This lip-smacking Lemon Butter Salmon from Karla Seville of Waynesboro, Pennsylvania makes for an easy, breezy supper to serve family or friends out on the patio some warm night. As an extra-special touch, you might add a 4-ounce package of salad shrimp to the remaining lemon butter, then spoon over the salmon before serving.

2 teaspoons minced garlic
1/2 cup butter, cubed
6 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce
5 salmon fillets or steaks (6 ounces each)

Steps:

  • In a small skillet, saute garlic in butter; whisk in lemon juice, salt, pepper and pepper sauce. Transfer 2/3 cup to a serving bowl; set aside., Place salmon in a greased 15x10x1-in. baking pan. Drizzle with remaining lemon butter. Broil 4-6 in. from heat 10-15 minutes or until fish flakes easily with a fork. Serve with reserved lemon butter.

4 salmon fillets
2 large egg yolks
1/2 cup butter
2 tablespoons lemon juice
salt and pepper

Steps:

  • Generously salt and pepper salmon fillets. Lightly grease grill with cooking spray or oil. Place the egg yolks in a saucepan. Cut the butter into pieces and add to the saucepan. Heat over medium-low heat while whisking the melted butter and egg yolks together. Continue whisking until the mixture turns lemony-colored and thick. Remove from the heat and stir in lemon juice. Place in a container and refrigerate until firm or serve immediately as a sauce. Grill the salmon about 5 minutes on each side or until done. Spoon sauce over fish and serve, garnished with lemon wedges and parsley.

For maximum flavor, we cook the salmon in the time-honoured way: by placing it in boiling salted water.

2 1/2 pounds (1.12 kilograms) center cut of fresh salmon
Water
Salt
2 egg yolks
1 dessertspoon cold water
4 ounces (110 grams) butter, diced
Approximately 1 teaspoon lemon juice
1/4 ounce (8 grams) butter
Salt and freshly ground pepper
Sprigs of watercress or flat parsley

Steps:

  • Half fill the pan with measured salted water and bring to the boil. Put in the piece of fish, just covering with water, and bring back to the boil. Simmer gently for 20 minutes. Turn off the heat, allow the fish to sit in the water. Serve within 15 to 20 minutes.
  • Meanwhile make the Irish Butter Sauce. Put the egg yolks into a heavy bottomed stainless steel saucepan on a very low heat. Add the cold water and whisk thoroughly. Add the butter bit by bit, whisking all the time. As soon as one piece melts, add the next. The mixture will gradually thicken, but if it shows signs of becoming too thick or 'scrambling' slightly, remove from the heat immediately and add a little cold water if necessary. Do not leave the pan or stop whisking until the sauce is made. Finally add the lemon juice to taste. Pour into a bowl and keep warm over hot, but not boiling, water.
  • To serve, lift the cooked salmon carefully from the poaching liquid. Peel off the skin gently. Garnish with sprigs of parsley or watercress. Serve with Irish Butter Sauce.

1 lemon, juiced
½ cup butter, cut into 16 pieces
2 cloves garlic, thinly sliced
2 (1 pound) salmon fillets
½ cup butter, cut into 8 pieces
1 clove garlic, minced
1 lemon, cut into 8 slices

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Combine water and lemon juice in a bowl.
  • Arrange the 16 smaller pieces of butter in 2 rows on a baking dish and top with garlic slices. Place salmon fillets over each row of butter and garlic.
  • Melt remaining sliced butter in a bowl with minced garlic, about 40 seconds. Spoon about half the melted butter-garlic mixture over salmon and top with lemon slices. Pour about half the lemon juice mixture into the baking dish.

For butter
1/4 cup raisins
1 stick Irish butter such as Kerrygold, softened*
1/3 cup capers
Grated zest of 1 lemon
1 tablespoon chopped chives
For salmon
8 (6-ounce) salmon fillets, preferably wild
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
*Available at specialty foods shops. If unavailable, substitute regular unsalted butter and add 1 teaspoon kosher salt.

Steps:

  • Make butter:
  • In small bowl, combine raisins and 1/2 cup hot water. Cover and let soak 2 hours, then drain.
  • In food processor, combine butter, raisins, capers, and lemon zest and pulse until well combined. Stir in chives. Transfer to large sheet of wax paper and roll into 6-inch-long log. Wrap in wax paper and refrigerate at least 1 hour to allow flavors to develop.
  • Make salmon:
  • Season salmon fillets with salt and pepper. In 12-inch nonstick skillet over moderately high heat, heat 1 tablespoon oil until hot but not smoking. Add 4 fillets, skin-sides-up, and sear until undersides are well browned, about 4 minutes. Turn fillets over and sear until just cooked through, 3 to 4 minutes more. Transfer to serving platter and keep warm. Wipe pan clean, heat remaining 1 tablespoon oil, and repeat with remaining 4 fillets.
  • Slice log of butter into 8 coins. Top each salmon fillet with 1 coin and serve immediately.
