  • Thinly slice a baguette; arrange in a single layer on a baking sheet. Brush with olive oil and sprinkle with salt. Bake at 425 degrees F until lightly golden, about 7 minutes. Let cool slightly.
  • Toss 1/2 pound peeled shrimp with 1 tablespoon each chopped chives and parsley, 1 teaspoon each red pepper flakes and lemon zest, 1/2 teaspoon paprika, a drizzle of olive oil and a pinch of cayenne. Grill 2 to 3 minutes per side. Spread marinara sauce on the toast rounds. Top with the shrimp; drizzle with olive oil and sprinkle with chopped chives.

1 cup onion, diced
1 cup green pepper, diced
2 TBSP minced garlic
1 tap cayenne pepper
Dash of salt
Dash of pepper
4 oz. cream cheese, softened
1 cup Bertolli Arrabuiatta Sauce
1/4 cup pepperoni, diced into small pieces
Small bag of Italian blended cheeses (Asiagio, Provolone, Mozzarella and Parmesan.
Small bag of baby shrimp (precooked)

Steps:

  • Preheat Oven 350 degrees. Slice Italian bread loaf (approximately 1/2" thickness) and lightly toast in the toaster. Place toast onto a cookie sheet. Dice onion, green pepper and mix with garlic, cayenne pepper, salt and pepper. Heat olive oil in a pan and cook onion mixture (about 2 minutes). Add cream cheese and sauce to pan and cook until all combined and cream cheese is melted. Add pepperoni and shrimp and cook enough for shrimp to be heated through. Add 1/4 cup of the cheese mix and remove from the heat. Spoon mixture onto the toast and top with remaining cheese. Place on bottom rack of oven and bake for 5 minutes. Remove from oven and turn on broiler to HI. Place pan on top rack and broil until cheese is lightly browned. Serve immediately. ENJOY!

1 (9-oz) package of SeaPak Jumbo Butterfly Shrimp
1 baguette
6 tbsp. olive oil, divided
3 cups grape or cherry tomatoes, seeded and finely diced
3 garlic cloves, finely diced
1/3 cup chopped basil plus more leaves for garnish
Salt and pepper to taste

Steps:

  • Preheat oven to 425°F. Bake shrimp according to package directions and keep warm. Slice baguette into as many slices as you have pieces of shrimp. Use one of the garlic cloves to rub over one side of each slice of bread. Brush the garlic rubbed side with olive oil. Set aside. Finely dice remaining garlic. In a medium mixing bowl, stir together the tomatoes, 3 tablespoons olive oil, garlic and basil. Salt and pepper to taste and set aside. Working in batches, add the baguette slices (oil side down) to a large hot skillet and cook until browned around the edges. Remove from pan. To Serve: Top each baguette slice with a small spoonful of the tomato mixture and a piece of the shrimp. Garnish with a basil leaf. Serve immediately.

1 (1 pound) loaf ciabatta bread, trimmed and cut into 14 (1/2-inch thick) slices
Olive oil, for drizzling
1 garlic clove, halved
3 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
1 clove garlic, chopped
1 pound extra-large shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
6 Roma tomatoes, chopped
1/4 cup white wine
1/4 cup low-sodium chicken stock
3 tablespoons chopped fresh tarragon leaves
1 packed cup arugula, chopped
1/2 cup mascarpone cheese, at room temperature

Steps:

  • Toasts: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
  • Arrange the bread slices in a single layer on a baking sheet and drizzle with olive oil. Bake until light golden, about 10 minutes. Cool for 2 minutes. Rub the warm toasts with the cut-side of the garlic. Set aside.
  • Topping: In a medium skillet, heat 3 tablespoons of oil over medium-high heat. Add the shallots and garlic and cook, stirring frequently, until soft, about 2 minutes. Season the shrimp with salt and pepper, to taste, and add them to the skillet. Cook until the meat is just pink and cooked through, about 3 to 4 minutes.   • In the same skillet, add the tomatoes and season with salt and pepper, to taste. Cook over medium-high heat until the tomatoes start to soften, about 4 minutes. Turn the heat to high. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook for 2 minutes. Add the stock and cook until most of the liquid has evaporated, about 2 minutes. Remove the pan from the heat. Add the tarragon, arugula, mascarpone cheese, and chopped shrimp. Stir until the mixture is creamy. Season with salt and pepper, to taste. Spoon the cream sauce over the toasts and sprinkle with salt and pepper, to taste, before serving.

Not your average bruschetta recipe! For a special twist, I added shrimp, avocado, and good quality basil pesto.

5-6 firm Roma tomatoes, diced
1/2 lb shrimp, peeled and cooked
2 green onions, chopped
1 ripe avocado, peeled and diced
1 garlic clove, minced
8 oz baby mozzarella cheese balls, halved
salt and pepper
1/2 lemon, juice of
olive oil
3 tbsp good quality basil pesto
3 tbsp grated Parmesan, more if you like
1 French baguette, sliced and toasted

Steps:

  • Place the diced tomatoes in a colander for 10 mins to drain its juices. Meanwhile, prepare the remaining ingredients.
  • Slice the shrimp horizontally through the middle (see the picture).
  • In a large bowl, combine the tomatoes, shrimp, green onions, avocado, garlic and mozzarella. Season with salt and pepper. Add the lemon juice, 2 tbsp olive oil, basil pesto and Parmesan. Toss gently to combine.
  • Transfer the shrimp bruschetta into a serving bowl. Cover and refrigerate for 1 hr. When ready to serve, toss the bruschetta gently to freshen. Toast the bread slices and serve next to it. Enjoy!

