1 lb bulk pork chorizo sausage
1 medium onion, finely chopped (1/2 cup)
1 can (14.5 oz) organic diced tomatoes with garlic and onion, undrained
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
5 cups uncooked dumpling egg noodles or wide egg noodles (8 oz)
1/2 cup water

Steps:

  • In 12-inch nonstick skillet, cook chorizo and onion over medium-high heat 8 to 10 minutes, stirring frequently, until chorizo is no longer pink and onion is tender.
  • Stir in remaining ingredients. Increase heat to high; heat to boiling. Reduce heat to medium; cover and cook 10 to 15 minutes, stirring occasionally, until noodles are tender and mixture is desired consistency.

Spicy British chorizo gives creamy mac and cheese a delicious punch of flavour

300g macaroni pasta
150g British chorizo, cut into chunks
800ml Yeo Valley Whole Milk, or similar
1 clove garlic, whole but slightly squashed
2 shallots, peeled
A bay leaf
60g Yeo Valley Butter, or similar
60g plain flour
150g Cheddar cheese
Black pepper

Steps:

  • Cook the pasta according to the pack instructions and drain. Heat a frying pan and cook the chorizo until it's crisp. Remove from the pan with a slotted spoon onto kitchen roll to drain.
  • Heat the oven to 200°C/Fan 180°C Fan/ Gas 5. Pour the milk into a pan with the garlic, shallots and bay. Warm gently but don't boil.
  • While the milk warms, melt the butter in another saucepan. Add the flour to the pan and stir continuously with a wooden spoon to make a thick, smooth roux.
  • When the milk is hot but not boiling, strain it, then slowly add it to the roux, whisking until it comes to the boil and thickens. Bubble for 2 minutes then add half the Cheddar cheese and black pepper.
  • Mix together the sauce, pasta and chorizo and tip into an oven dish. Sprinkle the remaining Cheddar cheese over the top and cook for 25 minutes until golden.

2 cups elbow macaroni
1 tablespoon olive oil
6 ounces Mexican chorizo, casing removed
1 small red onion, diced
1/2 red bell pepper, diced
2 jalapeños, diced
2 tablespoons all-purpose flour
1 cup milk, warmed
1 cup shredded cheddar cheese
1 cup shredded jalapeño pepper jack cheese
1 cup corn kernels
1 cup canned black beans
2 teaspoons lime juice
2 tablespoons Panko

Steps:

  • Preheat oven to 375 degrees F. Lightly oil an 8×8 baking dish or coat with nonstick spray. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add chorizo and cook until dry and crisp, about 2 minutes, making sure to crumble the chorizo as it cooks. Add red onion, bell pepper and jalapeños and cook until the onions begin to soften, about 3-4 minutes. Whisk in flour until well combined. Then gradually whisk in milk and cook, whisking constantly, until incorporated, about 1-2 minutes. Whisk in cheeses until smooth, about 1-2 minutes. Remove from heat. Stir in pasta, corn, black beans and lime juice. Spread pasta mixture into the prepared baking dish. Sprinkle Panko evenly over the top. Place into oven and bake for 20-25 minutes, or until golden brown. Let cool for 10 minutes before serving.

1 lb penne pasta
3 c cherry tomatoes
2 tsp olive oil, plus drizzling
salt and pepper
1 pkg chorizo
6 Tbsp butter
1/2 c all-purpose flour
4 c milk, warm
1 tsp dry mustard
1 Tbsp hot sauce
1 Tbsp worcestershire sauce
2 c shredded monterey pepper jack
1 c sharp white cheddar
1 can(s) french fried onions

Steps:

  • 1. Heat oven to 350 degrees F.
  • 2. Cook the pasta in salted, boiling salted water until al dente. Drain in a colander.
  • 3. Add the cherry tomatoes to a sheet tray, drizzle with olive oil and season with salt and pepper. Bake for 20 minutes, until visibly plump and softened.
  • 4. Heat a large skillet over medium heat. Add 2 teaspoons of olive oil. Saute the chorizo in a saute pan until crisp. Remove. Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour, stirring for 1 minute. Whisk in the warmed milk and bring to a boil. Continue to whisk constantly. Stir while adding the mustard, hot sauce and Worcestershire. Stir in the cheese; reserving 1/2 cup for the topping. The mixture will thicken as the heat increases.
  • 5. Pour the drained pasta into the cheese sauce and mix well. Add to a 3-quart casserole dish. Add the chorizo and roasted cherry tomatoes. Top with reserved cheese and the fried onions. Bake for 35 minutes. Can be made ahead, covered and refrigerated. Bring to room temperature before baking if refrigerated.

