4 pouches (2.6 ounces each) sweet and spicy chunk light tuna
1-1/2 cups coleslaw mix
1/3 cup chopped salted peanuts
1 tablespoon rice vinegar
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
12 Bibb or Boston lettuce leaves (about 1 medium)
Reduced-sodium soy sauce

Steps:

In a small bowl, combine the first six ingredients; toss lightly to combine. Serve in lettuce leaves with soy sauce.

1 ice-cream scoop of steamed white rice
One 12-inch flour tortilla
1 small handful mixed greens
1 tostada
Ahi Tuna Poke, recipe follows
Pickled ginger, for garnish
Serving suggestions: wasabi, spicy mayonnaise and teriyaki sauce
1 pound sushi-grade ahi tuna, cut into 1/4-inch cubes
2 tablespoons chile paste
1 tablespoon grated ginger
1 tablespoon sesame oil
Kosher salt

Steps:

Scoop the rice onto the tortilla. Top with the mixed greens, followed by the tostada. Place some Ahi Tuna Poke on the tostada, and top with a few pieces of pickled ginger. Add about a tablespoon each of wasabi, spicy mayonnaise and teriyaki. Wrap up like a burrito.
In a bowl, mix together the tuna, chile paste, ginger, sesame oil and a pinch of salt.

5 oz tuna, 2 cans, drained
1 large avocado, diced
1 cup carrot, finely chopped
2 ribs celery, finely chopped
¼ cup red onion, finely chopped
¼ cup dijon mustard
1 tablespoon lemon juice
½ teaspoon garlic powder
salt, to taste
pepper, to taste
4 whole wheat tortillas
4 leaves green leaf lettuce
1 cup cherry tomatoes, halved

Steps:

In a large bowl, add the tuna and avocado. Use a fork to smash the avocado and tuna together.
Add the carrots, celery, red onion, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir to combine.
Lay a tortilla flat on a plate. Lay a lettuce leaf on the tortilla. Scoop ¼ of the tuna mixture into the center of the lettuce and spread down the middle. Top with cherry tomatoes and carefully roll the the tortilla to create a wrap. Repeat with the remaining ingredients.
