SOUTHERN BARBECUE SAUCE
Steps:
- Gather the ingredients.
- Heat the vegetable oil in a medium saucepan. Add the minced garlic and cook for 15 to 30 seconds until it becomes fragrant.
- Add the ketchup, cider vinegar, water, Worcestershire sauce, sugar, paprika, bay leaf, Tabasco sauce, cayenne pepper, and lemon juice. Do not add the butter at this point. Simmer the sauce over medium-low heat for 8 to 10 minutes, stirring occasionally. Watch for burning and lower the temperature if needed.
- Remove the pan from the heat and stir in the butter. Once melted through, let sauce cool for 10 to 15 minutes before using.
- If making ahead of time, cool sauce for 30 minutes and store in an airtight container in the refrigerator for four to five days after preparation.
- Serve and enjoy.

SWEET, SPICY, AND STICKY BBQ SAUCE
I use this sauce on ribs and then slow-cook 'em on the smoker. A guaranteed hit for any gathering; this sauce is my absolute favorite! May use immediately or keep in an air-tight container in a refrigerator up to several weeks. Brush sauce on ribs as ribs are finishing.

- In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency. SPICY ORANGE BBQ SAUCE
Tangy and sweet, this sauce is a great compliment for grilled chicken or ribs. The longer you let it simmer, the spicier it will taste. The trick to this sauce is to start with the basic ingredients and then gradually add more of your favorite spice until you reach YOUR desired taste. I like it spicy but you might prefer it sweet. Be careful with the orange zest because it will overwhelm the other flavors if you use to much.

- In a med. saucepan over med. heat. Simmer Ketchup, honey, sugar and butter.
- Stir constantly until butter is completely melted - Do not boil!
- Add other ingredients- simmer 10 minutes and taste.
- Gradually add additional seasoning until desired flavor is reached. (ie. Spicier- more pepper, sweeter- more honey.)
- IMPORTANT.
- When adding ingredients do not exceed 1/8 teaspoons at a time. After you add, let it simmer for at least five minutes This will bring the flavors and give you a more honest taste.
- Also if you boil it you'll most likely burn it, so stir constantly.

SOUTHERN BARBECUE SAUCE
This is easy to make -- the most discriminating barbecue fans rave about this sauce ! This is an adaptation from Jeff Smith (The Frugal Gourmet). This sauce terrific with baby back ribs--I typically serve this sauce with slowly smoked baby back ribs -- then dip each rib in this warmed sauce just before serving. True to the southern tradition of barbecue, this sauce is not meant to be added during grilling---but, hey, you're the chef! You can apply this to your grilled meat during the last 15 minutes of cooking. I make a large batch (can easily be doubled) because it freezes well. Cut the chili flakes in half (or omit) if you have a low tolerance for spicy food. July 10, 2009: A reviewer has stated I plagiarized this recipe; as you can see above, I have ALWAYS attributed the recipe to Jeff Smith, also known as The Frugal Gourmet; I further stated this version to be an adaptation---the reviewer correctly indicates that the mustard & beef stock are the only things changed. The reviewer correctly states this recipe doesn't make one quart. Next time I make it, I'll correct the estimated yield. As a writer and know plenty about what plagiarism is (and isn't). Apparently, the reviewer doesn't. Got my hackles up on this one!!

- Simmer gently for 1 1/2- 2 hours--watch the heat carefully, because the sauce will burn if heat is too high.
