SPICY SWEET POTATO HASH WITH ROASTED POBLANOS



Spicy Sweet Potato Hash with Roasted Poblanos image

Number Of Ingredients 9

14oz block extra firm tofu
2 medium sweet potatoes
1 large poblano pepper
2 generous tablespoons of olive oil, plus 1-2 teaspoons
Salt & pepper
1 bell pepper, diced
1 small onion, diced
Smoked bbq salt
1.5+ teaspoon montreal chicken seasoning

Steps:

  • Put the tofu in your presser, and set aside. Wash and dice the potatoes, and place them on a baking sheet. Top with the olive oil and stir until they're all coated. Sprinkle liberally with salt and pepper. Stick the pepper on the baking sheet as well - no oil or seasoning. Turn broiler on high, place tray on 2nd to top shelf and leave for 5-7 minutes. Flip your pepper and stir the potatoes, then put back in for another 5-7 minutes. Remove the pepper and set aside, under and overturn bowl, and put the potatoes back in for another 3-5 minutes. Crumble to tofu in a food processor. You want little crumbles. Heat 1-2 teaspoons oil in a frying pan and add the tofu, montreal seasoning, and smoked salt. Cook over medium heat stirring occasionally until hot. Taste and add more seasoning as needed. Set the tofu aside, and water saute the bell pepper and onion just until soft, 2-3 minutes. Dry the pan before returning ingredients to it. Peel your poblano, removing all the burnt pepper skin, and remove the seeds. Run under water if needed. Dice and add to the tofu, along with the potatoes. Stir everything together, taste for seasoning, and serve hot!

2 large sweet potatoes, peeled and cubed
1 poblano pepper
1 onion
4 Tbsp bacon drippings, divided*
1 Tbsp smoked olive oil**
1/4 tsp smoked paprika
1/8 tsp ancho chile powder
1/2 tsp salt
1/4 tsp black pepper
4 green onions, bias sliced
chopped fresh parsley

Steps:

  • Char the poblano pepper on all sides over a gas burner, barbecue grill, or under the broiler. Place charred pepper in a heat proof bowl, cover with plastic wrap and allow to sit for 30 minutes. Slice onion into 1/2 inch slabs. Heat 1 Tablespoon of bacon drippings in a cast iron, or non stick pan. Add onion slabs, turning to coat with drippings. Salt and pepper them and allow them to lightly char, remove from pan. Add 2 more Tablespoons of bacon drippings and smoked olive oil to now empty pan. Add sweet potato cubes, toss to coat. Add 1/2 tsp salt and 1/4 tsp black pepper. Peel charred skin from poblano pepper and coarsely chop. Coarsely chop charred onion. When sweet potatoes begin to take on a golden color, add poblano, onion, smoked paprika and ancho chile powder. It may be necessary to add final Tablespoon of bacon drippings to keep the pan from getting to dry. Continue to cook until potatoes have a nice golden brown crust. Taste for seasoning and garnish with green onions and parsley. *Add bacon drippings as necessary to keep the pan lubricated, you may not need all 4 Tablespoons. **If you do not have smoked olive oil just add a little more smoked paprika to taste.

I made this sweet potato hash up on a night I had nothing planned for dinner and didn't want to slave away to get a great meal. This is a super easy and really flavorful side dish for those who like it spicy and comforting.

2 strips uncured chicken bacon
2 medium sweet potatoes, cubed
1 tablespoon olive oil, or more as needed
1 large jalapeno pepper, finely chopped
1 ½ tablespoons BBQ sauce
1 teaspoon garlic powder
1 pinch ground dried chipotle pepper
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on paper towels and crumble when cool enough to handle.
  • While the bacon cooks, put the cubed sweet potatoes in a microwave-safe bowl and microwave on high power for 5 minutes.
  • Heat a large skillet over medium heat. Add olive oil, then add sweet potatoes, garlic powder, chipotle powder, salt, and black pepper. Cook until potatoes are brown and crisp, 5 to 7 minutes. Add bacon, jalapeno, and BBQ sauce and cook over low heat, 2 to 3 minutes more.

Sweet Potato-Chicken Hash with Poached Eggs with Green Chile Hollandaise image

2 large sweet potatoes
3 boneless, skinless chicken breasts
2 scallions, thinly sliced
1/4 cup cilantro, coarsely chopped
1/4 cup canned chipotle peppers
1 tablespoon honey
Salt and freshly ground pepper, to taste
2 tablespoons olive oil
3 cups water
1 tablespoon white wine vinegar
4 eggs
Green Chile Hollandaise, recipe follows
3 large egg yolks, lightly beaten
1/4 teaspoon kosher salt
Pinch white pepper
1 large poblano pepper, roasted, skinned, seeds removed and finely chopped
1 stick unsalted butter, melted until foamy

Steps:

  • To prepare the hash: In a medium saucepan, cover the potatoes with cold water and bring to a boil over high heat. Reduce the heat and simmer until tender, about 25 to 30 minutes. Drain the potatoes, peel and cut into 1/2-inch cubes. Season the chicken breast with salt and pepper and place in a saucepan of simmering water. Poach for 10-12 minutes or until cooked through. Cut each breast into 1/2-inch cubes. Place the potatoes, chicken, scallion, cilantro, chipotles and honey in a large bowl and mix gently until combined, season with salt and pepper. Form into 4 equal-sized patties. Heat the oil in a large saute pan until just smoking. Season the patties with salt and pepper to taste and saute the patties on each side until golden brown. Keep warm.
  • To prepare the poached eggs: Heat the water and vinegar until simmering in a large frying pan. Break each egg into a cup and gently add to the water. Poach for 4 to 5 minutes, or until the yolk is nearly cooked. Remove the eggs from the pan with a slotted spoon to drain the liquid and top each hash patty with 1 poached egg and some Green Chile Hollandaise.
  • Place the yolks, salt, pepper in a blender and mix until smooth. Slowly, drop by drop add the warm butter to the mixture and blend until emulsified. Place in a bowl and fold in the chopped poblano peppers. Serve immediately or place the bowl over a pot of simmering water to keep warm, stirring occasionally.

5 -6 large sweet potatoes, peeled and diced into 1 inch chunks
2 tablespoons olive oil
1 -2 tablespoon chopped fresh rosemary or 1 -2 tablespoon thyme
1 medium onion, roughly diced
1/4-1/2 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 400.

2 large sweet potatoes (about 500g/1lb 4oz each)
4 tbsp olive oil
2 tbsp fresh thyme leaves, plus 2 sprigs of fresh thyme
1 red scotch bonnet chilli , seeded and finely chopped

Steps:

  • Peel the sweet potatoes and cut crossways into slices 2.5cm thick. Lay each potato on a large sheet of foil, keeping the slices together.
  • Drizzle each potato with the olive oil, sprinkle with the thyme leaves, about half of the chopped chilli and season with plenty of salt and pepper. With your hands, massage the flavourings into each slice. Replace the slices in their original positions. Lay a thyme sprig across the top of each potato and sprinkle with the remaining chilli. Wrap the foil securely round the potatoes to make two parcels. (You can prepare to this stage up to 24 hours ahead.)
  • Put the foil parcels on the rack over the hottest part of the barbecue and cook for 45 minutes until the potatoes are buttery and softened. (Unwrap and test with the point of a knife to check if they're ready).
