CROCK POT SWEET AND SPICY PORK OR BEEF RIBS AND BEANS



Crock Pot Sweet and Spicy Pork or Beef Ribs and Beans image

For this recipe the ribs need to be browned under the broiler first for extra flavor. You can also cook this in a 300 degree oven.

3 (16 ounce) cans pinto beans, drained (can use only 2 cans)
4 lbs country-style pork ribs (or use beef ribs)
1 tablespoon seasoning salt
black pepper
1 large onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 small green bell pepper, seeded and chopped
1 (10 ounce) jar green jalapenos (or use red jalapeno jelly)
1 (18 ounce) bottle hickory flavored barbecue sauce
1 -2 tablespoon fresh minced garlic (or to taste)
1 teaspoon Tabasco jalapeno sauce (try to use the green Tabasco hot pepper sauce for this)
1 teaspoon salt

Steps:

  • Place the drained beans in the crock pot; set aside.
  • Cut the pork or beef ribs into serving-size pieces, then season with seasoned salt and black pepper.
  • Place the ribs in a broiler pan, then broil in oven for about 20-25 minutes, turning once.
  • Add the browned ribs to the slow cooker and then sprinkle the onion, fresh garlic and green pepper over the ribs.
  • In a saucepan combine the BBQ sauce, jalapeno jelly and Tabasco hot sauce; cook stirring over low heat until melted and combined.
  • Pour the mixture over the ribs and toss to coat with the sauce.
  • Cover and cook on HIGH for about 5-6 hours or on LOW for about 9-10 hours.
  • Remove the ribs and skim off any fat from the sauce.
  • Arrange the ribs over the bean mixture.

I found this recipe in Southern Living! Yummy! I've prepared this the night before on low to have done for an early dinner! I did tweak it. The optional ingredients were added to the original recipe from Southern Living.

2 (16 ounce) cans pinto beans, drained
4 lbs country-style pork ribs, trimmed
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium onion, chopped
1 green bell pepper, diced (optional)
3 garlic cloves, minced (optional)
1/2 teaspoon cumin (optional)
1 (10 1/2 ounce) jar red jalapeno jelly (Used Ghost Pepper Jelly!)
1 (18 ounce) bottle hickory flavored barbecue sauce
1 teaspoon green chili sauce (Tabasco Makes a green Jalapeno sauce but use any hot sauce of choice)

Steps:

  • Place beans in a 5-quart electric slow cooker; set aside.
  • Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
  • Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
  • Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
  • Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
  • Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
  • Pour over ribs; stir gently.
  • Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
  • Remove ribs.
  • Drain bean mixture, reserving sauce.
  • Skim fat from sauce.
  • Arrange ribs over bean mixture; serve with sauce.
  • Serve on a bed of rice.

1/3 cup rice vinegar (not seasoned)
3 1-pound racks baby back pork ribs
Juice of 1 lemon
Kosher salt and freshly ground pepper
1/2 cup lager-style beer
4 tablespoons unsalted butter
8 cloves garlic, thinly sliced
1 tablespoon chipotle chile powder
1 cup Thai sweet chile sauce (such as Mae Ploy)
2 tablespoons packed light brown sugar

Steps:

  • Preheat the oven to 325 degrees F. Put the ribs meat-side down on a cutting board. Insert a paring knife between the membrane and the bones on one end of each rack, then loosen the membrane and pull it off. Rub the ribs with the lemon juice and sprinkle evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Place the ribs bone-side down in a large roasting pan, then add the beer. Cover tightly with foil, transfer to the oven and roast until the meat pulls away from the bone, about 1 hour.
  • Meanwhile, make the sauce: Melt the butter in a medium saucepan over medium-high heat; add the garlic and cook, stirring occasionally, until slightly golden, about 2 minutes. Add the chile powder and cook 1 minute. Stir in the chile sauce, brown sugar, vinegar and 1 cup water and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the sauce is thickened and reduced by half, about 40 minutes. Remove the ribs from the oven; increase the temperature to 400 degrees F. Uncover the pan; carefully pour out the cooking liquid. Stir 1/4 cup cooking liquid into the sauce, then discard the rest of the liquid. Generously brush the ribs with the sauce. Return the pan to the oven and continue roasting, uncovered, until the ribs are golden brown and tender, about 35 minutes. Chili Short Ribs and Beans image

This is an Americanized version of the Jewish dish "flanken (shoartribs) and lima beans" that was a staple in my growing up years. It is inexpensive and easy to make. The meat should be cooked until it falls off the bone. Meat stewed to this point is called "tserkukt" in Yiddish (the now-dead language of European Jews.)

5 lbs beef short ribs
1 teaspoon thyme
3 tablespoons chili powder
salt
pepper
2 tablespoons oil for browning onions
3 large onions, thinly sliced
2 garlic cloves
2 cups red wine
2 (16 ounce) cans kidney beans
4 cups cooked hot rice, for serving

Steps:

  • Trim fat off rib. Rub in chili, thyme, salt and pepper. Brown onion and garlic lightly in oil.
  • Put meat on onions, and bake 20 minutes in 350 deg oven.
  • Turn meat and bake 20 minutes more.
  • Add wine.
  • Bake for one hour. Turn meat and bake some more until meat is brown on both sides. Add kidney beans and bake about 1/2 hour or until meat is falling off bones (tserkukt).
  • Serve with rice.
  • May be made ahead and refrigerated. It actually tastes better after a day or two.

3 to 3-1/2 pounds country-style pork spareribs
1/4 cup water
1 can (14-1/2 ounces) tomato sauce
1 envelope onion soup mix
1/3 cup packed brown sugar
2 tablespoons prepared mustard
1/8 teaspoon hot pepper sauce
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
2 cans (15-1/2 ounces each) kidney beans, rinsed and drained
1-1/2 cups thinly sliced celery
1 sweet red pepper, thinly sliced

Steps:

  • Place ribs in an ungreased 13-in. x 9-in. baking dish; add water. Cover and bake at 350° for 1-1/2 hours. Drain, reserving liquid; skim fat. Set ribs aside. , Add enough water to liquid to equal 1 cup; place in a saucepan. Add the tomato sauce, soup mix, brown sugar, mustard and hot sauce. Simmer for 10 minutes; reserve 1/2 cup. , To the remaining sauce, add the beans, celery and red pepper. Pour into the baking dish; add ribs. Pour reserved sauce over ribs. Cover and bake for 45 minutes.

  • Pat ribs dry with paper towels and rub with remaining spice mixture, massaging into crevices. Wrap each rack in a double layer of foil, crimping edges to seal tightly. Place each foil packet on a rimmed baking sheet and bake until meat is fork-tender at the thickest part but not falling off the bone, 2–3 hours. Let cool.
  • Tear open a corner of each foil packet and carefully pour juices from ribs into a large heatproof measuring cup. Let juices settle, then spoon fat from surface and discard.
  • Heat butter in a medium saucepan over medium, stirring often, until it foams, then browns (do not burn), 5–8 minutes. Add juices from ribs and ¼ cup reserved spice mixture and bring to a simmer. Cook until reduced by one-third, 15–20 minutes. Remove sauce from heat, add vinegar, and season with salt.