Easy to make recipe using vine-ripened tomatoes fresh from your garden, or purchased in the grocery store. I wanted to use the rosemary I am growing in my garden this year and found this recipe at the Crisco website. Kosher salt is good instead of table salt, and freshly ground pepper. A serrated grapefruit spoon is a handy tool to seed the tomatoes.

2 cups vegetable oil or 2 cups canola oil, divided
1/2 cup fresh rosemary leaf, chopped, divided

nonstick cooking spray
8 slices crusty Italian bread, thick slices
2 garlic cloves, peeled, cut in half

Steps:

  • Marinate the chopped tomatoes in a bowl with 1 cup of oil, 1/4 cup rosemary leaves, 1 tablespoon red wine vinegar and salt and pepper for 30 minutes.
  • In a separate bowl, marinate the shrimp in 1 cup oil, 1/4 cup rosemary leaves, 1 tablespoon red wine vinegar and salt and pepper for 30 minutes.
  • Drain the shrimp (discard the marinade) and grill or broil on both sides until done.
  • Preheat oven to 350 degrees Fahrenheit.
  • Place Italian bread slices on a baking sheet. Spray both sides of bread with no stick cooking spray or lightly brush with oil. Rub each piece with cut garlic. Sprinkle with salt and pepper to taste.
  • Bake 5 minutes or until lightly golden brown.
  • Top toast with tomatoes and shrimp; garnish with rosemary.

When I was in college, I worked at Pappasito's as a waitress. I LOVED their brochette shrimp and I asked the cook for the recipe. He didn't give me the exact measurements, but he did give me the list of ingredients. I went home and played around with the quantities of the ingredeints and came up with what I think is very close to the real thing!

12 large shrimp
6 slices bacon, cut in half
1 fresh jalapeno
1 slice monterey jack cheese, thick
1 tablespoon paprika
1 tablespoon cayenne pepper
1/2 teaspoon fresh ground black pepper
1/2 cup butter
1/4 cup white wine
wooden skewer, soaked in water

Steps:

  • Clean and devein shrimp, leaving the last section and tails intact.
  • With a paring knife, carefully slice each shrimp from tail to tip.
  • Wash and seed jalapeno, and cut into a pieces about 1/2-inch X 1/2-inch squares.
  • Cut slice of cheese into 12 small pieces.
  • Stuff one small piece of cheese and one small piece of jalapeno into each shrimp.
  • Wrap a half slice of bacon around each shrimp.
  • Place shrimp on a wet skewer.
  • Repeat this process until all shrimp have been placed on skewers.
  • Place in refrigerator for a few minutes while you prepare the rest of the recipe.
  • Mix the paparika, cayenne pepper and black pepper together.
  • In a small skillet, heat butter and white wine until butter is completely melted.
  • Prepare grill.
  • ~note~I use my indoor grill, but these can be made on an outdoor grill too, but I would use a low flame!
  • Remove shrimp from fridge and brush completely with melted butter.
  • Sprinkle with seasonings.
  • Grill on each side until shrimp are done.

1 French bread (Baguette)
8 ounces grape tomatoes
3 garlic cloves (about 2 tbls.)
1 (4 ounce) can of sliced black olives
8 ounces butter
1 teaspoon garlic powder
2 pinches white pepper, to taste
1 -2 tablespoon cayenne pepper, to taste
3 ounces olive oil
2 tablespoons finely chopped cilantro
1 teaspoon fresh oregano or 1 teaspoon dried oregano
1 teaspoon fresh basil or 1 teaspoon dried basil
1 teaspoon fresh parsley or 1 teaspoon dried parsley
1 shallot
5 tablespoons finely chopped green onions
3 tablespoons finely chopped celery
8 ounces cream cheese
6 ounces ricotta cheese
2 ounces parmesan cheese

Steps:

  • Cut french bread into thin slices (
  • Cut tomatoes into thin slices and set aside.
  • Keeping separated finely chop shallot, green onion, celery, cilantro, parsley, basil and oregano.
  • In a pan, using 2 oz olive oil sauté until soft (3-5 min): shallot, 3 tbls green onion, celery, parsley, basil,1 1/2 tbls cilantro, 1 tbls pressed garlic.
  • In a bowl mix together all cheeses (may have to microwave cheese 30 sec), cooled down sautéed ingredients from pan, garlic powder white pepper and cayenne pepper, best if refrigerated a few hours before spreading.
  • Put butter remaining olive oil and remaining garlic in a cup and melt down in a microwave.
  • Spread sliced bread on large cookie sheet.
  • Stir butter and generously brush it on one side of each piece of bread.
  • Put bread in broiler until lightly toasted.
  • Spread cheese mixture on cooled down bread.
  • Place sliced olives (2-3) on each piece.
  • Top with 2 or 3 slices of tomato.
  • Mix remaining cilantro and green onion and sprinkle over each slice.
  • You may have to chop some more cilantro and green onion for this.
  • Remember cilantro has a very powerful taste so use sparingly.
  • You can serve cold or put in oven at 350 for 5-8 minutes not allowing cheese to run.

Steps:
