These Thai noodles are so easy to make and incredibly flavorful! Tender noodles are tossed with fresh colorful veggies, crunchy peanuts and a rich and creamy peanut sauce that will leave everyone craving more. Don't like spice? Just omit the sriracha.

12 oz dry spaghetti
1 large red bell pepper, (sliced into thin strips then cut into 2-inch pieces)
1 large cucumber, (peeled, seeded and sliced into thin strips then cut into-2-inch pieces)
1 cup matchstick carrots
3/4 cup chopped green onions
1/2 cup chopped cilantro
1/2 cup lightly salted roasted peanuts, (roughly chopped)
Sesame seeds, (for garnish (optional))
1/2 cup creamy peanut butter
1/4 cup warm water
3 Tbsp soy sauce
2 Tbsp honey
2 Tbsp Sriracha ((more or less to taste))
2 Tbsp fresh lime juice
1 1/2 Tbsp peeled and minced fresh ginger
1 Tbsp minced garlic
1 Tbsp sesame oil

Steps:

  • Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
  • Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly. Sprinkle with sesame seeds and serve.

Kosher salt
1 pound udon noodles or linguine pasta
2 teaspoons sesame oil
1/4 cup light soy sauce
2 teaspoons grated fresh ginger
2 cloves garlic, minced
4 Thai chiles, halved lengthwise, and seeds removed
4 chicken breasts, cut into bite-size cubes
1/2 cup creamy peanut butter
1 tablespoon grated fresh ginger
2 cloves garlic, minced
3 tablespoons sugar
1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile oil
2 tablespoons grapeseed oil
1 orange, rind removed, flesh segmented
2 Thai chiles diced, seeds removed
1 small bunch fresh cilantro, chopped
1 bunch spring onions, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Cook the noodles according to the package directions for al dente. Drain the noodles, then transfer to a large bowl and toss with the sesame oil. Set the noodles aside.
  • In a medium mixing bowl, whisk together the soy sauce, ginger, garlic, and chiles. Add the cubed chicken to the marinade, toss gently to coat the chicken. Cover the bowl and refrigerate for 30 minutes.
  • For the dressing: In a small saucepan, whisk together the peanut butter, ginger, garlic, sugar, rice vinegar, soy sauce, sesame oil, and chile oil, and bring to a simmer over medium-low heat.
  • Pour the warm dressing over the cooked noodles, and toss to coat evenly. Set the noodles aside until ready to serve.
  • In a heavy skillet, heat the grapeseed oil over medium-high heat, when the skillet just begins to smoke, add the chicken cubes and sear on all sides until they are browned. Saute the chicken cubes over medium heat until they are fully cooked, about 5 minutes.
  • Thread the chicken pieces and orange segments alternately on the skewers.
  • To serve the skewers, toss the noodles with the diced chile peppers and chopped cilantro. Sprinkle the chicken skewers with the sliced green onions. Serve the noodles with the chicken skewers and enjoy hot or cold!

COLD NOODLE SALAD WITH SPICY PEANUT SAUCE



Cold Noodle Salad With Spicy Peanut Sauce image

Soba, Japanese buckwheat noodles, are ideal for salads because they taste particularly great when served cold. Crunchy vegetables are highlighted here, adding lots of crisp, fresh texture. Substitute with any raw vegetables you have on hand, such as cabbage, carrot, fennel, asparagus, broccoli or cauliflower. The spicy peanut sauce is very adaptable: If you don't want to use peanut butter, you can use any nut or seed butter, like cashew, almond, sunflower or even tahini. Both the soba and the peanut sauce can be prepared ahead of time and stored in the fridge overnight, but wait to combine them until you are ready to eat for the best texture and consistency. The peanut sauce thickens as it sits, so add a tablespoon or two of water to loosen it up, if necessary.

