- Place a large sauté pan (with a lid) over medium-high heat. Add the ground beef. Break the meat into small pieces with a wooden spoon. As it's browning, mix in the tomato paste, Dijon mustard, garlic powder, onion powder, thyme, salt, pepper, paprika, and cayenne pepper.
- Once the beef is fully cooked, add the macaroni noodles, and beef broth. Stir well. Then cover the pan and simmer for 7-10 minutes, until the pasta is cooked to al dente.
- Remove the lid and stir in the half & half and shredded cheese. Simmer and stir another 2-3 minutes, until the sauce is thick and smooth. Serve warm.

Steps:
- Add the bacon to a large pot. Turn the heat to medium-high and cook until crispy, 5-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain. Discard all but 1 tablespoon of the rendered bacon fat in the pot.
- Reduce the heat to medium and add the onion to the pot. Cook until softened, 5-7 minutes. Add the red bell pepper, carrots, and garlic. Cook until softened, 2-3 minutes more.
- Increase the heat to medium-high and add the ground beef to the pan. Break up the beef with spatula and cook until browned, about 5 minutes. Season with salt.
- Add the paprika and tomato paste. Cook until fragrant and the tomato paste turns brick-red in color, 2-3 minutes. Add the diced tomatoes, beef stock, and milk and bring to a low boil.
- Once the liquid is boiling, add the pasta shells. Cover and cook for about 10 minutes, stirring occasionally, until the noodles are al dente and they have absorbed most of the liquid. NOTE: The timing will differ depending on what type of noodles you use.
- Remove the pot from the heat. Stir in the Gouda and cheddar cheeses until melted. Fold in the cooked bacon.
- Garnish with parsley, if desired.
- Serve immediately.

SPICY HOMEMADE HAMBURGER HELPER
I developed this recipe because I wanted something that had a spicier flavour than instant products readily available in your local grocery store but I wanted the ease with which to make it too. I think this recipe is easy to follow and versatile too. You can add any vegetable that you may have in the house and adjust the spices to suit yourself. You can change the type of pasta/sauce used too. Everytime you make it, it can be different from the last time! You can even make it using ground chicken, turkey, or even seafood (or with no meat at all!) Enjoy!

Steps:
- Chop onions and saute with meat and green peppers until meat is browned.
- Add spaghetti sauce and lower heat and cover and cook for about 15 min.
- Cook pasta in a seperate saucepan.
- Drain pasta and add to meat sauce.
- Mix well.
- Add grated parmesan cheese on top if desired.

- in a large skillet brown the turkey in olive oil, then add the garlic and onion. Use medium heat until onion is tender and turkey has some chunks crispy brown.
- Sprinkle in the salt, pepper, basil, and bay leaves. then add in the chicken stock.
- Add all the vegetables and bring this to a boil over medium high heat.
- Once the mixture is boiling, add the pasta.
- Cover and cook for about 20 minutes, stirring occasionally.
- Add the tomato sauce and cook uncovered another 10 minutes, until the mixture is as thick as desired.
- Great served topped with some ketchup, and sprinkled with Tabasco if you like spicy!

Steps:
- Start water boiling for pasta.
- Heat oil or butter in skillet.
- Add onions and garlic and saute.
- When wilted, add beef and seasonings.
- Cook pasta according to package directions.
- Drain and prepare with milk, butter and cheese sauce packet.
- Set aside over low heat.
- When beef is only slightly pink, add tomatoes.
- Continue cooking till meat is done.
- Stir beef mixture into mac and cheese, add extra cheese and stir until melted.

HOMEMADE HAMBURGER HELPER
My husband doesn't like Hamburger Helped, but liked this "homemade." It is not one-dish (pot), but it was good. My kids ate it like crazy. Any noodle with substance can be used. I would shy away from wide egg noodles (or skinny egg noodles) because they will probably disintegrate when the other stuff is stirred in....but I guess it could be done. I would also be willing to substitute the cream of potato for cream of mushroom. And additions, like chopped celery or carrots would be good, too. Steam or saute them before you add them would be my suggestion.

- Brown ground beef. I use 95/5 and don't have anything to drain. If you use something that has more fat, drain the fat. Season with Nature's Seasoning.
- Melt bouillon in water, delglaze pan.
- Add onions, cook until almost done.
- Cook noodles in dutch oven, drain and return to pan.
- Pour ground beef into dutch oven, along with soups. Stir until noodles are coated.
- Steam peas (I put in 4-cup Ziploc container, put the lid on part way, and microwave for 4 minutes).
- Fold peas into noodle mixture gently.

- Place ground beef in a skillet over medium-high heat. Cook and crumble until evenly browned. Drain grease, and set aside.

My kids LOVE hamburger helpers, but being that they are often FULL of sodium etc. I went to work in the kitchen. This recipe is easily adapted by changing a few ingredients. Ground beef -chicken or turkey Cream of mushroom soup to cream of chicken or nacho cheese soup and different pasta change this dish into many alternatives. ex: I replace the ground beef, noodles and cream of mushroom for chicken breast cubed, nacho cheese soup and use cut up tortillas for a Mexican version.