Macaroni and chorizo is classic Spanish comfort food. While iterations abound, it typically starts by frying smoked chorizo with a little onion, adding canned or fresh tomato and maybe some oregano, then letting it simmer into a thick tomato sauce. It's often topped with cheese and baked like a mac and cheese. Instead of fresh tomatoes, this recipe uses highly concentrated tomato paste, which is made by cooking down tomatoes for ages so you don't have to. The paste fries in the chorizo's rendered drippings for a very fast, silky, smoky and spicy sauce. When shopping for this recipe, look for Spanish chorizo, a shelf-stable sausage usually found near salami and other cured meats in the grocery store. Mexican chorizo is sold fresh and is made with different chiles and spices.

1 pound orecchiette or other short pasta
1/4 cup olive oil

1/2 teaspoon red-pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook, according to package directions, until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • Meanwhile, in a large Dutch oven, heat the olive oil and chorizo over medium-high. Cook, stirring occasionally, until chorizo is crisp and brown, 2 to 3 minutes. Turn off the heat and use a slotted spoon to transfer the chorizo to a plate.
  • Return the pot to medium heat and add the tomato paste and garlic. Cook, stirring, until the tomato paste is caramelized and a shade darker, 3 to 5 minutes, covering the pan if the splattering is wild. Add the red-pepper flakes and a few grinds of black pepper, then remove from heat.
  • Add the cooked pasta and 1/2 cup of the reserved pasta water to the tomato mixture. Return the pot to the medium-high heat, and stir vigorously until the pasta is well coated. Add more pasta water until the sauce is glossy. Stir in the chorizo and season to taste with salt and pepper.

1 (28-ounce) can plum tomatoes, juice discarded and tomatoes chopped and drained well
1 pound elbow macaroni

1/4 cup fresh bread crumbs
1/4 cup freshly grated Parmesan (about 1/4 pound)

Steps:

  • In a large heavy saucepan cook the onion, the garlic, the jalapenos, or chipotle in butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking constantly, and bring the liquid to a boil. Stir in the tomatoes. Simmer the mixture for 2 minutes. Add salt and pepper, to taste.
  • In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture. Stir in the Monterey Jack and the cheddar and transfer the mixture to a buttered 15 by 10-inch shallow baking dish or 3-quart gratin dish. In a bowl stir together the bread crumbs and the Parmesan, sprinkle the mixture evenly over the macaroni mixture. Bake the macaroni and cheese in the middle of a preheated 375 degree F oven for 20 to 25 minutes or until it is golden and bubbly.

This recipe came from what my mom referred to as the 'spice' cookbook. I grew up with it and am happy to share it. It's pretty simple to make. Make a roux, add to pasta. It is a favorite at potlucks but can be altered for smaller groups. You can make it as spicy as you like. I usually make a SPICY half and a not so spicy half.

1 lb sharp cheddar cheese
1 lb monterey jack pepper cheese
9 tablespoons butter
8 tablespoons flour
2 teaspoons dry vegetarian chicken base (tastes better)
1 teaspoon onion powder

4 teaspoons Season-All salt
1/2 teaspoon dry mustard
1 dash cayenne (as much as you want)
1 dash nutmeg
4 cups milk
2 (8 ounce) packages macaroni
1 dash sweet paprika

Steps:

  • Grate cheese and set aside.
  • Cook macaroni following directions on package and set aside.
  • For the roux Melt butter, remove from heat.
  • Mix flour, seasoned stock base and seasonings.
  • Slowly add mixture to butter.
  • Cook over low heat. stirring, until mixture is smooth and bubbly. Do not allow to brown.
  • Remove from heat and slowly stir in milk.
  • Bring to a boil, stirring, and cook until sauce thinkens.
  • Add 2 cups of the cheese and stir unil melted.
  • Place half the macaroni in a buttered 13 x 9 x 2 inch baking dish.
  • Sprinkle with half of remaining cheese.
  • Pour half of sauce over all.
  • Top with layer of macaroni and the rest of the cheese.
  • Pour remaining cheese sauce over all. Sprinkel with paprika.
  • Bake in 350 oven 30 to 40 minutes.
  • Serve hot from baking dish.

