SPICY CHICKEN SOUP



Spicy Chicken Soup image

This Tex-Mex inspired Spicy Chicken Soup is bursting with rich, deep flavor from the spices added. It's hearty, and deliciously comforting.

4 cups water
1 pound boneless skinless chicken breasts
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 Tablespoon dried parsley flakes
3 teaspoons onion powder
1 Tablespoon olive oil
1/2 onion (, chopped)
2 cloves garlic (, minced)
3 teaspoons chicken bouillon paste ((or 3 bullion cubes))
8 ounces salsa (, your favorite kind)
14.5 ounce can diced tomatoes (, undrained)
4 ounces tomato sauce
1/2 Tablespoon granulated sugar
2 Tablespoons chili powder
1 teaspoon cumin
15 ounce can corn ((or frozen), drained)
16 ounce can chili beans
3/4 cup sour cream
Cilantro, shredded cheese, and avocado for soup garnish

Steps:

  • In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes or until chicken is cooked through. Remove chicken to a plate and shred.
  • In a large pot over medium heat, cook onion and garlic in olive oil until slightly browned.
  • Stir in salsa, diced tomatoes, tomato sauce, sugar, chili powder, cumin, corn, chili beans, shredded chicken, and 3 1/2 cups of the reserved water. Simmer 30 minutes.
  • Stir in sour cream. Taste and add extra salt, or additional seasonings, if needed.
  • Garnish with cilantro, cheese, avocado, crushed tortilla chips, or whatever you like!

Spicy Mac and Cheese Soup image

I was running low on groceries and needed to use pantry staples to create a filling dinner for my family. I came up with this soup and now it's become a favorite in our home. For an even creamier consistency, I sometimes use a can of evaporated milk in place of the regular milk in the recipe. Leftover taco meat or shredded rotisserie chicken can be added to make it more hearty.

2 (7.25 ounce) packages macaroni and cheese mix
¼ cup butter
2 cups chicken broth
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 tablespoon garlic powder
1 teaspoon ground cumin
1 teaspoon dry mustard powder
½ teaspoon ground black pepper, or to taste
1 ½ cups milk
¾ cup sour cream, divided

Steps:

  • Bring a large pot of lightly salted water to a boil and stir in macaroni from the packages, retaining cheese mix packets for later use. Cook macaroni at a rolling boil over medium heat, stirring occasionally, until tender but still slightly firm, 8 to 10 minutes. Drain and rinse macaroni with cold water. Return cooked macaroni to the pot.
  • Mix butter, chicken broth, and tomatoes with macaroni and bring mixture to a simmer over medium heat; stir in garlic powder, cumin, dry mustard, pepper, and contents of cheese mix packets. Stir in milk and reduce heat to low; heat soup almost to a simmer. Do not boil.
  • Serve soup in bowls and top each serving with about 2 tablespoons of sour cream.

A "hotter" twist on an old favorite. I don't remember where I got this recipe but my daddy loves it.

1/2 cup butter
1 cup carrot, 1/8-inch cube
1/2 cup celery, 1/8-inch cube
3 cups chicken broth
3 cups half-and-half
2 lbs Velveeta cheese, small cubes
1 tablespoon parsley, finely chopped (fresh)
1/2 cup jalapeno pepper, finely chopped

Steps:

  • Melt the butter in a Dutch oven.
  • Add the carrots, onions and celery all at once and saute' until soft but not brown.
  • Add flour and stir to combine.
  • Cook until mixture begins to turn light brown in color.
  • Over medium high heat, add the chicken broth a little at a time.
  • Stir well and continue to cook stirring with a whisk until a thick base forms.
  • Add half and half being careful not to let it boil.
  • Add cheese, stirring until melted.
  • About 15 minutes before serving, add the parsley and finely chopped jalapeno peppers.

This creamy and spicy cheeseburger soup brings my family to the table in a hurry. I love the warming zip of cayenne, but it also tastes terrific without it if you like milder flavor. With a few simple side dishes, this soup is a full meal.

1-1/2 cups water
2 cups cubed peeled potatoes
2 small carrots, grated
1 small onion, chopped
1/4 cup chopped green pepper
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
1 tablespoon beef bouillon granules
1/2 teaspoon salt
1 pound ground beef, cooked and drained
2-1/2 cups 2% milk, divided
3 tablespoons all-purpose flour
8 ounces cubed Velveeta
1/4 to 1 teaspoon cayenne pepper, optional
1/2 pound sliced bacon, cooked and crumbled

Steps:

  • In a large saucepan, combine the first 9 ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. , Stir in beef and 2 cups milk; heat through. Combine flour and remaining milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; stir in cheese until melted. Add cayenne, pepper if desired. Top with bacon just before serving.
