2.5 pounds red potatoes
1 can (10 ounce) can rotel
2 tablespoons butter
1 (4 ounce) can green chilis
1 (1 ounce) pack dry Ranch seasoning
1/2 cup sour cream
1 cup shredded cheddar

Steps:

  • Place potatoes in a large, deep pan and cover with water.
  • Boil potatoes about 20 minutes or until fork tender.
  • Drain water and reduce heat to medium low. Add undrained rotel, chilis, ranch, butter, and sour cream and roughly mash.
  • Top with cheese and cover, let potatoes cook for 10-15 minutes until cheese melts.

2 teaspoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker

Steps:

  • Preheat oven to 450°F.
  • Place potatoes in a 1-gallon-size Glad® Zipper Bag and add oil; seal bag. Toss to coat.
  • Add seasoning mix and toss again until coated. Bake in ungreased baking sheet for 30 to 35 minutes or until potatoes are brown and crisp.

1kg roasting potatoes (we used Maris Piper), halved, or quartered if large
½-1 tsp chilli flakes
1 tsp turmeric
1 tbsp coriander seeds
1 tbsp cumin seeds
4 tbsp vegetable oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Boil the potatoes for 5 mins. Drain well, place back in the pan, cover with a lid and shake vigorously to lightly roughen up the edges.
  • Meanwhile, grind the spices using a pestle and mortar until lightly crushed, then mix with the oil. Put the spice mix in a roasting tin and place in the oven to heat up. Carefully put the potatoes into the roasting tin, tossing them in the hot oil and spice mixture. Roast in the oven for 40-45 mins or until crisp and golden, turning once or twice during cooking.

5 pounds medium Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
1 large yellow onion
1/2 medium lemon
1/2 teaspoon salt
8 hard-boiled large eggs, chopped
1-1/2 cups mayonnaise with olive oil and coarsely ground pepper
1 cup dill pickle relish
1/4 cup yellow mustard
1 to 2 tablespoons Cajun seasoning
1/4 cup minced fresh parsley
Paprika

Steps:

  • Place potatoes in a Dutch oven; add water to cover. Cut onion in half crosswise; add one half to saucepan. Bring to a boil. Add lemon and salt to cooking water. Reduce heat; cook, uncovered, until potatoes tender, 5-6 minutes., Meanwhile, chop remaining onion. Combine with eggs, mayonnaise, dill pickle relish, mustard and Cajun seasoning., Drain potatoes; rinse under cold water. Discard onion and lemon. Add potatoes to egg mixture; gently toss until well mixed (do not overmix, or potatoes will break down). Refrigerate, covered, 1-2 hours. Just before serving, sprinkle with parsley and paprika.

8 -10 medium potatoes, peeled and cut into 1/2 inch cubes
1 can cream of mushroom soup, undiluted
1 1/4 cups milk
1 envelope ranch dressing mix
1 1/2 cups shredded cheddar cheese, divided
salt and pepper
6 slices bacon, cooked and crumbled

Steps:

  • Add the potatoes to a saucepan.
  • Add water to cover.
  • Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain.
  • Place drained potatoes into a greased 13x9 inch baking dish.
  • In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes.
  • Sprinkle crumbled bacon and the remaining cheese over the top.

1 tsp mustard seed
1 tsp turmeric
2 tsp garam masala
140g frozen pea

Steps:

  • Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

2 lbs small shrimp, peeled
2 tablespoons cajun seasoning
1/2 cup ranch dressing
1/2 cup catsup
1/4 cup creole mustard
1 tablespoon sweet paprika
1 -2 teaspoon cajun seasoning
1 teaspoon prepared horseradish
1 teaspoon dill
1 teaspoon sweet pickle relish
1 teaspoon hot sauce
1 teaspoon granulated garlic
1 tablespoon lemon zest
1 tablespoon shallot, chopped fine
1 (4 ounce) box hash browns
1/2 cup zucchini, shredded
1/2 cup carrot, shredded
1 dash salt and pepper
1/4 cup canola oil
cooking spray
1 cup red potatoes, Boiled and mashed
1/4 cup ranch dressing
1/2 cup whipping cream
1 tablespoon fresh chives, finely chopped
1/2 teaspoon garlic salt

Steps:

  • First you will need to boil shrimp in boiling water with the Cajun seasoning. You only want to boil them for a few minutes until they are pink. Remove to a colander and rinse with cold water. Set aside. Next mix all the sassy sauce ingredients together; using your judgment as to how spicy you want to be. Mix in shrimp and place in refrigerator to chill.
  • Next, put hot water in hash browns as directed. Grate zucchini and carrot in bowl together. Drain has brown potatoes and add to bowl. Sprinkle with salt and pepper and then toss all with oil. Spray a 12 hole muffin tin with cooking spray. Place a scoop of potatoes in each tin and make a hollow with back of spoon so that you have a small nest of potatoes. Bake in a 400 degree oven for about 25 minutes or until browned.
  • While nests are baking, boil red potatoes, drain and mash, Next add Ranch dressing, cream, garlic and chives. Stir together until well combined and fairly creamy. A few lumps are OK.
  • When nests are done, lift them out of tin and place on platter. Put mashed potatoes in a pastry bag or plastic storage bag and cut off tip of it. I then place a small swirl of mashed potatoes in nests and then place a helping of the shrimp on top. These really are best served while the potatoes are warm but they are pretty good cold too!
