This has been my favorite jam since I was a little girl. We moved around a lot when I was young; my Grandmother would send this jam to us so that we still felt we were close to 'Grandma's house.' I love it on warm homemade bread or peanut butter and jam sandwiches. Enjoy!

4 ½ cups mashed ripe pears
3 tablespoons powdered fruit pectin
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon ground nutmeg
¼ cup lemon juice
7 ½ cups white sugar
1 teaspoon butter
8 half-pint canning jars with lids and rings, or as needed

Steps:

  • Mix pears, fruit pectin, cinnamon, cloves, allspice, nutmeg, and lemon juice in a large heavy pot; bring to a boil, stirring constantly. Add sugar all at once, stirring, and bring back to a full rolling boil. Boil for 1 minute. Mix in butter to settle foam.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the pear jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Homemade pear preserves made from scratch with William Pears. You will fall in love with the vanilla infused aroma of the easy to make pear jam.

2.2 Pounds Pears (peeled and cut into chunks)
1.6 Pounds Sugar
1 Vanilla Bean

Steps:

  • Peel, quarter and cut the pears into chunks.
  • Place the fruit pieces into a big jam cooking pot and add in the sugar.
  • Slit open a vanilla bean and scratch out with a butter knife or small spoon the vanilla bean paste.
  • Add the paste and the whole vanilla bean to the pot with the other ingredients and mix it all well.
  • Keep the pot with the fruits on the stove, cook on slow heat for about 45 mins, while stirring frequently, until you can see a rolling boil.
  • Keep cooking pear preserves until it has visibly reduced and appears translucent.
  • Test if the jam is set with a candy thermometer. The setting temperature is 210° Fahrenheit or 105° Celsius. Or drop some of the preserve on a cold plate or spoon and if it's not running it is set. If it runs, keep the jam for some more time to cook on low heat and repeat the test until you have the correct consistency.
  • Take out the vanilla bean and discard.
  • Reduce jam to a smoother consistency with a hand blender. I like to keep a few fruit pieces to give the jam some character.
  • Pour hot jam into clean sterilized jars and fill up to the rim.
  • Drop some vodka or rum into the lid to kill further bacteria. (optional)
  • Close the jar with the lid and turn upside down to create a vacuum.
  • Allow the jam to cool down, label and store in a cool and dry place.

There were a lot of good looking recipes kicking around here for various pear jellies and jams, but none were quite what I was looking for. So I tinkered with existing recipes and came up with this one. It's very sugary sweet, which scared off some friends of mine when they tasted it straight out of the jar. (TIP: never leave jars of jam out around your hungry bachelor friends!) When they came to their senses and tried it on something (toast, waffles, biscuits, oatmeal, etc.), they were won over. This goes great with peanut butter too. (I make this with a mix of half Bosch and half Asian pears.)

4 lbs fresh pears (about 8 pears)
5 cups sugar
fresh nutmeg
1/4 cup lemon juice
1 tablespoon vanilla extract

Steps:

  • Peel, core and quarter the pears. (While you're doing this, add the cut pieces to a large bowl of water with some lemon juice squeezed in, to prevent darkening.).
  • Drain the pears, and transfer them to the work bowl of a food processor. Pulse them a few times. You're looking to get them chopped, not to puree them.
  • Grate a couple pinches of fresh nutmeg over the sugar.
  • Add the pears, sugar, and lemon juice to a large pot, and bring to a boil, stirring occasionally.
  • Simmer 40 minutes. You may have to stir frequently to prevent burning.
  • Remove the mixture from the heat, and stir in the vanilla extract.
  • Spoon into hot jars, leaving 1/2 inch head space. Wipe the jar rims and adjust the lids.
  • Process in boiling water for 10 minutes.

  • Place pear in a food processor; pulse until finely chopped.

4 to 5 pears, peeled, cored and cut into small cubes
1 Tablespoon peeled and finely grated fresh ginger
1/2 cup light brown sugar
1 lemon

Steps:

  • In a large pot, combine the pears, fresh ginger, sugar and juice from one lemon.
  • Bring to a boil over medium-high heat them reduce the heat to medium. As you cook the jam for 10-15 minutes, it will thicken.
  • Use a potato masher to help break down the fruit if necessary. If you want to make more of a sauce similar to an applesauce, you could puree the jam before canning it.
  • When the jam is the consistency you prefer, ladle it into jars leaving 1/4 inch headspace.
  • Process the jars for 10 minutes in a water bath canner (adjust for your altitude as needed). Or you could store the jam in the refrigerator for about a month.

