Pecan Pie - (Silver Palate) Recipe - (4/5) image

Number Of Ingredients 9

4 eggs
1 cup dark brown sugar
3/4 cup light corn syrup
1/2 tsp salt
1/4 cup melted sweet butter (1/2 stick)
1 tsp vanilla extract
2 cups shelled pecans, chopped
9 inch unbaked piecrust
1/3 cup shelled pecan halves

Steps:

  • 1. Preheat oven to 400 degrees. Iine a 9 inch pie pan with the pastry. 2. Beat eggs well in a large bowl. Add brown sugar, corn syrup, salt, melted butter and vanilla and mix thoroughly. 3. Sprinkle chopped pecans in pastry lined pan. Pour egg mixture over pecans. Arrange pecan halves around edge of filling next to crust for decoration. 4. Set on the middle rack of the oven and bake for 10 minutes. reduce heat to 325 degrees and bake for 25-30 minutes longer, or until set. 5. Remove from oven and let cool to room temperature before serving.

3/4 heavy cream
3/4 half-and-half
1/2 recipe piecrust (see below)

Steps:

  • 1. Preheat over to 450 degrees F. 2. Beat eggs and both sugars together until light. Stir in pumpkin puree, spices and salt and mix thoroughly. Stir in cream and half and half. 3. Roll out pastry on a lightly floured work surface, and line a 9 inch pie pan with it; trim and crimp edges. Pour in the filing. 4. Bake the pie at 450 degrees F for 8 minutes, then reduce heat to 325 degrees F and bake another 40-45 minutes, or until filing is set (a knife inserted in the center will come out clean.) 4. Cool completely before cutting. Serve with whipped cream.

4 tablespoons apple juice up to 6 tb
2/3 cup Sour cream
1/3 cup Sugar
1 Egg lightly beaten
1/4 teaspoon Salt
1 teaspoon Vanilla extract
3 tablespoons All-purpose flour
5 tart apples peeled and sliced, up to 6
3 tablespoons Brown sugar
3 tablespoons Sugar
1 teaspoon Ground cinnamon
1 cup Walnuts chopped

Steps:

  • DIRECTIONS: 1. Prepare crust: Sift flour, sugar, salt and cinnamon into abowl. Cut in the butter and shortening with a fork until the mixture resemblescoarse meal. Moisten with just enough apple juice, tossing ingredients lightly with a fork. Form dough into a ball. Wrap and refrigerate for 2 hours. 2. Cut off 1/3 of the dough and return it to the refrigerator. Roll out the other2/3 between 2 sheets of wax paper. Line a greased 9-inch pie pan with the dough.Trim overhang and crimp decoratively. Preheat oven to 350 F. 3. Whisk all filling ingredients, except apples, in a bowl. Add apples, then spoon into thepastry-lined pie pan. Combine topping ingredients and sprinkle over filling. 4. Roll out the remaining dough between wax paper to form a circle 10 inchesin diameter. Cut into strips 1/2-inch wide and arrange lattice-fashion over apples; trim ends of strips and crimp edges decoratively. 5. Bake pie inthe center of the oven until the juices are bubbling and the apples are tender,about 55-60 minutes. (Cover loosely with foil if the crust browns too quickly.) Serve warm or cooled.
