways to do it are by boiling or roasting and adding salt for flavor. Corn cooked in this manner is referred to as Misir in Turkey, and there are lots of street stalls selling this simple 100% vegan delicacy.
  • Simit. Another widespread street food is Simit. This traditional Turkish food is a bread ring (the bread is prepared without dairy or eggs) covered with sesame seeds.