4 cups fresh strawberries, hulled
2 cups chopped peeled ripe pears (about 2 medium)
2 tablespoons lemon juice
1 package (1-3/4 ounces) powdered fruit pectin
6 cups sugar
2 tablespoons vanilla extract

Steps:

  • Crush strawberries; transfer to a Dutch oven. Stir in pears, lemon juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from heat; skim off foam. Stir in vanilla., Ladle hot mixture into 7 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. 2 tablespoons lemon juice (preferably fresh)
4 cups pears (firm and ripe, about 4 pounds of pears, finely chopped, peeled, and cored)
1 box/1.75 ounces pectin (regular powdered)
1 tablespoon vanilla (bean paste, or prepare vanilla sugar*)
Optional: 1/2 teaspoon butter (helps reduce foaming)
5 cups sugar (granulated or vanilla sugar)

Steps:

  • Gather the ingredients.
  • Prepare your work area, canner, jars, and lids. See preparing jars for canning and boiling water processing .
  • Bring a large canning kettle of water to a boil with the jars and have it simmering over low heat.
  • *To prepare vanilla sugar, put the 5 cups of sugar in a large bowl. Slice two vanilla beans down the side and scrape seeds into the sugar. Bury the pods in the sugar, cover tightly, and let stand for at least 2 days, stirring a few times. Remove the pods and use the sugar in the recipe.
  • Put lemon juice in a 6- to 8-quart stainless steel or enamel-lined (with no chips) pan. As you chop the pears, measure them into the lemon juice and toss to coat, so they won't turn color.
  • Combine the pectin with 1/4 cup of the sugar and stir into the pear mixture. Add the butter, if using. Bring to a full rolling boil over medium-high heat, stirring constantly. Gradually add the vanilla sugar, stirring constantly. Bring back to a full rolling boil and continue boiling, stirring, for 1 full minute.
  • Skim foam and ladle into the hot prepared jars, leaving 1/4-inch headspace.
  • Wipe rims of jars with a damp towel and fit with the hot prepared lids.
  • Screw on bands to fingertip tightness. Do not overtighten.
  • Lower the filled jars into the hot simmering water, adding more water if needed to bring it at least 1 inch above the jar tops and cover the pan. Bring to a full boil and continue boiling for 10 minutes.
  • Remove the cover and turn off the heat. Let the jars stay in the hot water for 5 minutes before removing to a towel or rack.
  • Enjoy!

PEAR JAM (WITHOUT PECTIN)

This is a small batch quick recipe that can be doubled easily using 2X and 3X options. The flavors of cinnamon and ginger are deliciously delightful in jam.

1 kg (2.2 pounds) pear (peeled and cored like bartlett)
1 - 1 1/4 cup sugar (see notes)
2 tablespoon lemon juice
2- inch cinnamon (or ¼ teaspoon cinnamon powder)
1/2 tablespoon grated ginger (or to taste)
1 lemon zest

Steps:

  • Wash two jars (250 ml each) thoroughly with soapy water. Then sterilize jars in boiling water for 8 minutes. Also, boil the metal lids. Alternately, you can place washed jars while they are still wet in the baking tray. And roast jars in a preheated oven (160-180 C) for 15 minutes.Dry on a clean towel. Let air dry naturally.
  • Chop the pear into small bits and coat the pear simultaneously with lemon to avoid browning. Protip: The easiest way to do this is keep lemon juice in a large bowl. Mix everytime you add freshly chopped pears in the bowl for even coating.
  • Add sugar and spice, mix well. Rest pears in the fridge for at least 2 hours or overnight. Protip: This step helps to keep the pear bits intact and save them from turning into a sauce.
  • After resting, cook the jam for 15 minutes on medium-low heat until soft and translucent.
  • Mash the pears slightly for a pulpy jam or blend it for a smooth consistency. Stir frequently to avoid the caramelization of sugar.
  • When you see jam turns glossy and sheet off from the spoon. It is ready. ( Watch video)
  • Transfer hot jam to clean dry jars seal the lids and turn the jars upside down if storing jam in fridge or freezer. Let it sit at room temperature for 12 hours then transfer to fridge or freezer. Protip: Turning jars upside down creates a vacuum seal.
  • If canning, follow the steps of sterilizing jars. Then follow the canning procedure of removing air bubbles and process in boiling water bath for 8 minutes. Let it sit in the bath for another 5 minutes after turning off the heat. Then remove to clean towels. Check seals after 12 hours and store any unsealed jars in the fridge.

