- In small bowl, combine honey with juice concentrate, orange zest, garlic, salt and red pepper flakes.
- Rinse chicken with cold water and pat dry. Season lightly with salt.
- In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared.
- Turn chicken, cook another 4 minutes until just cooked through.
- Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 min.
- Serve chicken breasts with honey-orange glaze spooned over the top.

- Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
- Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
- Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

- Whisk orange juice, brown sugar, rice vinegar, fish sauce, soy sauce, ginger, and crushed red pepper flakes in a large bowl.
- Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
- Remove chicken from refrigerator and drain thoroughly in colander, reserving marinade.
- Heat a large non-stick skillet over high heat. Cook and stir chicken for 2 minutes; spoon out any excess liquid.
- Continue to cook and stir until chicken caramelizes, 6 to 7 minutes.
- Stir in white portions of green onions, garlic, and orange zest; cook and stir 2 to 3 minutes.
- Pour in half of reserved marinade. Simmer until reduced and thickened, 3 to 4 minutes.
- Stir in jalapeno pepper, bell pepper, and sugar snap peas; cook and stir until vegetables are warmed, about 2 minutes.
- Stir in green portions of green onions; cook and stir 1 minute.

- Spicy Orange Glaze: Place all ingredients in a medium saucepan and bring to a boil on the grill. Cook until reduced to 1 cup. Set 1/4 cup aside.
- Chicken: Whisk together the oil, garlic and rosemary in a large baking dish. Add the chicken and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight. Preheat grill to medium-high. Remove chicken from marinade and season with salt and pepper to taste. Grill skin side-down until golden brown, about 4 to 5 minutes. - Juice one fennel bulb by either a) placing in a juicer, or b) placing in blender, then straining blender contents; discarding solids.
- Cut each of the other two fennel bulbs into six pieces.
- Lightly sautee garlic and ginger in olive oil, until translucent.
- Add the cut fennel, white wine, and the fennel juice. Cook fennel until soft.
- Season fennel with salt and pepper.
- As fennel cooks, season the fish and place on grill (or grill pan). Cook about 3 to 4 minutes on each side.

SPICY ORANGE-GLAZED SCALLOPS

- Cook shallots and zest in 2 tablespoons olive oil over medium-high heat until they begin to brown. Add orange juice, broth, wine and habanero slices. Cook over high heat to reduce. Taste often and remove and discard habaneros when desired heat is achieved. When habaneros are removed, add the liqueur.
- Brush scallops with olive oil and season with salt and pepper. Sear scallops on a grill pan to a slightly under-cooked state, about 3 1/2 minutes per side but watch them closely. Remove from grill pan and add scallops to the thickened orange glaze, tossing to coat well until scallops are cooked to desired doneness.
- Smear a clean plate with orange glaze top with 3 scallops. Drizzle scallops with more glaze and garnish with chives and orange slice.
SPICY MARMALADE GLAZED CHICKEN
Sweet. Spicy. Good. From About.com recipe section. I have changed a few things. The amounts for the marinade are doubled from the original, because it called for the chicken to be marinated and then after marinating the raw chicken in it, they called for you to use it again. Which grosses me out because of the bacteria, even though it called for you to boil it! So, I make double the marinade and use the second half to serve with the cooked chicken. Prep time includes the cooling and marinating time.

- In a small saucepan, combine the marmalade, vinaigrette, salsa, salt, pepper, and garlic powder.
- Heat the mixture, simmering, until the marmalade has melted.
- Set aside to cool completely.
- Divide the marmalade in half.
- Place the chicken in a food storage bag. If desired, pound gently with a mallet or heel of hand to even thickness. Add one half of the cooled marinade mixture, seal the bag, and refrigerate for at least 2 hours.
- Take chicken from the marinade and discard the USED marinade.
- Pour the second half of the marinade into a saucepan.
- Bring marinade to a boil; reduce heat to low and simmer for 5 minutes.
- Grill chicken for about 5 to 6 minutes on each side, or until chicken is cooked through. Serve chicken with hot reserved marinade.

- Preheat oven to 350 degrees F. Place chicken in large zip lock bag.
- In small bowl, mix orange marmelade, teriyaki sauce, and crushed red pepper together. Pour over chicken, coat well.
- Place chicken in single layer on large metal pan (a cookie sheet works fine). Bake at 350 degrees for approximately 30 minutes or until juice runs clear. Sprinkle with salt and pepper if desired.

- Cook one 19 oz package of Gorton's Crunchy Breaded Fish as directed on the package.
- In a one quart sauce pan, add one cup of Sweet Orange Marmalade and place on medium heat for 5 minutes. For purposes of this recipe, I used SMUCKER'S, however, you can use your favorite Sweet Orange Marmalade for this sauce.
- After the marmalade's consistency has reduced to a sauce, and one tablespoon of Sriracha Hot Chili Sauce to the marmalade. Stir thoroughly with a small fork or whisk. Cook for an additional 5 minutes and remove from the heat.
- Once the the 16 oz package of Gorton's Crunchy Breaded Fish is completely cooked, glaze each fish using a spoon or silicone basting brush.
- If you have not already done so, gently remove the leaves from the Boston bibb lettuce and clean them thoroughly. Take two of the lettuce leaves and top them with one Spicy Orange glazed fish fillet. Garnish with 3-4 sliced green onions slices and a couple of red Fresno peppers slices. Repeat the steps with the remaining ingredients. I hope that you enjoy this recipe as much as I do!

- Preheat oven to 180°C (350°F). Place the cinnamon, star-anise, juice, sugar, pomegranate molasses and honey in a medium saucepan over medium heat and bring to the boil, stirring to dissolve the sugar. Cook for 4-6 minutes or until syrupy.

- 1. Rub each chop with 1/4 teaspoon oil and sprinkle with salt, pepper, and cumin. Sprinkle one side of each chop with 1/8 teaspoon sugar.
