2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder

Steps:

  • Place peanuts in a small bowl; drizzle with oil and toss to coat. Combine sugar and seasonings; sprinkle over nuts and toss to coat., Transfer to an ungreased 15x10x1-in. baking pan. Bake at 300° for 20-25 minutes or until lightly browned, stirring occasionally. , Spread on waxed paper to cool. Store in an airtight container.

1 1/2 pounds fresh roasted peanuts, shells on
1 teaspoon cayenne pepper
Kosher salt

Steps:

  • In a medium pot, cover the peanuts with water and bring to a boil.
  • Add the cayenne pepper and 1 teaspoon salt. Lower to a simmer, cover and cook at least 2 hours. Peanuts are done when the shells are easy to remove and the peanuts are creamy all the way through. Serve warm.
  • Cook's Note: Peanuts can be refrigerated in the boiling liquid for up to 3 days after cooking.

Szechuan style snack, spicy peanuts

2 cups raw peanuts
oil for frying the peanuts
5-7 dried chili pepper ( ,sliced and remove the seeds)
1 teaspoon Sichuan peppercorn ( ,whole seed)
1 teaspoon Chinese five spice powder
1 teaspoon ground Sichuan peppercorn powder
1 teaspoon sugar
1/2 teaspoon white pepper
Salt to taste ( ,recommend 1.5 teaspoon)

Steps:

  • Soak the peanuts with water overnight until you can easily remove the skins.
  • Then drain the peanuts slightly and rub the peanuts with both hands forcefully. The skins will be separated. Then peal the remaining skins.
  • Transfer the peanuts into an air-tight bag and freeze for 3-4 hours or overnight.
  • Place peanuts into a pan and add enough oil to cover. Heat over medium fire until the peanuts start to sizzle and floating on the surface. Transfer out and drain off the oil.
  • Re-add around 1/2 tablespoon of oil and fry Sichuan peppercorn and chili pepper shreds until aromatic. Place the peanuts in. Mix with salt, sugar, five spice powder, Sichuan pepper, salt and white pepper.
  • Transfer them to an air-tight container, covered and store for 2-3 days until the mala flavor is well absorbed.

These spicy peanuts are packing a hint of sweetness and a bit of tangy lime zest.

1 tablespoon sugar
2 to 3 teaspoons chipotle powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon freshly grated lime zest
1/4 teaspoon granulated garlic
Kosher salt
Vegetable or canola oil, for the baking sheet
1 large egg white
4 cups unsalted raw peanuts

Steps:

  • For the chipotle spice blend: Mix together the sugar, chipotle powder, coriander, cumin, lime zest, granulated garlic and 1 1/2 teaspoons salt in a small bowl and set aside.
  • For the nuts: Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
  • Put the egg white in a large bowl and whisk until frothy. Add the peanuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.

SPICY PEANUT SAUCE



Spicy Peanut Sauce image

One of the best recipes for peanut sauce I have tried! This goes great with grilled meats, especially on grilled chicken skewers, on noodles, even used as a salad dressing for spinach salad!. You won't be able to keep your spoon out of the jar, it is that good LOL! This peanut sauce is of a thinner consistency, if you want a thicker sauce, then add in more peanut butter and reduce the water just slightly. This can be made up to 3 days in advance. Kikkoman Thai-Style chili sauce can be found in any Asian section of major grocery stores, I purchase mine at Safeway stores in the Asian section, but you can use any brand of Thai chili sauce for this. You can use about 1/2 - 1 teaspoon (or to taste) red pepper flakes in place of the chili sauce. This recipe may be cut in half to make 2 cups.

Steps:

  • In a saucepan heat oil over medium heat and sauté the scallions, garlic and ginger (about 1 minute).
  • Add/stir in the remaining ingredients and bring to a simmer, stirring.
  • Simmer the sauce until smooth, then cool to room temperature.
  • *NOTE* If you are refrigerating the sauce, and you find that the sauce is too thick after chilling, stir in a couple of tablespoons of hot water and stir until combined, adding more hot water until the sauce is of the right consistency.
  • This sauce is best served at room temperature.

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. In a medium bowl, whisk egg white until frothy. Then whisk in sugar and seasonings (if you only have garlic salt, add only 1/4 tsp (1 mL) salt) until blended. Add peanuts and stir to coat.

4 teaspoons Worcestershire sauce
1 tablespoon liquid smoke
2 tablespoons butter
2 teaspoons white vinegar
2 teaspoons hot pepper sauce
3/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Line a large baking sheet with foil.
  • In a bowl, toss together the peanuts, Worcestershire sauce and liquid smoke.
  • Let stand at room temperature for 30 minutes, stirring now and then.
  • Preheat the oven to 325^F.
  • Have the oven rack positioned in the center of the oven.
  • In a large heavy skillet, melt the butter over medium low heat.
  • Cool a little then add the vinegar, hot pepper sauce, salt, and cayenne pepper.
  • Return the skillet to the heat and add the peanuts and marinade.
  • Stir to coat evenly, about 30 seconds.
  • Spread the peanuts on the baking sheet and bake until deep golden brown, stirring now and then, for about 20 minutes.
  • Cool on a rack uncovered for at least 6 hours to dry.
  • Store at room temperature in an air tight container.

2 cups husked shelled raw Spanish peanuts (about 10 ounces)
4 teaspoons Worcestershire sauce
1 tablespoon liquid smoke flavoring*
2 tablespoons (1/4 stick) butter
2 teaspoons distilled white vinegar
2 teaspoons hot pepper sauce (such as Tabasco)
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
*A smoke-flavored liquid seasoning available at specialty food stores and at many supermarkets.

Steps:

  • Line jelly roll pan with foil. Toss peanuts, Worcestershire sauce and liquid smoke in pan. Let marinate at room temperature, stirring occasionally, about 30 minutes.
  • Position rack in center of oven and preheat to 325°F. Melt butter in heavy large skillet over medium-low heat. Cool slightly. Stir in vinegar, hot pepper sauce, salt and cayenne. Return skillet to heat. Scrape in nuts and marinade. Stir to coat nuts about 30 seconds. Return nut mixture to jelly roll pan. Bake until deep golden brown, stirring occasionally, about 20 minutes. Transfer pan to rack and cool. Let stand uncovered 6 hours to dry. (Can be made 1 week ahead. Store nuts in airtight container at room temperature.)
