SPICY BLACK BEAN TACOS



Spicy black bean tacos image

These vegetarian bean tacos, lightly spiced with cumin and smoked paprika, are topped with fresh guacamole and a pomegranate salsa.

1 tbsp vegetable oil
3 garlic cloves, chopped
3 x 400g cans black beans, drained and rinsed
3 tbsp cider vinegar
1 ½ tbsp honey
1 ½ tbsp smoked paprika
1 ½ tbsp ground cumin
1 small garlic clove
2 tbsp roughly chopped coriander
1 green chilli, sliced
2 avocados, halved and stoned
juice 1 lime
110g pack pomegranate seeds
1 green chilli, finely diced
1small white onion, finely diced
small handful fresh coriander, chopped
8-12 corn or flour tortillas
chipotle or other hot sauce
soured cream or coconut yogurt

Steps:

  • In a large frying pan, heat the oil and add the garlic. Fry until golden, then add the beans. Pour in the cider vinegar, honey and spices along with 1 tsp or more of salt, to taste. Cook until warmed through, crushing gently with the back of your wooden spoon, then set aside.
  • The best way to make the guacamole is with a large stone pestle and mortar, but you can use a medium bowl and a flat-ended rolling pin instead. Crush the garlic, coriander and chilli into a rough paste. Scoop in the avocado with a little salt and crush roughly - you want it chunky, not smooth. Squeeze in the lime juice and set aside.
  • Mix the salsa ingredients in a small bowl. Heat a griddle pan or steamer and quickly griddle the tortillas or steam a stack of them to warm up. Reheat the bean mixture.
  • To serve, put 1-2 heaped tbsp of beans on a tortilla. Top with a big spoonful of guacamole and some salsa, hot sauce and a dollop of soured cream or yogurt.

1/4 cup minced yellow onion
1 jalapeno pepper, minced
2 teaspoons vegetable oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
3 cloves garlic, minced
2 cups cooked black beans
1 cup chicken or vegetable stock
1 tablespoon white vinegar

Steps:

  • Cook the onions and jalapenos in the vegetable oil in a large saucepan over medium heat until soft, about 5 minutes. Add the cumin, oregano, salt and garlic, and cook another 2 to 3 minutes. Add the beans, stock and 1 cup water and bring to a boil. Turn the heat to low and simmer 15 minutes.
  • Remove the beans from the heat and strain, reserving the liquid. Mash the beans in a small bowl with a potato masher, adding the vinegar and cooking liquid to keep the beans soft. (You will probably not use all the liquid.).

2 tbsp. unsalted butter
1/2 cup finely chopped white onion ((or yellow onion))
1 tbsp. minced jalapenos ((seeds removed for less heat))
salt
2 cloves garlic (minced)
1/2 tsp. cumin
1/4 tsp. chili powder
1/4 tsp. cayenne ((optional - leave out for less heat))
1/2 tsp. oregano
15.5 ounces canned black beans (drained and rinsed)
1/2 cup water
1/4 cup sour cream
2 tsp. hot sauce (your favorite)

Steps:

  • Melt the butter in a medium sauce pan over medium heat. Add onions, jalapenos, and a healthy pinch of salt. Stir to coat in butter, then cook for ten minutes.
  • Stir in garlic and seasonings, and cook for three minutes.
  • Stir in the drained/rinsed black beans and water, then cover the pot with a lid. Allow the beans to simmer for ten minutes, until softened.
  • Uncover the pot, and turn the heat down to low. Once the beans are not actively bubbling, use a large spoon to stir the beans, and gently smash the beans against the side of the pot. Continue smashing until they form a creamy, thick texture.
  • Stir in the sour cream and hot sauce. Carefully taste, and season with more salt if needed.
  • Serve hot, and top with crumbled cotija cheese and cilantro, if desired!

1/4 cup vegetable oil
1 large white onion, chopped
6 garlic cloves, minced
2 (15 ounce) cans black beans, drained and rinsed
1/2 cup water, may need up to 1 cup
1/2 teaspoon kosher salt

Steps:

  • Heat oil in a nonstick skillet over medium heat.
  • Add onion and cook until golden, stirring often, about 7 minutes.
  • Stir in garlic and cook 1 minute.
  • Add beans and mash coarsely with a potato masher, mashing in onion and and garlic at the same time.
  • Thin beans with enough water to give them a soft consistency that barely holds it shape in a spoon.
  • Season with salt.
  • Cover and keep warm until serving.

1/2 pound dried black beans
1 medium onion, roughly chopped
3 fresh garlic cloves, pressed
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
Pinch red pepper flakes
2 teaspoons sugar
2 tablespoons white wine vinegar
Salt and freshly ground black pepper
Chopped scallions, for garnish

Steps:

  • The night before, soak the black beans in a large pot of water. The next day, rinse the beans, cover with 3 cups of fresh water and bring to a boil over high heat. Reduce the heat and simmer covered for 30 minutes, skimming off any foam. Stir in the onion and simmer 30 minutes more. Add the garlic, oregano, cumin, and red pepper flakes, and simmer uncovered for 30 minutes, stirring occasionally. Stir in sugar and vinegar, and taste before seasoning with salt and pepper. Turn out into a large serving bowl and garnish with chopped scallions.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

2 cups dried black beans
1 (15 ounce) can diced tomatoes, undrained
4 garlic cloves, roughly chopped
1/2 tablespoon cumin
1 medium jalapeno, diced and seeded

5 cups water

Steps:

  • Sort through your beans to remove any stones or damaged beans. Rinse the beans well to remove any dust. Place the beans in the slow cooker.
  • Add to the slow cooker the diced tomatoes (including juices), garlic, jalapeno, and cumin. Add 5 cups of water, secure the lid and set the heat to high. Let cook for 4 hours.
  • After four hours open the slow cooker and check the beans to make sure they are tender. They should be fully cooked at this point but if they aren't, simply cook them longer and check again after a couple hours. Season the beans with salt (usually about 1/2 tsp).

I made these up for supper tonight. These taste a little like my favorite black beans and rice. My husband even likes them!

1/4 small onion, diced
1 small carrot, grated
2 garlic cloves, minced
jalapeno pepper (optional)
1 (15 ounce) can black beans, drained
1/4 cup saltine crumbs
salt
pepper
cumin
dried chipotle powder

Steps:

  • Saute onion, carrot, and jalapenos in a little oil, until softened. Add garlic and saute until garlic is soft.
  • Add salt, pepper, cumin, and chipotle powder and cook another minute or two longer.
  • Combine vegetables and beans in a bowl, and mash with a fork.
  • Add cracker crumbs and mix thoroughly.
  • Form into 4 patties.
  • Coat the bottom of a large skillet with oil and heat over medium high heat.
  • Fry the patties until they are brown and a little crunchy.
  • I like these wrapped in tortillas, with a little lettuce and cheese on top.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

5 garlic cloves, peeled and sliced
1/4 cup tomato paste

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

  • Add onions, bell peppers and spices and saute until soft.
  • Add garlic and saute until you can smell the aroma.
  • Add jalapenos if desired, salsa, hot sauce, black beans, water, and rice and mix well. Turn heat up to high and let come to a boil.
  • Once it comes to a boil, turn the heat down to medium, cover, and let simmer for 8 - 10 minutes.
  • Garnish with shredded cheese if desired.