3/4 pound pasta (we used elbow macaroni)
3 Tablespoons unsalted butter
3 Tablespoons flour
2 cups milk
3 cups shredded sharp cheddar cheese, divided (reserve 1/2 cup for topping the pasta before baking)
1/2 teaspoon ground mustard powder
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
salt and fresh cracked black pepper to taste
Fresh chopped parsley (optional), for topping

Steps:

  • Heat oven to 350° Fahrenheit.
  • Cook pasta in very salty water until it's a few minutes less than al dente. (The pasta will continue to cook in the oven, so undercooking it during the boiling phase helps it hold up once baked!) Drain and set aside.
  • Melt butter in a large saucepan over medium heat. Whisk in flour to form a roux and cook for 30 seconds to 1 minute, until fragrant.
  • Whisk the milk into the roux a little at a time, making sure to work out all the clumps so you have a smooth sauce. Cook over medium heat, whisking occasionally, until milk has thickened, about 5 minutes.
  • Whisk mustard powder, cayenne, paprika, salt, and black pepper into sauce.

Oven Baked Spicy Macaroni and Cheese image

1 - 16 oz box of elbow macaroni or my favorite penne
1/2 cup butter
1/2 cup minced onion
4 cloves mince garlic
1-3 chipotle peppers in adobo sauce - finely minced
6 tablespoons flour
3 cups whole milk
2 cups sharp cheddar cheese
1 cup Monterey jack cheese
1 drained can corn (optional but so good in the mac and cheese)

Steps:

  • Preheat oven 350 degrees.
  • Put a pot of water on for the pasta. Cook pasta according to package directions. While water is coming to a boil begin making the cheese sauce.
  • Melt butter in a large pot over medium heat, add in minced onion and cook until onion is almost done.
  • Stir in minced garlic and minced chipotle peppers in adobo sauce. Cook two minutes stirring constantly.
  • Whisk in six tablespoons of flour. Cook two minutes whisking constantly.
  • Whisk in milk a little at a time. When mixture starts to thicken, add in more milk, repeat until all the milk is added in.
  • Turn down the heat a little and whisk in cheddar and Monterey jack cheeses. Stir to combine as cheese melts.
  • Taste the cheese sauce for salt and black pepper.
  • Turn off heat, stir in cooked drained pasta, and a drained can of corn (optional).
  • Transfer spicy macaroni and cheese into a 9" x 13" pan sprayed with non-stick cooking spray.
  • Tightly cover macaroni and cheese with foil.
  • Bake at 350 degrees for 45 minutes.
  • Remove cover and bake an additional 15 minutes or until mac n cheese is browned to your liking.

  • Heat a large skillet over medium heat. Add 2 teaspoons of olive oil. Saute the chorizo in a saute pan until crisp. Remove.
  • Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour, stirring for 1 minute. Whisk in the warmed milk and bring to a boil. Continue to whisk constantly. Stir while adding the mustard, hot sauce and Worcestershire. Stir in the cheese; reserving 1/2 cup for the topping. The mixture will thicken as the heat increases.
  • Pour the drained pasta into the cheese sauce and mix well. Add to a 3-quart casserole dish. Add the chorizo and roasted cherry tomatoes. Top with reserved cheese and the fried onions. Bake for 35 minutes. Can be made ahead, covered and refrigerated. Bring to room temperature before baking if refrigerated.

I had the various ingredients as left-overs so did some major tweaking of several other recipes and came up with this.

1 small onion, chopped
1 clove garlic, grated or minced
1 Tbsp jarred jalapeno slices, minced
1/2 tsp coriander
1 tsp cumin
1 1/2 Tbsp grapeseed oil (or other oil)
1 1/2 Tbsp flour
3/4 c half and half
1 c milk
1 medium head cauliflower, separated into florets
1/8 tsp cayenne pepper, or to taste
6 oz smoked turkey sausage, sliced
1/2 lb pasta of choice
6 oz velveeta cheese, cubed
1 Tbsp panko bread crumbs
1 Tbsp grated parmesan cheese

Steps:

  • 1. Preheat oven to 350°F. Grease 2 quart casserole dish. Set aside.
  • 2. Cook pasta and cauliflower in salted boiling water until done. Drain, set aside.
  • 3. Slice turkey sausage, saute until browned. Set aside.
  • 4. In a large pot, heat oil and saute onion, garlic and jalapeno until onion has softened. Add coriander, cumin and cayenne.
  • 5. Stir in flour and cook for about 3 minutes. Add milk mixture slowly. Add cheese. Stir until cheese melts and mixture thickens.
  • 6. Add cooked pasta and cauliflower and the sausage to cheese mixture. Stir to mix.
  • 7. Transfer mixture to casserole dish. Top with crumbs and parmesan. Bake for 20-30 minutes until crumbs are browned. Let sit for a few minutes before serving.
