SPICY TOFU KEDGEREE
A spicy vegetarian dish which is great for feeding friends in a hurry. Try it with smoked mackerel, too

- Cook the rice and boil the eggs in the same pan for 8-9 mins. Meanwhile, heat oil in a non-stick frying pan and soften the onion and chilli for 5 mins. Add all the spices and fry for 1-2 mins more.
- Drain the rice and stir into the spicy onion with a splash of water and the tofu. Season well, then heat through gently for a few mins until piping hot. Peel and quarter the boiled eggs. Stir the spring onions and parsley into the rice, divide between 2 bowls and top with the eggs.

SPICY GRILLED TOFU
Be sure to use extra firm tofu and press out as much of the water as you can. To prevent sticking, give the tofu slices and the grill rack a generous coat of nonstick cooking spray. Cooking time includes marinading the tofu for 4 hours. This is from VT May/June 2006.

Steps:
- Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
- Place the tofu in a single layer in the bottom of a 13x9 glass baking dish.
- In a small bowl, whisk together the lime juice, maple syrup, tamari, chile paste, garlic, and pepper.
- Pour mixture over the tofu, stirring to coat all the slices.
- Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours or overnight.
- When the tofu is marinated and ready to cook: Spray grill rack or pan with nonstick cooking spray. Heat grill or grill pan to medium heat.
- Place tofu slices on the grill. Reserve the marinade.
- Grill tofu 3 or 4 minutes on each side, or until the outside is browned and crisp.
- Return tofu to the baking dish and toss the slices with the reserved marinade.
- Serve immediately.

HOT AND SPICY TOFU
Firm tofu, bell pepper, and red onion, all quickly stir fried in a sweet and sour sauce. A word of caution - this is VERY spicy! If you like milder dishes, decrease the amount of pepper flakes or omit them altogether.

- Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes.
- In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes. Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly.

SUPER SIMPLE SPICY FRIED TOFU
This recipe is adapted from a local tofu maker that frequents neighborhood farmers markets. It's vegetarian and vegan friendly and tastes great - even non-vegetarians love it! Spicy garlic sauce is a staple ingredient in many Vietnamese dishes and creates a spicy-sweet combination with the brown sugar.

- Drain tofu, rinse, and pat dry. Cut into squares.
- Heat sesame oil in a wok over medium heat. Add onion and cook for 2 minutes. Add red pepper and stir-fry for 2 minutes. Stir in tofu and cook for 2 minutes. Stir in brown sugar, soy sauce, and chili-garlic sauce. Mix together and cook for 3 minutes. Adjust seasoning to taste. Sprinkle with green onions before serving.

- Boil the rice in plenty of water until it's just tender, stirring every few minutes. When it's cooked, drain any excess water, and set aside.
- Meanwhile, boil the eggs in their shells for around 10-11 minutes. Drain away the boiling water, and rinse the eggs a few times in cold water. Set aside until they're cool enough to touch.
- While the rice and eggs are cooking, heat a dash of oil in a large frying pan, and add the sliced onion, ginger, garlic and smoked tofu. Cook over a medium heat for 5 minutes or so, until the onion is soft. Add the curry powder, smoked paprika, crumbled stock cube (or just salt, if you don't have stock cubes), and plenty of black pepper. Cook for a minute or two longer.
- When the rice is cooked, add it to the pan with the tofu, along with a good knob of butter and a splash of water. Mix well, and allow to cook over a gentle heat until the butter has melted and coated the rice nicely.

- For the rice, heat the oil in a pan that has a tight-fitting lid then fry the onion for 5 minutes until softened.
- Add the cardamom pods, cinnamon stick, turmeric powder, curry powder, bay leaves and salt and cook for 1-2 minutes more. Stir in the rice and cook for 2-3 minutes until the rice is coated in the spices.
- Add the stock, bring to the boil then simmer, covered for 12-14 minutes checking the level of liquid and stirring occasionally. Add more stock if necessary.
- Towards the end of the rice cooking time, preheat the oil and liquid smoke in a saute pan. Crumble the tofu into the pan and cook for 6-8 minutes stirring often until the tofu is well coated and golden brown. Season to taste with salt.
