SPICY HERB BAKED WINGS

Spicy Herb Baked Wings image

Provided by Sunny Anderson

Categories     appetizer

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 9

Extra-virgin olive oil, for frying
3 sprigs fresh rosemary
12 fresh sage leaves
1 tablespoon whole cumin seeds
1 tablespoon red pepper flakes
1/2 tablespoon whole black peppercorns
1 tablespoon garlic powder
Kosher salt
3 pounds chicken wings, whole or separated as you like

Steps:

  • Prep the rub: Pour about an inch of olive oil into a small pan over medium heat. When the oil begins to shimmer, add the rosemary and cook, turning the sprigs, until the leaves darken and become crispy, about 2 minutes. Transfer to a paper towel-lined plate. Add the sage to the same pan and cook until the leaves darken, slightly curl and stop sizzling, 30 seconds to 1 minute. Transfer to a paper towel-lined plate.
  • In a dry medium pan over low heat, combine the cumin, red pepper flakes, peppercorns and garlic powder. Toast the spices, tossing constantly to avoid burning, until fragrant, about 5 minutes. Remove from the heat and allow to cool completely.
  • Remove the rosemary leaves from their stems, then put the herbs and spices in a spice grinder and pulse until finely chopped and combined. Remove and add 1 tablespoon salt.
  • Prep the wings: Massage the wings with the herb rub and place them on a wire rack set inside a baking sheet. Let the rub set at room temperature, about 30 minutes. While the wings rest, preheat the oven to 400˚.
  • Bake the wings: Transfer the baking sheet with the rack and wings to the oven and bake until the wings are crispy, flipping halfway through, 40 to 50 minutes. Serve warm.

SPICY OVEN BAKED CHICKEN WINGS

Spicy Oven Baked Chicken Wings image

These oven baked chicken wings come out super crispy and spicy without the need for deep frying or an additional sauce that makes them wet and messy to eat. A definite crowd pleaser as an appetizer, or a filling comfort meal at the end of a long day.

Categories     Appetizer     Main Course

Time 50m

Number Of Ingredients 15

10 - 12 chicken wings (drums and flats separated)
1 tablespoon all-purpose flour
1/8 teaspoon ginger powder
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon ground coriander
1/8 teaspoon basil
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon hot-Mexican chili powder
1/4 teaspoon crushed red pepper (heaping)
1/2 teaspoon smoked paprika
1 teaspoon cayenne
1 tablespoon butter (divided)

Steps:

  • Pre-heat your oven to 425°F / 220°C and line a baking sheet with parchment paper.
  • Take the flour and all the seasonings and spices and combine them in a gallon-sized zipper lock bag. Shake or mix until it resembles a rust-colored flour. (Check the notes for more information about the measurements of all these ingredients)
  • Hold the bag upright so that all the seasoning falls to the bottom of the bag. Lay the bag flat and place the chicken wings just inside the bag and seal it closed. Reopen a small portion and blow some air inside, then seal again. Lift the bag and shake until it appears all the wings are fully coated.
  • Using tongs, remove the wings from the bag and arrange them on the baking sheet. Break the butter into 4 or more small pieces and drop in a zigzag pattern over the chicken wings.
  • Bake for 30 minutes, take the wings out and flip them over. Continue baking for another 15 minutes or until done. Allow to rest for a few minutes and they should be nice and crisp. Serve with your favorite dip and veggies and enjoy!

CHICKEN WINGS COATED, SPICY HOT AND SO GOOD

Chicken Wings Coated, Spicy Hot and so Good image

I have been trying out many chicken wing recipes and finally came up with a recipe that is easy to make, quick to cook and has a nice crunchy coating and it tastes so good.

Provided by William Uncle Bill

Categories     Chicken

Time 27m

Yield 3-4 serving(s)

Number Of Ingredients 13

12 chicken mid-joint wings
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
3/4 cup panko breadcrumbs
2 large eggs
3 tablespoons whole milk, homogenized
1/3 cup butter, melted
2 tablespoons sriracha hot chili sauce, See Note
1/8 teaspoon black pepper
1/2 teaspoon granulated garlic powder
1 -2 cup canola oil or 1 -2 cup extra virgin olive oil

Steps:

  • Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
  • Rinse wings in cold water, pat dry with paper towels and set aside.
  • In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
  • Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
  • In a mixing bowl add Panko bread crumbs.
  • In another bowl, whisk together eggs and milk until frothy.
  • Remove chicken from the refrigerator and shake off any excess flour coating.
  • Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
  • In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
  • Place chicken in the pan with the main meat side up and fry for 6 minutes.
  • Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
  • Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
  • Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
  • In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
  • Pour the hot sauce over the chicken wings and toss to coat well.
  • Serve immediately or while they are still hot.
  • You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
  • NOTE: You may also use the following choices of hot sauces.
  • 1 tablespoon of Red Hot Sauce - wings will be medium hot.
  • 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
  • 2 teaspoons of Sambal Oelek - wings will be very hot.
