1 1/2 cups Italian breadcrumbs
2 eggs (slightly beaten)
4 tablespoons Miracle Whip
2 tablespoons Dijon mustard
2 tablespoons lemon juice (freshly squeezed)
1/2 cup onion (finely diced)
1/4 cup bell pepper (finely diced)
2 teaspoons cayenne pepper
1 teaspoon red curry powder
1 teaspoon Old Bay Seasoning
1 teaspoon roasted garlic
1 teaspoon Lawry's Seasoned Salt
1 teaspoon Tabasco sauce
1 teaspoon black pepper
1/2 cup cornmeal
1/4 cup flour
2 teaspoons salt

Steps:

  • Mix all ingredients like you would if you were making a meatloaf.
  • Shape into patties.
  • Dredge patties in the cornmeal mixture and fry until crunchy.
  • Serve with a Sauce of your choice or eat them like a sandwich on a toasted Bun.

1 large potato, peeled and cubed
4 (3 ounce) cans tuna, drained
1 egg
¼ cup chopped onion
1 tablespoon Dijon mustard
1 tablespoon dry breadcrumbs, or as needed
1 ½ teaspoons garlic powder
1 teaspoon Italian seasoning
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
1 tablespoon olive oil

Steps:

  • Place the potato into a small pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash the potato with a potato masher or fork in a large bowl.
  • Mix the tuna, egg, onion, Dijon mustard, bread crumbs, garlic powder, Italian seasoning, cayenne pepper, salt, and pepper into the mashed potato until well-blended. Divide the tuna mixture into 8 equal portions and shape into patties.
  • Heat the olive oil in a skillet over medium heat. Pan fry the tuna patties until browned and crisp, about 3 minutes on each side.

½ cup chopped scallions
½ cup dry bread crumbs, or as needed
1 large egg
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon Sriracha
salt and ground black pepper to taste
2 tablespoons olive oil, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Delicious Tuna Cakes With Spicy Jalapeno Sauce image

This is a pretty simple recipe, perfect for common people who maybe don't have access to ingredients that top chefs do because of cost/location or don't have the time prepare elaborate meals. It's great for those of us cooking on a budget who want food to taste good. I like to let the mix sit at least an hour before I use it to (1) let all the flavors to mix and (2) to allow the mix to bond well so your patties don't fall apart. You could prepare this the night before if you like, but make sure to store it in an air tight container. Note that these are great made with canned salmon, mackerel, crab, sardines, chicken or whatever variation you can think up! For the sauce, I use a few packets of taco sauce from Taco Bell. Whenever I visit one I make sure to grab a handful for later use. Any other taco sauce would work, but may not taste as good. Also, if you do not have the Kraft Cracked Pepper Mayonnaise, then just forget it. The sauce truly is not the same without it.

1/8 cup diced bell pepper (any color... or mix them)
1/8 cup sweet red onion
1 egg
1/2 cup Italian seasoned breadcrumbs
1/2 cup Italian seasoned breadcrumbs (for coating patties just prior to frying)
1/8 teaspoon salt
1/8 teaspoon pepper (or more to taste)

Steps:

  • TUNA CAKES: Dice vegetables then mix ingredients. You can make patties right away, but I find if i let the mix sit for at least 30 minutes beforehand, it all bonds and makes much better patties. I feel it also allows the flavors in the vegetables to permeate the mix. It is OK to make this mix the night before use, but please store in an air tight container and stir mix prior to making patties.
  • Pour a tbs or two of olive oil in frying pan, just enough to coat pan and set heat to medium high.
  • Coat patties with additional breadcrumbs just prior to setting in skillet to fry. Cook till golden brown (approx. five minutes on each side).
  • SAUCE: Mix ingredients and enjoy atop your tuna cake.
  • SERVING SUGGESTION: I love these served on a toasted onion roll/bun, but they are delicious all by themselves. The sauce truly elevates the flavor to a new level.
  • I will add a photo next time I make these. Posting this recipe was an after thought, and quite honestly, it seems no matter how many I make they all disappear.
  • NOTES:.
  • There is something wonderful about Kraft's Cracked Pepper Mayonnaise. I have never cared for any mayonnaise (except for its mandatory use in egg and/or tuna salad), but this product is just fantastic. I use it it flavor and thicken soups, for sauces, directly on sandwiches (which i would never do with the old stuff). If you haven't tried it, please do. I think you will love it. And, no, I have no interest in their company whatsoever, I just LOVE the product. (-:.

