18-20 slices Norwegian smoked salmon
2 lemons, thinly sliced
1 red onion, thinly sliced
1/4 cup capers, drained
Fresh dill
Freshly ground black pepper

Steps:

  • Artfully arrange the smoked salmon slices along two sides of a square platter. Arrange the lemon slices down the middle of the platter between the salmon slices, and spread the red onion slices over the lemon slices.
  • Scatter the capers over the top of the platter, and place a small bunch of dill under the lemon slices at the top. Sprinkle with the pepper.

Steps:

  • Gather the ingredients.
  • Spread the toasted bagel bottom halves with cream cheese. Sprinkle half the capers over the cream cheese, if desired.
  • Top with sliced smoked salmon.
  • Garnish the bagel tops with the rest of the capers, onion, and black pepper. Garnish with fresh lemon wedges.

2 cups (lightly packed) 1/2-inch cubes French baguette with crusts
2 tablespoons (1/4 stick) butter
2 tablespoons vegetable oil
1 pound russet potatoes, peeled, cut into 1/2-inch cubes
1/2 cup finely chopped shallots
1/2 pound hot-smoked salmon fillets, skinned, flaked into bite-size pieces
3 tablespoons minced fresh chives
2 teaspoons minced fresh dill
4 large eggs
1 cup half and half
3 tablespoons sour cream
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Additional sour cream
Capers
Fresh dill sprigs

Steps:

  • Preheat oven to 400°F. Arrange bread on rimmed baking sheet. Bake until pale golden, about 5 minutes, then cool.
  • Butter 11x7-inch glass baking dish. Melt 2 tablespoons butter with oil in heavy large skillet over medium-low heat. Add potatoes. Stir to coat and arrange in single layer. Cover and cook until potatoes are almost tender, about 8 minutes. Uncover; increase heat to medium-high, and cook until potatoes are lightly browned and tender, stirring occasionally, about 5 minutes. Add shallots and sauté until soft, about 2 minutes. Remove from heat. Gently mix in bread, salmon, chives, and minced dill. Transfer mixture to prepared dish.
  • Whisk eggs and next 5 ingredients in medium bowl to blend well. Pour custard over potato mixture in dish. Let stand 15 minutes, occasionally pressing bread into custard. (Can be made 1 day ahead. Cover; chill. Let stand at room temperature 30 minutes before baking.)
  • Preheat oven to 350°F. Bake casserole, uncovered, until custard is set, about 30 minutes. Cut into squares and top with additional sour cream, capers, and dill sprigs; serve hot.

◾2 Cups plain Bagels, cut into small cubes
◾4 Eggs
◾2/3 Cup Diced Red Onion
◾2 Cups Milk
◾5 Ounces Smoked Salmon, flaked
◾4 Ounces Salmon Flavored Cream Cheese
◾1 Cup Shredded White Cheddar Cheese
◾3/4 Cup Diced Tomato
◾1 Tablespoon Fresh Dill
◾2-3 Tablespoons Capers
◾Freshly Ground Black Pepper

Steps:

  • 1. Spray an 8 x 8 baking dish with non-stick cooking spray. 2. Evenly layer the Bagel Cubes in the bottom of the dish. 3. Sprinkle the Onions, Salmon, Tomatoes and finally the White Cheddar Cheese over the top of the Bagel Cubes. 4. In a medium size bowl whisk together the Eggs and Milk. Give your Pepper Mill a few turns over the mixture and whisk again. Set aside 5. Next scoop the Salmon flavored Cream Cheese into small dollops and put on top of the Cheese layer 6. Now pour the Egg mixture over the top of all, in the baking dish. Then sprinkle with the Fresh dill. 7. Cover the pan tightly with foil and refrigerate overnight. 8. In the morning, preheat your oven to 350 degrees. 9. Remove the Casserole from the refrigerator and let it sit on the counter for about 20 minutes prior to baking. 10. Place the foil covered baking dish in the oven and bake for 30 minutes. 11. Remove the foil and continue to bake for about 20-25 additional minutes. The Casserole will begin to puff up in the oven 12. All ovens cook differently so check for doneness. A knife inserted in the center should come out clean. 13. Remove the Casserole from the oven and immediately top with the Capers. Allow the Casserole to cool for about 5-10 minutes before serving. It will be piping hot! ~This is a great recipe for Breakfast or Brunch. Since you can prepare it the night before, and bake in the morning, it might be a nice dish to serve on mornings when you have guests. I served mine with a side of fresh Berries and Cream. 1 small onion, chopped
1/4 lb smoked salmon, chopped
1 cup heavy cream
3 tablespoons capers, drained
salt & pepper
1 lb pasta, cooked al dente,drained and tossed with (reserve about 1/4 cup of cooking water)
olive oil
freshly grated parmesan cheese

