SPICY SHRIMP AND PASTA
I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.

Steps:
- Cook linguine according to package directions; keep warm.
- Peel and devein shrimp; set aside.
- Melt butter in a large electric skillet set on medium temperature.
- Add onions and garlic to skillet; saute until tender.
- Stir in cajun or creole seasoning; cook, stirring constantly for 1 minute.
- Stir in shrimp and saute until barely pink.
- Add heavy cream; reduce heat to medium low, and simmer for 3 minutes, stirring often.
- Stir in linguine, parmesan cheese, and crushed red pepper, cook mixture, stirring gently, until thoroughly heated.
- Stir in parsley; serve immediately.

SPICY SHRIMP FETTUCCINE WITH GARLIC AND TOMATOES
This is a very tasty, quick dish made up by one of my work colleagues. Shrimp are sauteed with fresh tomatoes, parsley, lemon, and chile peppers, and served over pasta of your choice. I prefer fettuccine.

- Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
- Meanwhile, heat oil in a large skillet over medium heat. Add onion, celery, and garlic and cook until soft, 3 to 5 minutes. Stir in chile peppers and cook for 5 minutes.
- Add shrimp and cook until opaque, about 3 minutes. Stir in tomatoes and parsley and cook for 5 minutes. Season with lemon juice and sugar and cook for 5 minutes. Season with salt and pepper.
- Drain fettucine and toss with shrimp mixture.

SHRIMP, FETA, AND ESPELETTE PEPPER PASTA
My best French friend Cecile introduced me to Espelette pepper powder and I can't get enough of it! It's a red pepper powder from French commune of Espelette that is mildly spicy and full of flavor. This pasta dish combines Espelette pepper with shrimp and feta and the three ingredients work together beautifully. I like to call this dish Les Pates de Cecile (Cecile's Pasta). For additional flavor and a nice presentation, you can crumble some additional feta over each serving and drizzle with extra-virgin olive oil.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain well.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 2 minutes. Add frozen shrimp and Espelette pepper and lower heat to medium-low. Cook until shrimp is no longer frozen, 3 to 5 minutes.

- Cook pasta as directed on package, omitting salt.
- Meanwhile, blend 1 can tomatoes, adobo sauce, garlic, oregano and cumin in blender until smooth; set aside. Drain remaining can of tomatoes; discard liquid. Slice peppers. Cook and stir half the shrimp in large nonstick skillet on medium heat 2 min. or until shrimp turn pink. Remove shrimp from skillet; cover to keep warm. Repeat with remaining shrimp. Return all shrimp to skillet. Add drained tomatoes, peppers and olives; cook 2 min., stirring frequently. Stir in prepared tomato sauce. Bring to boil; simmer on medium-low heat 2 min., stirring occasionally.
- Drain pasta. Add to shrimp mixture along with the shredded cheese; cook 3 min. or until cheese is completely melted and shrimp mixture is heated through, stirring constantly. Sprinkle with Parmesan.

- Boil the pasta in salted water according to package directions.
- Drain well reserving about 1 cup of pasta water.
- When pasta is almost done cooking, sprinkle about one tablespoon of olive oil in a cold nonstick.
- Turn heat on to medium high let pan warm for a minute or two. You want the pan to just be warm when you hold your hand over the surface.
- Add the shrimp, garlic, onion, lemon zest, and pepper flakes (or jalapeno) and cook stirring constantly for 2-3 minutes. Shrimp will just start to turn opaque but not yet pink.
- Add tomatoes, salt, basil, oregano, lemon juice, and white wine. Stir and cook for another 2-3 minutes or until shrimp turn pink.
- Add in the 1 cup reserved pasta water.
- Taste sauce and adjust seasonings to your taste.
- Spoon over drained pasta and garnish with fresh black pepper and grated parmesan cheese.

- In a bowl, combine all marinade ingredients; stir in the shrimp until evenly coated; marinate for 20-25 minutes.
- Meanwhile, blend together all sauce ingredients.
- Slice the chili peppers in half lengthwise, and scrape out the seeds with the tip of a knife, then cut the peppers into 1/4-inch pieces (I use rubber gloves for this, watch your eyes, these are HOT!).
- In a large wok or large heavy skillet, over high heat, add in half of the marinated shrimp; stir-fry for 2 minutes, or until the shrimp turns pink; remove.
- Heat 1 Tbsp oil in the same wok/frypan, and stir-fry remaining shrimp in the same manner; remove.
- Wipe out the pan with a paper towel.
- Heat the remaining oil in the same pan.
- Add the chili peppers and garlic; stir-fry 10 seconds, or until peppers start to turn brown.
- Add in the green onions and bell pepper; stir-fry 1 minute.
- Add in the sauce mixture; cook, stirring until sauce boils and thickens.
- Stir in the shrimp and sesame oil.
- Serve immediately.
YUMMY SPICY SHRIMP WITH ANGEL HAIR PASTA
This is one of my husband's favorites (mine, too!). We like the sweet and spicy combination of shrimp, peas, and hot pepper, but it is also good with broccoli, asparagus, or other vegetables, or by itself. We love this with a big green salad and a glass of Shiraz! I use pre-cooked shrimp for this, but you can also use raw - just add them a minute or two earlier to the peas. This looks more complicated than it is - we often rely on this recipe as a quick and easy weeknight dinner. Actual cooking time is only about 10-15 minutes, the prep time is marinading time.

- In a mixing bowl, combine the garlic, oil, tomato sauce, vinegar, basil, salt, and cayenne pepper.
- Remove 2/3- 3/4 of this mixture and put it in a small saucepan; set aside.
- Add the shrimp to the remaining sauce that's still in the bowl.
- Mix to coat the shrimp.
- Cover and allow to marinate for 30-60 minutes in the refrigerator.
- Cook the pasta as directed.
- Drain and put in a large bowl.
- While the pasta is cooking, simmer the reserved sauce mixture in the saucepan on low heat.
- Since there is only a small amount in the pan, watch this carefully and stir often to ensure it doesn't burn.
- *Forthe following step, if you need to you can add a small bit of water or oil, but as long as your pan has a good coating, it should not be necessary.
- *Heat a large nonstick pan to medium-high heat, and add the peas.
- Stir constantly, and cook until almost tender-crisp, but not quite done.
- This should only take a few minutes.
- Remove the shrimp from the marinade and add to the pan.
- Continue stirring and cook only until the shrimp are heated through.
- Add the sauce and shrimp& pea mixture to the pasta, and toss to coat thoroughly.
- Top with parsley, cheese, and black pepper.
SPICY SHRIMP PASTA SKILLET
