4 large eggs
1/2 cup whole milk
1/4 cup all purpose flour
2 Tbsp. sugar
2 Tbsp. maple syrup
3 Tbsp. butter, cubed and divided
6 oz. Henning's Cheddar Cheese, shredded and divided (1 1/2 cups)
12 bacon strips, cooked and crumbled, divided
1 apple, peeled, cored and sliced 1/4-inch thick
1/3 cup brown sugar
1/2 tsp. ground cinnamon

Steps:

  • Instructions Place a 10-inch cast-iron or ovenproof skillet in the oven on the middle rack. Heat oven to 425°F. Beat eggs in a large bowl until blended. Beat in the milk, flour, sugar and maple syrup until frothy. Remove hot skillet from oven. Add 1 Tbsp. butter and tilt pan to coat bottom and sides with melted butter. Pour batter into the hot skillet. Sprinkle with 1 cup cheddar and 1/2 cup bacon. Bake for 18-22 minutes or until puffed and edges are golden brown. Meanwhile, melt the remaining butter in a skillet over medium heat. Add the apple, brown sugar and cinnamon. Cook and stir for 5-7 minutes or until apple is tender. Spoon apple mixture into pancake. I've always been fascinated by how many different breakfast foods you can create using just milk, eggs, and flour; and this is one of the more interesting examples. Especially considering the unusual, and borderline disturbing name. Sometimes called German pancakes, these have very little to do with Germany, and nothing to do with the Dutch. Apparently they were invented by German immigrants who were referred to as Dutch.

½ cup packed all-purpose flour
3 large eggs, room temperature
¼ teaspoon vanilla extract
¼ teaspoon salt
3 tablespoons clarified butter
1 tablespoon butter
½ Meyer lemon, juiced
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Blend milk, flour, eggs, vanilla extract, and salt together in a blender until batter is smooth.
  • Melt clarified butter in a 10-inch cast-iron skillet over high heat until bubbling; pour batter into the center of the skillet.
  • Bake in the preheated oven until puffed and golden, 20 to 25 minutes. Brush with 1 tablespoon butter, drizzle lemon juice over the top, and dust with confectioners' sugar.

1 large Granny Smith apple
4 tablespoons (1/2 stick) unsalted butter, divided
2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon
1/2 cup whole milk
2 extra-large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

1½ cups shredded cheddar cheese (preferably smoked or extra sharp; about 6 ounces)

Steps:

  • Preheat the oven to 425°F.
  • Heat the butter in a 10-inch oven-safe skillet over medium heat. Once it's bubbling, add the apples and ¼ teaspoon of the salt. Cook, stirring occasionally, until the apples are just tender, 5 to 7 minutes.
  • While the apples cook, whisk together the eggs, milk, flour, and remaining ¾ teaspoon salt until mostly smooth. It's okay if a few small lumps remain.
  • Pour the egg mixture into the pan with the apples. Top with the shredded cheese. Transfer the pan to the oven and bake until puffed and golden, 20 to 25 minutes. Cut into wedges to serve.

  • Carefully remove cast iron skillet from oven using an oven mitt and pour remaining 1 tablespoon butter into the skillet, quickly and carefully swirling to coat the skillet with butter. Pour batter into the skillet and transfer to the oven.
  • Bake in the oven until puffed around the edges and cooked through, 18 to 20 minutes.

I know most people know Dutch Babies as a sweet breakfast food- but not in my family! Sausage and cheese make this breakfast classic more hearty.

4 eggs
1 cup flour
1 cup milk
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
1 cup cheese, shredded (use a good melting type like cheddar or Jack)
1 cup cooked sausage (you can use crumbly sausage or even better, smoked sausage cut into bite sized pieces)
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Preheat oven to 425 degrees.
  • Put margarine and sausage into the baking dish and place in the oven to heat about 5 minutes before you add the batter. Keep a close eye on it because it will burn if you let it.
  • Blend eggs, milk, salt, and pepper in a blender or with a mixer. Add the flour 1/4c at a time until just incorporated evenly (don't overmix otherwise you'll activate the gluten in the flour and have a thick dutch baby rather than a fluffy one).
  • Add batter immediately after it's ready to hot baking dish.
  • Sprinkle cheese over the batter and bake for 20-25 minutes, until puffy and Golden brown.
  • Let it cool a few minutes before cutting- it will deflate during this period.
  • Enjoy!
  • Note: this is my family recipe, and it was is told to me as a ratio- 1/4 milk & flour for every egg- feel free to go up or down a size on your baking dish just adjusting according to the ratio!

Steps:

  • In a mixing bowl, whisk the flour, sugar, eggs and milk until smooth.
  • Place butter in a 10-in. ovenproof skillet.
  • Heat at 400° for 3-4 minutes or until melted; tilt pan to coat bottom and sides.
  • Pour batter into hot skillet.
  • Bake for 16-20 minutes or until edges are lightly browned.
  • Meanwhile, in a saucepan, saute apples in butter until lightly browned. Stir in honey, lemon juice and cardamom.
  • Combine cornstarch and water until smooth; add to apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Spoon into pancake. Serve immediately.