Start this recipe a day before you plan to serve it. Both the pear jam and the panna cotta are best if chilled overnight.

2 pounds ripe Bartlett pears, peeled, cored, and cut into 1/4-inch-thick slices
1 cup sugar
4 teaspoons unflavored powdered gelatin from 2 (1/4-ounce) envelopes
2 cups heavy cream
2 cups whole milk
1/2 cup sugar
2 vanilla beans, split lengthwise

Steps:

  • In large bowl, toss together pears and sugar. Cover and refrigerate at least 8 hours or overnight.
  • In small bowl, sprinkle gelatin over cream. Let stand until gelatin softens, about 1 minute.
  • Meanwhile, in medium saucepan over moderate heat, whisk together milk and sugar. Scrape in seeds from vanilla beans; add beans. Heat, whisking occasionally, until sugar dissolves, about 2 minutes. Remove from heat and whisk in cream mixture. Strain through fine-mesh sieve, discarding vanilla beans, then ladle mixture into 8 (4-ounce) ramekins. Cover and refrigerate at least 8 hours or overnight.
  • In heavy medium saucepan over moderate heat, combine 1/2 cup water and pear mixture. Bring to simmer, uncovered, and cook until pears are tender, about 20 minutes. Transfer mixture to food processor and purée until smooth. Transfer jam to medium bowl, cover tightly, and refrigerate until cool, about 1 hour. (Jam will keep, covered, in refrigerator up to 1 week.)
  • Run thin sharp knife around inside edge of each ramekin to loosen. Dip bottom of 1 ramekin in bowl of very warm water 6 seconds. Put plate over ramekin, then invert panna cotta onto plate, gently lifting off ramekin. Repeat to unmold remaining panna cottas. Top each with 1/4 cup pear jam and serve.

SPICED VANILLA PEAR JAM RECIPE

6 pounds Bartlett pears, very ripe
2 tablespoons fresh juice from 1 lemon
16 ounces all-natural, no sugar added, juice concentrate of your choice, thawed
1 vanilla bean, split lengthwise
2 cups water
2 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 to 2 teaspoons vanilla extract (optional, for a very vanilla flavor)
1 package + 20% of another package no-sugar pectin (optional)

Steps:

  • Sterilize jars and lids. Place a small plate in the freezer so you can test the jam for proper thickness later.
  • Peel, core, and chop pears finely. You can also puree them in a food processor, depending on the texture you want your jam to have. In a large bowl combine pears and lemon juice. Toss until pears are well coated with lemon juice.
  • In non-reactive pot, add juice concentrate and water. Use a butter knife to scrape the tiny beans from the inside of the vanilla pod, and toss the beans and empty pod into the pot. Bring to boil over medium heat and let simmer for 10 minutes. Discard vanilla pod.
  • Add pears, cinnamon, cardamom, and optional vanilla extract to the pot. Bring to boil over medium-high heat, stirring often to ensure the fruit does not stick or burn to the bottom of the pot. When mixture thickens, after about 45-50 minutes, test for doneness by spreading 1/2 teaspoon of cooked fruit on the cold plate and place it back in the freezer. Wait 30 seconds, then run your finger through the fruit. It should be thick enough to not run all over the plate, but remember that jams made without sweetener will not gel the same as standard jams. Here, the jam should just stick to the plate without being runny.
  • Optional : If you prefer a more gelled jam, add 1 package plus 20% of another package of no-sugar pectin once jam is done. Use a whisk to mix the jam to ensure there are no clumps of pectin. Return the jam to a boil and stir constantly for exactly 1 minute, then remove from heat.
  • Ladle the jam into sterilized jars, leaving 1/4-inch of headroom, and process the jars in a hot water bath for 10 minutes.

  • Pour the pear purée into a large measuring cup designed for liquids - I recommend a 4-cup measuring cup - to determine how many cups of purée you have. This is very important in order to determine how much sugar to add.
