This is not your typical meat loaf! The green chili salsa really gives it some zip, and the pork sausage combined with the beef adds variety. Meat loaves of all kinds are a favorite around here.

2 eggs
1/2 cup green or red chili salsa
1 cup seasoned bread crumbs
2 pounds ground beef
1/2 pound bulk pork sausage
Additional salsa, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, salsa and bread crumbs. Crumble beef and sausage over mixture and mix well. Press into an ungreased 9x5-in. loaf pan. , Bake, uncovered, 1 hour or until no pink remains and a thermometer reads 160°; drain. Top with additional salsa if desired.

2 pounds lean ground beef
1 jar salsa (15 ounces, choose your heat)
1 white onion (diced, medium-sized)
1 cup bread crumbs
1 egg (beaten)
1 teaspoon salt
1/2 teaspoon cayenne pepper
Guacamole (on the side)

Steps:

  • Preheat oven to 350° Fahrenheit
  • Combine all ingredients into a large bowl and mix thoroughly.
  • Move the mix into a meatloaf pan and spread evenly throughout the pan.
  • Place the pan into the oven and bake the meatloaf approximately one hour (until the top has turned brown).
  • Pull from oven and let the meatloaf rest for 5 minutes prior to cutting.
  • Serve with guacamole on the side.

2 lb. lean ground beef
1 cup plain dry bread crumbs
3/4 cup A.1. Bold & Spicy Sauce, divided
2 eggs
1 red pepper, chopped, divided
1 can (6 oz.) pitted black olives, drained, chopped and divided
1 can (11 oz.) whole kernel corn, drained
4 green onions, sliced

Steps:

  • Heat oven to 375°F.
  • Mix meat, bread crumbs, 1/2 cup steak sauce, eggs and half each of the peppers and olives until blended. Shape into loaf in foil-lined 13x9-inch pan.
  • Bake 1 hour and 10 min. or until done (160°F). Let stand 10 min.
  • Meanwhile, mix corn, onions and remaining steak sauce, peppers and olives until blended. Serve spooned over meatloaf.

1 cup Old El Paso™ Thick 'n Chunky salsa
2 eggs
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 lb extra lean (at least 90%) ground beef
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In large bowl, stir together cereal and 1 cup salsa (mixture will be thick). Let stand 5 minutes.
  • Add eggs, chili powder, cumin, salt and pepper to cereal mixture; stir until blended. Add ground beef; stir until well mixed. Press evenly in ungreased 9x5-inch glass loaf dish.
  • Bake uncovered 1 hour 5 minutes to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cover; let stand 5 to 10 minutes. Drain and discard liquid before slicing. Serve with 1/2 cup salsa.

2 tablespoons unsalted butter
1 cup finely chopped onion
½ cup finely chopped green onions
1 carrot, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
⅔ cup ketchup, divided
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ pounds ground beef
¾ pound spicy ground pork sausage
1 cup bread crumbs
⅓ cup minced fresh parsley
2 large eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
  • Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.

1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread (broken or chopped finely)
1 egg
1 small vidalia onions or 1 small type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half
4 tablespoons apple cider vinegar
2 -4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
  • Smooth out top.
  • Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
  • Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.
  • ENJOY!
  • *The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
  • **Recipe should be"plump" from the addition of the milk or Half & Half.
  • It should NOT be runny.
  • ***A second batch of sauce served hot is good to serve with the meatloaf.
  • Nita's Note: I note that some of you are using game meat such as deer -- Deer is a very DRY meat. It is wise to HAVE some fat added to the deer -- especially to ground deer. Maybe 25 % fat, ( I recommend 1 lb of ground venison, and 1/2 lb of deer sausage for fat content), otherwise your results will be poor. I don't know about some of the other game meat some are using. I first had this at a church supper. It was delicious and asked for the recipe. I was amazed to see that there were not many ingredients in it. I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very,very tasty!

1 lb hamburger
1 cup fresh homemade breadcrumbs
1/2 cup milk
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup catsup
1/2 cup brown sugar
1/2 teaspoon dry mustard

Steps:

  • Mix the hamburg, bread crumbs, milk, onion, salt, and pepper together.
  • Make into a loaf and place in a 9x13 pan.
  • Set the oven for 350 degrees.
  • SAUCE: Mix the catsup, brown sugar, and dry mustard together.
  • Put half of the sauce on the meatloaf and bake for 20 minutes.
  • Get rid of any grease.
  • Put the rest of the sauce on and bake for another 25 minutes (total of 45 minutes).
  • Let sit for about 10 minutes.

  • Shape meat into a loaf and place on a pan. Bake at 350 degrees for 55-60 minutes, until internal temperatures registers 160°F Sprinkle meatloaf with shredded cheese and bake 5 minutes more until cheese melts. Place onto serving platter, cover with foil, and let stand 15 minutes before slicing.

2 slices whole-grain sandwich bread, torn into pieces
1/2 small onion, quartered
1 medium carrot, quartered
1/2 pound 93 percent lean ground turkey
1/2 pound 90 percent lean ground beef
1 large egg
1/2 teaspoon plus 1/8 teaspoon curry powder
Kosher salt and freshly ground pepper
1 tablespoon ketchup
1 tablespoon peach chutney or apricot jam
2 medium red-skinned potatoes, sliced 1/4 inch thick
1 head broccoli (florets cut into pieces, stem peeled and thinly sliced)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper.
