8 ounces cream cheese
1/2 cup sour cream
1 tablespoon fresh ground black pepper
2 tablespoons Worcestershire sauce
2 -3 tablespoons dried onion flakes
garlic powder, to taste

Steps:

  • Drain chicken.
  • Combine cream cheese, sour cream, pepper, worcestershire, onion, and garlic powder. Mix well.
  • Add drained chicken and mix well.
  • Allow to refrigerate for a couple hours to let the flavors develop and the onions soften.
  • Serve with crackers or make a sandwich!

One 3- to 4-pound roast chicken, home roasted or store-bought, recipe follows
2 cups green or red seedless grapes, halved, plus more halved grapes, for garnish
1/2 cup slivered almonds
4 scallions, sliced
3 stalks celery, sliced
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 cup heavy cream
2 tablespoons chopped fresh dill, plus more for garnish
1 tablespoon brown sugar
Kosher salt and freshly ground black pepper
One 3- to 4-pound chicken
Olive oil, for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • Cut the roast chicken into small pieces and discard the skin and bones. Put the chicken, grapes, almonds, scallions and celery in a large bowl. In another bowl, mix the mayonnaise, yogurt, cream, dill, brown sugar and some salt and pepper. Pour the dressing over the salad ingredients and toss gently to combine. Taste and adjust the seasoning. Allow to chill for several hours or even overnight.
  • Before serving, garnish with halved grapes and chopped dill. Serve on a bed of lettuce or in a sandwich.
  • Preheat the oven to 400 degrees F.
  • Put the chicken in a roasting pan, drizzle with olive oil and sprinkle generously with salt and pepper. Roast until the juices run clear, about 1 hour 15 minutes. Let cool completely before using for chicken salad.

1 ounce Italian salad dressing mix
2 tablespoons butter
1 onion, chopped
2 cloves minced garlic
1 can cream of chicken soup
6 ounces cream cheese, cubed
1/2 cup chicken broth
salt and black pepper

Steps:

  • Sprinkle chicken with dry salad dressing mix.
  • Melt butter in skillet and brown chicken.
  • Remove chicken to a casserole dish.
  • Add onion and garlic to skillet and cook slightly.

8 ounces fresh mushrooms, sliced
6 ounces cream cheese, softened
6 skinless, boneless chicken breast halves
1 cup brown sugar
½ cup Dijon mustard
½ cup chopped walnuts

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Melt butter in a skillet over medium heat. Saute mushrooms until tender. Reduce heat to low, and stir in cream cheese until melted. Remove from heat.
  • Pound chicken breasts thin with a meat mallet. Spread with mushroom mixture, and roll up. In a small bowl, mix together brown sugar and Dijon mustard. Press mustard mixture onto chicken. Roll chicken in chopped nuts. Place in a baking dish.

This is a family favorite and a versatile recipe. I am called by grandsons to see how to make it. My grandaughter works for Lulu publishing and my sisters and I had her publish a cook book so we could have our recipes ready for them. Really a fun project that was time consuming but proved to be a hit with the family. Now the all have this recipe. This can be used with crackers, or fill tomatoes. If you need a party salad don't flake the chicken by mixing too much just leave it in chunks, add drained pineapple tidbits, red grapes, toasted pecans, walnuts or almonds, put in a lettuce cup with a dab of mayo,fresh shredded mozzarella cheese, and a strawberry on the top. Pretty! A ladies luncheon served with banana bread is sooooo easy. This also makes a delicious andwich. Spread thin layer of mayo on both slices of bread, add chicken salad, a lettuce leaf, and I like shredded mozzarella cheese on this too. Ummmm good things with this recipe.

1-2 sprig(s) celery, diced
5 - eggs, hard boiled and diced
1 teaspoon(s) chicken flavored soup paste, salty
1-2 tablespoon(s) hellmans mayo if needed for sandwiches
1 pinch(es) dried red peppers optional
3 can(s) 3.4oz white or mixed chicken, drain
1/2 teaspoon(s) fresh ground pepper

Steps:

  • Set your cream cheese out to soften. Place in large bowl and whip up with a fork.
  • Add the chicken paste to softend cream cheese. Mix well.
  • Add chicken to cream cheese and the chicken will shred up as you mix but for a lettuce cup don't add chicken and over mix, you want it chunky not flaked..
  • Add the diced eggs.
  • Add pepper and mix all together. Chill for at least an hour so the cream cheese can firm up. If too stiff add the mayo. Sandwich spread usually needs the mayo.
  • Like I stated in my note you can use this as a dip for crackers, a sandwich spread, a salad in tomatoes, or dress it up for a chicken salad lettuce cup.
