- Mix soy sauce, ginger, and garlic in a small bowl.
- Heat oil in a large nonstick skillet over medium-high heat. Arrange pork slices in a single layer in the skillet. Spoon soy sauce mixture over the pork. Cook pork until completely browned and just slightly pink in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork to a plate, retaining juices in the skillet.
- Stir salsa and raspberry preserves into the drippings in the skillet; cook and stir until slightly thickened, about 30 seconds. Spoon sauce over pork slices and top with cilantro.

- 1. Preheat oven to 350. In a small bowl, mix together salt, pepper,cumin, chili powder and cinnamon. rub this into the tenderloin and let it sit for atleast an hour. I have let mine sit overnight and was really good that way too.
- 2. Heat olive oil in ovenproof heavy skillet. I used my cast iron skillet.Put pork in and brown all sides, about 4 minutes total. Remove from heat, leaving pork in the pan.
- 3. Make the glaze then press over the top of tenderloin (the glaze will look dry, but its ok, it wont be) I know this doesnt look like a glaze, more like damp brown sugar, it will turn to a glaze when it melts. Place skillet in the over and roast for about 20 minutes til center reaches 140 degrees. let pork sit in pan on top of stove, covered in foil, for about 10 minutes. Slice and serve.

- 1. Pat dry pork tenderloin and trim any excess fat. Salt and pepper to taste.
- 2. Slice onion in rings and lay on bottom of slow cooker. Place pork tenderloin on top of onions. Pour water on bottom of slow cooker around tenderloin.
- 3. Mix together remaining ingredients. Whisking until combined. At this point taste mixture for sweetness and heat, adjust to your liking.

- Preheat oven to 400 degrees F (204 degrees C). Gather ingredients.
- Rub your pork tenderloin with olive oil, paprika, salt, pepper and garlic on all sides. Add a little extra olive to your pan. (If you have an iron skillet or a pan that can be used from stove top to oven, that is best. It saves on doing extra dishes.
- Sear your seasoned pork tenderloin in the pan on medium-high heat on all sides. About 2 minutes per side or about 6 minutes.
- Transfer your seared, seasoned pork tenderloin to the pre-heated oven and cook for about 10-15 minutes more or until the internal temperature is 145 degrees F. Turn the pork loin over half way through the cooking process.
- Stir together the ginger, tamari (soy sauce) and Thai sweet chili sauce (or to make low carb/diabetic friendly, exchange with sugar free orange preserves, teaspoon water and chili flakes).
- Brush on the Thai chili sauce glaze on the pork tenderloin during the last 5 minutes of cooking. Remove the pork tenderloin from the oven and allow to rest 5 minutes. Slice pork tenderloin and garnish with sliced green onions.

- Trim the tenderloin of all of the fat and silverskin.
- Lay tenderloins on cutting board, flat side (side opposite where silverskin was) up. Using a dinner fork, scrape flat side lengthwise from end to end 5 times, until surface is completely scored. Repeat with second tenderloin.
- Disolve 3 T salt in 1-1/2 quarts cold water in a large container. Submerge tenderloins in brine and let stand at room temperature for 1 hour.
- Remove tenderloins from brine and pat completely dry with paper towels. Lay 1 tenderloin, scraped side up, on cutting board and lay second tenderloin, scraped side down, on top so that thick ends of 1 tenderloin matches up with thin end of the other. Tie the tenderloins together with kitchen twine, spacing evenly apart.
- Brush roast with vegetable oil and season with pepper. Transfer 1/3 cup glaze to bowl for grilling, reserving remaining glaze for serving.
- Clean and oil cooking grate. Heat all the burners to high, cover, and heat grill until hot, about 15 minutes. leave primary burner on high and turn off other burners.
- Place roast on cooler side of grill, cover and cook until meat registers 115 degrees, 22 - 28 minutes, flipping and rotating halfway through cooking.
- Slide roast to hotter part of grill and cook until lightly browned on all sides, 4 - 6 minutes. Brush top of roast with amount 1 tablespoon glaze and grill, glaze side down, until glaze begins to char, 2 - 3 minutes; repeat glazing and grilling with remaining 3 sides of roast, until meat registers 140 degrees.
- Transfer roast to carving board, tent loosley with foil, and let rest for 10 minutes. Carefully remove twine and slice roast into 1/2" thick slices. Serve with remaining glaze.
- Glaze: Heat oil is small saucepan over medium heat until shimmering. Add garlic, ginger, and pepper flakes; cook until fragrant, about 30 minutes. Whisk in hoisin and soy sauce until smooth. Remove pan from heat and stir in vinegar. Sauce can be done in advance.

- Cut a pork tenderloin into 1/2" rounds and then cut each round into 2-3 strips. The strips should be about 2-3 inches long or roughly the size of your pinky or ring finger.
- Use a paper towel to pat the pork dry before adding the strips of pork to a bowl and toss in the chili oil before adding the ground ginger, garlic powder, salt, and pepper. Toss/stir until evenly coated. Set aside.
- Mix the sauce ingredients in a small bowl and mince or chop the garlic. Set both aside.
- Heat a large skillet over medium-high heat. Once hot, add the pork strips in an even layer. Cook for 3-4 minutes or until there's a small amount of pink remaining in the center. Flip and cook for an additional 1-2 minutes until fully cooked (165ºF internal temp). Transfer the cooked pork to a plate.
- Add the minced garlic to the skillet and toast until fragrant, about 30 seconds, before adding the sauce. Scrape any crispy bits of the bottom of the skillet and cook until the sauce thickens, about 45-60 seconds. Be sure to stir to avoid burning.

- Turn on an 8-quart multi-functional pressure cooker (such as Instant Pot®), select Saute function, and allow to preheat.
- Combine paprika, salt, ground ginger, and white pepper in a small bowl. Rub tenderloins on all sides with the mixture.
- Combine chicken broth, soy sauce, and rice vinegar in a separate bowl; you should have 2 cups, the recommended amount of cooking liquid in an 8-quart pot. Check your owner's manual for recommended liquid amount for other sizes and adjust accordingly.
- Pour avocado oil into the Instant Pot® and heat until shimmering. Add tenderloins to brown, about 2 minutes per side. Remove tenderloins to a plate, add liquid mixture to the pot, and scrape the browned bits from the bottom of the pot, stirring all together. Turn off Saute function.

- Cook the pork: Season the pork all over with the salt, then sift the paprika through a fine mesh sieve over the pork. Heat a cast iron skillet large enough to hold the pork.
