SPICY EGGPLANT WITH GROUND PORK
This is a wonderful recipe from another recipe site. I have modified it to reflect our taste. It is easy and very delicious. Serve over steamed rice or tossed with cooked rice noodles.Only use Japanese eggplants because they hold their color better than Chinese eggplants, but both are delicious.

Steps:
- Mix broth, lime juice, soy sauce, and Sricacha sauce in a measuring cup.
- Cut eggplant in half lengthwise batons(long thin rectangular pieces)about 1/2 inch thick and 3 inches long.
- Cook pork in a 12 inch frying pan over high heat, stirring to break up clumps until lightly browned, about 4-6 minutes.
- Add about 2 tablespoons of broth mixture nd stir until liquid evaporates, about 1 minute.
- Transfer mixture to a bowl and wipe out pan.
- Return pan to high heat and add 2 tablespoons oil.
- When hot add eggplant and cook, stirring occassionally until it starts to brown, 3 minutes.
- Add shallots, remaining 1 tablespoon oil and 1/4 cup water and continue to stir fry until eggplant is browned and tender and shallots carmelized, about 7-9 minutes, add a little more water if pan juices darken too much.
- Pour in remaining broth mixture and pork and stir until most of liquid is absorbed 1-2 minutes.

SPICY MINCED PORK WITH EGG PLANTS
This dish is inspired by Thai, Chinese and Indonesian cuisine. If you like pork and egg plant, you may want to try this easy-to-make dish :)

Steps:
- 1. Heat up the oil in medium high.
- 2. Crush and sautee the garlic for few minutes until fragrance and soft.
- 3. Mix in the pork and cook it until it's almost done.
- 4. Pour in the egg plants that are cut into cubes, squeeze in half of the lime, salt and pepper.
- 5. After few minutes until egg plants soften, mix well the sweet soy sauce (I use Indonesian sweet soy sauce), shrimp paste chilli, oyster sauce and fish sauce.
- 6. Pour in the water and let it cook for few minutes covered.
- 7. Squeeze in the other half of the lime and mix in basil leaves until all well incorporated.

PORK AND EGGPLANT IN HOT GARLIC SAUCE
Asian stir-fry. This is based on one of my favorite dishes at my favorite Chinese restaurant. Feel free to adjust seasonings to your personal preference. We like ours spicy and usually use more of the ginger, garlic and chiles.

Steps:
- Peel eggplant and slice into pieces approximately 1x2 inches and 1/4 inch thick. If using Asian eggplants, peel and slice into 1/4 slices.
- Heat the vegetable oil in a non-stick wok or large skillet. Stir-fry eggplant strips until soft, drain, leaving oil in pan. Set eggplant aside.
- Toss garlic and ginger in the hot oil. As soon as it turns fragrant add the pork and toss until just cooked through.
- Add eggplant back to pan, stir to combine pork and eggplant.
- Add remaining ingredients (except garnishes) and stir. Turn off heat and let mixture sit for a couple of minutes to blend flavors.
- Plate the eggplant and sprinkle with garnishes.

SPICY MINCED PORK
I got a bag of Organic pork mince and was trying to think of how to use it, I looked at the ingredients list and used what I had on hand. It turned out very tasty and I intend on cooking it again. I like HOT food and this is hot you can add less chil=li if you don't like too much heat.

Steps:
- Heat 2 tbsp oil in a large frying pan sauté the onions,peppers and chilies when softened add the garlic and remove from the pan and set aside.
- Add the remaining 1 tbsp oil and brown the mince in small batches avoiding the "stewing" effect.
- Place the browned mince on top of the reserved vegetables (keeps all the juices).
- Deglaze the pan with vinegar add the vegetables and pork and stir to mix.
- Add the oyster sauce and stir to heat.
- Serve on boiled white rice.

- Pour some hot water over the dried cuttlefish to soften it. Then remove the transparent bone that runs down the centre, the hard beak (mouth) and the eyes from the dried cuttlefish.
- In a wok, heat up 6 TBsp of oil over medium heat. Once the oil bubbles, add in the chopped garlic. Fry until light golden, then turn off the heat. The oil should continue to cook the garlic until it turns golden. You need to control the heat well so it won't get burnt (see Tip 6).
- In a wok, add in 300 ml of oil over medium high heat. Once heated, shake off the excess flour from the eggplant and deep fry it until the colour starts to change. Remove and transfer to a plate lined with a paper kitchen towel to drain the excess oil. Transfer the oil to a bowl, and clean the wok with a kitchen towel.

- Remove the ends of Asian eggplants and then cut into small cubes (for the best flavor, try to cut each cubes with some skin). Transfer them into a large pot filled with water, add pinch of salt and soak for 10 minutes. Add a weight if necessary to make sure the eggplants is well soaked. Set aside to drain completely.
- Marinate minced pork with minced ginger, a small pinch of salt and Chinese cooking wine. Set aside.
- Heat 2 tablespoons of oil in wok and fry the eggplants for 6-9 minutes until the eggplants become soft and withered. Transfer eggplants out and leave the oil in.