Steps:

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the onion and saute until translucent, but not browned.
  • Add the smoked salmon and continue cooking just until salmon turns opaque, 1-2 minutes.
  • Pour in the cream and add capers.
  • Be careful how much salt you add because the snoked salmon and capers are both salty.
  • Add pasta and toss to coat.
  • *Ifthere doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down.
  • Serve with freshly grated parmesan.

2 cups fresh broccoli florets (small)
10 green onions, chopped
1/2 lb smoked salmon, cut into 1 inch pieces
2 cups monterey jack cheese, grated (about 8 ounces)
8 ounces cream cheese, chilled, cut into 1/2 inch pieces
8 large eggs
2 cups whole milk
1 cup buttermilk baking mix (Bisquick)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Butter 13x9 baking dish.
  • Arrange broccoli and half of green onions evenly over bottom of dish. Sprinkle with smoked salmon, Monterey Jack cheese, cream cheese pieces and remaining half of green onions. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Preheat oven to 375.
  • Mix eggs, milk, baking mix, salt and pepper in blender until smooth (or in bowl using beaters).
  • Pour batter over salmon mixture.
  • Bake casserole until just set in center, about 30 minutes.

A crowd-pleasing, help-yourself starter. Take the bread out of the oven an hour before lunch and it'll still be warm when it hits the table

1 large cucumber
small pack dill , chopped
200g pack smoked salmon
small jar capers in brine
1 lemon , cut into 6 wedges
280g strong white flour , plus a little extra for dusting
200g wholegrain flour
1 heaped tsp bicarbonate of soda
350g buttermilk
1 large egg
1 tsp clear honey
butter , to serve

Steps:

  • First, make the soda bread. Heat oven to 200C/180C fan/gas 4 and dust a large baking sheet with flour. In a large bowl, combine the flours, bicarbonate of soda and 1 /4 tsp salt. Pour the buttermilk, egg and honey into a jug and whisk to combine.
  • Make a well in the centre of the dry ingredients and pour in the wet mixture. Using a wooden spoon, bring the mixture together to form a dough - if it's too wet and sticky, add a little extra flour. Shape into a rough ball and place on the prepared baking sheet. Sprinkle over a little flour, make a criss-cross incision on top of the loaf and bake in the oven for 35 mins - the bread is cooked when you tap the bottom and it sounds hollow. Slide onto a wire rack to cool a little before slicing.
  • Meanwhile, using a peeler, slice the cucumber into long ribbons all the way around, but discard the seeded centre. Place in a bowl, sprinkle with a little seasoning and mix well with the dill.
  • Serve at the table with the salmon slices, capers, lemon wedges, soda bread and butter.

1 (10 ounce) package prebaked thin crust italian pizza dough
1/2 cup cream cheese with chives
2 tablespoons Dijon mustard
1 tablespoon honey
8 ounces thinly sliced smoked salmon (lox or brine-soaked salmon can also be used)
2 tablespoons chopped finely red onions
2 tablespoons drained capers
1 tablespoon chopped dill

Steps:

  • Heat oven to 425F degrees.
  • Place pizza crust on ungreased cookie sheet.
  • bake for 6-8 minutes.
  • Cool at least 15 minutes.
  • Meanwhile, in a small bowl, combine cream cheese, mustard and honey; mix until well blended.
