ITALIAN SAUSAGE PASTA SKILLET

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
- Mix together the ricotta and lemon zest in a small bowl and season with salt and pepper; set aside.
- Meanwhile, heat the olive oil in a large cast-iron skillet over medium-high heat. Tear the sausage into 1- to 2-inch chunks and place in the skillet. Cook for 60 to 90 seconds, then flip and cook for an additional minute. Add the oregano, crushed red pepper, garlic and onion and cook, stirring occasionally, until the sausage is cooked through, about 4 minutes. Stir in the broccolini and jarred peppers. Using a ladle, remove 2/3 cup cooking water from the pasta pot and add to the skillet. Cook until the sauce is thickened and the broccolini is softened, about 3 minutes.
- Drain the pasta once cooked.
- Remove the skillet from the heat and stir in the pasta, lemon juice, yellow tomatoes and Parmesan. Dollop on the ricotta mixture; tear the basil leaves into large pieces and sprinkle them over the skillet. Serve the bread alongside the pasta, whole or torn into large chunks.
SPICY SAUSAGE AND VEGETABLE SKILLET PASTA
Inspired by Iowa Girl Eat's Spicy Sausage Pasta, this is slightly spicier, with added vegetables and some nutritional yeast. Flexible and vary according to what you have on hand. Delicious comfort food at its best! Tastes even better as leftovers. I use whatever sausage I have on hand-family loved it with chicken Andouille sausage, spicy Cajun, etc.

Steps:
- Heat oil in your largest saute pan or a stock pan until shimmering. Add zucchini and onions, saute over medium-high until softened.
- Add garlic and sausage. Cook until slightly curled, about 3-4 minutes being careful not to overcook it.
- Turn heat up to high and add Rotel, 3 C chicken broth, half & half, and pepper flakes. Bring to a boil and add pasta, add additional cup of chicken broth if needed. Stir to combine and place lid on pot.
- Simmer for 10 minutes or until pasta is al dente, stirring a couple of times. Add spinach, nutritional yeast, and cheese, stir to combine and cook for 1-2 minutes.
- Serve immediately with a sprinkle of Parmesan cheese.

- In a large skillet, cook sausage over medium heat, until no longer pink; drain. Set the sausage aside and keep warm. , In another skillet, heat 2 tablespoons of oil; saute red chilies for 5-8 minutes or until they turn black. Discard chilies; cool oil slightly. Add the tomatoes, garlic, oregano, salt and pepper; simmer for 15 minutes. Stir in red peppers and sausage; heat through. , Toss spaghetti with remaining oil. Add tomato sauce; toss to coat. Sprinkle with parsley and Parmesan cheese.

- Bring a pot of heavily salted water to a boil and cook the penne until al dente. Scoop out 1/4 cup of cooking water and then drain the noodles. Return the noodles to the pot and toss with 1 tablespoon olive oil. Heat the remaining tablespoon of oil in a wok or large skillet over medium-high heat until shimmering. Add the sausage and cook until some fat begins to render and the sausage begins to turn golden, 3 to 5 minutes. Using a slotted spoon, transfer the sausage to the pot of noodles. Give the the fat in the skillet in a minute or so to get smoking hot again, then add the vegetable mix and a sprinkle of salt and pepper. Sauté the vegetables until tender. Pour the noodles and sausage into the hot skillet with the vegetables, followed by the mustard and heavy cream. Bring the liquid to a boil and cook until the cream has thickened. Taste and adjust seasonings. For leftovers, stir in the reserved cooking water and reheat in a skillet or microwave until warmed through. Recipe Notes A mix of fresh vegetables can easily be substituted.
SPICY SAUSAGE PASTA
The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. And of course, they need to knock-my-socks-off with flavor as well! I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

- Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.
- Add the broccoli, red pepper flakes, salt, and pepper and stir to combine.
- Add the pasta and chicken stock and bring to a boil. Cook for 10-12 minutes, stirring constantly, until the liquid is absorbed and the pasta is tender. Add the Parmesan and stir to incorporate.
- Divide the pasta between serving bowls and garnish with more Parmesan.

- In a very large skillet, over medium high heat, cook and crumble the sausage. (My sausage did not leave a great deal of grease in the skillet after it was cooked. If there is more than a tablespoon or two, drain the excess before adding the vegetables to start cooking.) Heat a pot of water to boiling and cook the pasta at the same time as the sausage. When the pasta is tender, drain well and set aside.
- Add the onion to the cooked sausage, stir and cook for a few minutes. Add the pepper, stir and continue cooking. After a minute or two, add the mushrooms and broccoli, stir and cook a few more minutes.
- Reduce heat to medium and add the tomatoes, cook about 2 minutes, just until warm and then add the beans and the basil. Stir and cook just a minute or two more until warmed through. Remove from the heat and add the cooked pasta. Toss to combine and taste to see if the dish needs any salt or pepper. Provided your sausage was spicy enough, you shouldn't need to add a thing. Enjoy!
