If you love Spam® like my family does, then this is a recipe for you! Super quick and easy. Put on a bed of rice and you've got yourself a meal. My mom made this when I was a kid and I still make it today.

1 (13.5 ounce) can pineapple chunks, drained (juice reserved)
1 cup water
½ cup brown sugar
2 tablespoons vinegar
2 tablespoons cornstarch
2 green bell peppers, chopped
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped

Steps:

  • Combine juice from canned pineapple, water, brown sugar, vinegar, and cornstarch in a saucepan; bring to a boil and cook, stirring constantly, until sauce is thickened and you notice a change in color, about 5 minutes.
  • Stir pineapple chunks, green bell pepper, and luncheon meat into sauce and simmer until heated through, about 10 minutes.

1 (8 ounce) can pineapple tidbits, well-drained (reserve juice)
water (enough to make one cup when added to pineapple juice)
1 (1 3/4 ounce) package sweet and sour sauce mix
1 large onion, peeled and sliced
1 large green pepper, seeded and cut in 1-inch strips
1 tablespoon oil
1 (12 ounce) can Spam, cut in 1-inch strips
1 (8 ounce) can sliced water chestnuts, drained

Steps:

  • Add sweet and sour sauce mix to one cup of pineapple liquid in bowl; stir well and set aside.
  • In large skillet, saute onion and green pepper in oil over medium heat 4 minutes, stirring constantly.
  • Add spam strips and water chestnuts; cook 1 minute.
  • Add sweet and sour sauce and pineapple to skillet.
  • Bring to boil and cook for 1 minute.