10 ounces soba noodles
1 medium zucchini or cucumber (about 6 ounces)
5 radishes (about 4 ounces)
1 bell pepper (any color)
1 tablespoon sesame oil
1/2 cup roasted salted peanuts (about 2 ounces), roughly chopped
2 scallions, trimmed and finely chopped
Handful of cilantro leaves
1 lime, cut into wedges for serving
1/2 cup smooth peanut butter (not natural)
1/4 cup soy sauce
2 tablespoons maple syrup
2 tablespoons lime juice (from 1 lime)
1 tablespoon sesame oil
2 teaspoons chile oil or hot sauce, plus more to taste
1 garlic clove, grated

Steps:

  • Bring a pot of salted water to the boil. Add the soba, stir to prevent sticking, and cook according to package instructions until just tender. Rinse under cold water until the noodles are completely cold.
  • Meanwhile, make the sauce: In a medium bowl, combine the peanut butter, soy sauce, maple syrup, lime juice, sesame oil, chile oil or hot sauce, and garlic. Add 1/4 to 1/2 cup water, 1 tablespoon at a time, and whisk until the sauce is a pourable consistency. Taste and add more chile oil or hot sauce as desired; set aside.
  • Cut the zucchini or cucumber and radishes into 1/8-inch thick slices, then cut into thin matchsticks. Slice the peppers into 1/8-inch pieces. Place them all in a large bowl.
  • Loosen the soba noodles by running them under some water, then allow to drain again. Add them to the vegetables, add the remaining 1 tablespoon sesame oil and toss to combine.
  • When you are ready to serve, drizzle with spicy peanut sauce and top with peanuts, scallions and cilantro. Serve immediately, with lime wedges alongside.

This recipe is delicious and easy and will kill any craving for Thai and it tastes as great on the second day as the first! The pepper spice you use can be red pepper paste or Asian chili paste. I like a combination of the two and you can use more or less depending on how spicy you want it. I usually just add cabbage, but a whole array of vegetables can be added, however you like it!

1 tablespoon soy sauce
1 tablespoon water
1 tablespoon creamy peanut butter
1 teaspoon red pepper paste

4 ounces rice noodles (prepare using stir-fry instructions)
1 tablespoon brown sugar
1 tablespoon cider vinegar

Steps:

  • Whisk together soy sauce, water, peanut butter, pepper paste, cider vinegar, and brown sugar until smooth.
  • Heat peanut oil in a large wok over medium-high heat. Add garlic and ginger and let cook until fragrant, about one minute. Add pork** and stir-fry until browned and cooked through. Stir in cabbage and bean sprouts.
  • When the cabbage and bean sprouts are soft, add noodles and sauce to the wok and toss to coat.
  • Garnish with cilantro and chopped peanuts.
  • **To get the 'restaurant style' thin pork slices, partially thaw frozen pork loin in refrigerator or under cool, running water. Hold a sharp knife almost parallel to the cutting board and slice along the edge of the loin (The pieces will gradually get bigger the further in you cut). Make the slices as thin as you can because they will thicken as they cook.

This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

12 ounces linguine
4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.
  • Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well.
  • Simmer sauce 2 minutes.
  • Pour sauce over pasta and toss well.
  • Transfer to platter and serve warm.
  • Garnish with additional green onions, if desired.
  • Yields 8 side dish servings or 4 main dish servings.
  • **Chili-Garlicsauce can be increased or decreased depending on how spicy you like your dish.
  • As written, this recipe has some heat, but is still edible for my toddler son.

1/2 cup vegetable stock or 1/2 cup chicken stock
3 tablespoons soy sauce
2 -3 tablespoons natural-style peanut butter
2 tablespoons honey
1 1/2 tablespoons fresh ginger (minced)

1 teaspoon ground coriander
1 teaspoon red pepper flakes
3 -4 garlic cloves (minced)
8 ounces spaghetti
1 carrot (julienned)
1/2 green pepper (chopped)
1 cup broccoli floret (small)

Steps:

  • Cook 8oz pasta (spaghetti or linguine) until done and set aside.
  • Saute your veggies of choice(I prefer the ones above)in a pan with a little oil, until cooked. Set aside.
  • Stir together vegetable stock, soy sauce, peanut butter, honey, ginget, cumin, coriander, red pepper flakes and garlic in a small sauce pan.
  • Cook over medium heat until peanut butter and honey melt and sauce is heated through.
  • Add noodles, stir fried veggies, any meat you may include (a few chicken breasts cut in strips is good) and toss to coat.