8 ounces potatoes
13 ounces canned tuna, drained and flaked
2 ounces cheddar cheese, shredded
4 green onions, finely chopped
1 small garlic clove, crushed
2 teaspoons dried thyme
1 egg, beaten
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
4 teaspoons plain flour, seasoned
2 tablespoons vegetable oil, for frying

Steps:

  • Boil the potatoes for 10 minutes, until tender.
  • Drain, mash and leave to cool.
  • Meanwhile, beat the tuna, cheese, green onions, garlic, thyme and egg into the mashed potatoes, and add a dash of cayenne, salt and pepper.
  • Divide the mixture into four and make into thick burgers.
  • Sprinkle the flour over them and fry in a shallow layer of hot oil for 5 minutes on each side, until they are crisp and golden.

10 ounces canned albacore tuna in water, drained
3 scallions, thinly sliced (about ? cup)

1 1/3 cups mashed baked sweet potatoes

2 large eggs

Steps:

  • Preheat oven to 350 degrees.
  • Grease 12 cup regular size muffin tin with 1 tbsp of coconut oil.
  • In a large bowl mix together tuna, scallions, and cilantro.
  • Add mashed sweet potato and gently combine.
  • Mix in lemon zest, jalapeno, remaining coconut oil, eggs, and red pepper flakes. Season with salt & pepper to taste.
  • Place 1/4 cup of mixture into each muffin cup. Tamp down using a spoon.

1 tablespoon minced jalapeño pepper

Steps:

  • Preheat the oven to 350°F, and use a brush to grease a 12-cup regular sized muffin tin with one tablespoon of melted ghee. In a large bowl, mix together the tuna, scallions, and cilantro. Add the mashed sweet potato to the tuna mixture, and gently combine. Then, mix in the lemon zest, jalapeño, the remaining two tablespoons of ghee, eggs, and red pepper flakes. Season with salt and pepper to taste. (Not sure if you've added enough salt and pepper? Take a small portion and fry up a little pancake to see if the seasoning is right!) I use my hands to mix everything together because that way I can make sure that the fish chunks aren't overly broken up. Scoop a quarter cup of the mixture into each greased muffin tin cup and flatten with the back of a spoon. Bake the tuna cakes for 20-25 minutes or until an inserted toothpick comes out cleanly. Transfer the cakes to a wire rack to cool. The easiest way I've found to get them out is to put the wire rack on top of the muffin tin, flip everything upside-down, and tap them gently on the counter. Voilà! Grab a lemon wedge and squeeze some juice on your tuna cake before your pop it in your mouth. They're fantastic right out of the oven. Alternatively, store them in the fridge, and when you're ready to eat, skillet-fry the cakes in some melted fat over medium heat. Crisp the edges, and you're good to go.

150g tub low fat natural yogurt
a good handful of fresh coriander , roughly chopped
2x cans chickpea , drained and rinsed
400g can tuna in brine, drained
1 small onion , finely chopped
1 plump garlic clove , crushed
2 tbsp lemon juice
1 tsp cumin seeds
½ tsp crushed dried chilli
2 tbsp plain flour
4 tsp vegetable oil
12 cherry tomatoes , halved

Steps:

  • Mix the yogurt with half the coriander in a small bowl. Cover and chill until needed.
  • Tip the chickpeas into a food processor. Blitz for a just a few seconds so they keep some of their texture. Transfer to a large bowl. Flake in the tuna and mix in the onion, garlic, lemon juice, cumin, chilli and rest of the coriander. Season, then gently stir to mix all the ingredients. Shape into 12 patties with your hands. Dust with flour.
  • Heat half the oil in a large frying pan. Cook 6 patties for 5-6 minutes, turning over after 3 minutes. Keep them warm while you cook the rest.
  • Put the tomatoes in the pan. Cook over a high heat for 30-40 seconds until warmed through and starting to soften. Serve with the patties (3 per person) and the coriander dip.
