CRISPY SHRIMP BURGERS
Steps:
- Take half the shrimp and coarsely chop it. Add it to a bowl. Take the other half and add it to a food processor with the garlic and cilantro. Pulse to create a chunky paste. Mix in with the chopped shrimp.
- Add the salt, paprika, onion powder, cayenne pepper, Panko breadcrumbs, and egg. Mix until just combine.
- Divide into patties.
- Heat a skillet over medium high heat with the vegetable oil. Add the burgers and cook for 3-4 minutes on each side. Serve on a roll as a burger, wrapped in lettuce, or as a burger bowl.

Steps:
- 1. In a medium saucepan, on low heat, sauté the minced garlic in the olive oil for 2 minutes and add the sauces. Combine thoroughly and keep warm.
- 2. Place the ground pork and sausage mixture in a large mixing bowl. Add the salt and pepper and the chopped onions. Combine thoroughly, but don't over mix. Form into 6 patties, cover and set aside.
- 3. In a large sauté pan melt the butter over medium high heat. Lower the heat to medium. Add the mushroom slices, the salt and pepper and brown on both side for 2 to 3 minutes. Remove from the heat.
- 4. Toss the spinach and Arugula in a medium bowl with the oil, vinegar and salt and set aside
- 5. To a hot frying pan add the pancetta and cook until crispy. Remove from the heat and set aside on paper towels.
- 6. Slice the ciabatta buns in half and place cut side up on a large baking sheet. Combine the melted butter and minced garlic in a small bowl. Brush the mixture on each bun half. Sprinkle on the Parmesan cheese. Place in a pre-heated 375 deg oven for 7 to 10 minutes until the edges are just turning brown. Remove from the oven.
- 7. Heat a grill to medium high. Put an indentation in the middle of each burger with your thumb and place on the grill indentation side up. Cook for 4 minutes, turn the burgers and cook and additional 4 minutes. Lower the heat to medium low, add 2 slices of cheese to each burger and cook an additional 2 minutes until the cheese is melted. Remove from the heat and cover. The internal temperature of the burgers should be about 155 to 160 degrees when they are removed from the heat.
- 8. Assembling the Burgers Divide the dressed greens between the bun bottoms. Place 3 mushroom slices on each bun followed by 2 tablespoons of the sauce. Place the burgers on top of that, followed by another 2 tablespoons of the sauce and then the pancetta. Cover and serve.
SHRIMP BURGERS WITH OLD BAY MAYO
Steps:
- For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
- Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
- For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
- To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

- Make the patties: combine the salt, pepper, horseradish and ¾ cup corn in a food processor; process until fairly smooth.
- Add 1/3 of the shrimp; blend until smooth.
- Transfer mixture to a large, chilled bowl; fold in remaining ¾ cup corn, remaining chopped shrimp, sun-dried tomatoes, and tarragon; mix well.
- Divide mixture into 6 equal portions; form into patties to fit rolls.
- Cover and refrigerate for 30 minutes or up to 2 hours; remove from refrigerator about 15 minutes before grilling.
- Prepare a medium-hot fire in a charcoal grill with a cover; or preheat a gas grill to medium-high.
- Make chile mayonnaise: combine the mayonnaise, chile sauce, salt, and pepper in a small bowl; whisk to blend well; cover and refrigerate until serving.
- When the grill is ready, place a cast-iron skillet on the grill rack and cook the pancetta until golden brown and crisp; drain on paper towels.
- Gently brush both sides of chilled patties and grill rack with oil; place patties on the rack, cover, and cook, turning very carefully once, just until opaque throughout, about 5 minutes on each side.
- During the last few minutes of cooking, spread the cut sides of the rolls with butter and place, cut side down, on the outer edges of the rack to toast lightly.
- Sprinkle the tomato and avocado slices with salt and pepper to taste.
- Assemble burgers: spread the mayonnaise over the cut sides of the rolls; on each roll bottom, place a lettuce leaf, a tomato slices, 2 avocado slicesk a patty, and a pancetta slice.
- Add the roll tops and serve.

CRISPY SHRIMP BURGER
Steps:
- In a large skillet, melt the butter over medium heat. Add the onions, celery, bell pepper, salt, and cayenne. Cook, stirring, until soft for about 6 minutes. Add the shrimp and cook, stirring, for 3 minutes. Transfer the mixture to a large mixing bowl and let cool slightly. Add the garlic, green onions, 2 of the eggs, and 1 cup of the bread crumbs. Stir to mix well. Divide into 8 equal portions and form into patties. Put the flour in a shallow bowl and season with 1 teaspoon of the Creole seasoning. Put the remaining 1 cup bread crumbs in another shallow bowl and season with the remaining 1 teaspoon Creole seasoning. Put the beaten egg in yet another shallow bowl, add the water, and beat lightly. Heat the vegetable oil in 2 large skillets over medium heat. Dredge each patty first in the flour, then in the egg mixture, then in the bread crumbs, turning to coat completely and shaking off any excess. Cook 4 patties at a time in each skillet, until lightly browned, 5 to 6 minutes on each side. Drain on paper towels. To serve, spread both sides of each toasted bun with some of the tartar sauce, place a patty on the bottom half of the bun, dress with lettuce and tomatoes, and top with the other bun half.
- Combine all ingredients thoroughly.

- Divide the shrimp in half. Put half the shrimp into a food processor and grind it up. Transfer the shrimp to a bowl using a rubber spatula. Add the whole shrimp to the bowl. Add celery, onion, bell pepper, garlic and parsley to the processor and pulse-grind it into a fine chop. Add the vegetable mixture to the shrimp. Add half a palm full of crab boil seasoning, 1/2 teaspoon cayenne, lemon zest, salt and pepper to the bowl, to season. Stir the shrimp mixture to combine.
- Preheat a large nonstick skillet over medium to medium high heat. Add extra-virgin olive oil, 2 turns of the pan in a slow stream. Use a large metal scoop to scoop 4 mounds of shrimp burger mixture into the pan. Gently pat down to form patties. Fry patties 3 to 5 minutes on each side, until they firm up and the shrimp turn whitish-pink.
- Split and toast the sandwich size English muffins. Mix mayonnaise and chili sauce, salsa or taco sauce. Place burgers on muffin bottoms and top with lettuce. Slather the top of the muffins with sauce and set in place.
