4 bone-in pork loin chops, 1- inch thick
Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

4 (1-inch thick) pork chops
salt and ground black pepper to taste
3 tablespoons butter
1 onion, sliced thin
1 cup white wine
4 cups applesauce

Steps:

  • Season pork chops with salt and pepper.
  • Place a large skillet over medium-high heat. Lay seasoned pork chops into the hot skillet. In the spaces between the chops, add the butter and onions. Cook and stir the onions while the first side of the chops cook until browned, 5 to 7 minutes. Turn the chops and continue cooking until the no longer pink in the center, 5 to 7 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Pour white wine into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir applesauce through the onion and wine mixture; simmer until the liquid thickens somewhat, about 5 minutes.
  • Plate the pork chops and top with the apple and onion mixture to serve.

¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar

ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.

This is a fairly common autumn dish in Indiana. It always reminds me of local harvest festivals. Crimson and gold leaves under foot, hay rides, the crisp sweet smell of the air...comfort food, pure and simple. There are many variations, but this is the favorite in our home. To be honest, I've never measured the spices before I sat down to write this, so please feel free to adjust to your own tastes.

1 small yellow onion, thinly sliced
1 cup peeled and thinly sliced baking apples (preferably Cortland)

1 tablespoon grape seed oil
1/2 cup thin-sliced (height wise) red or Vidalia onion
1/4 cup thin-sliced bacon
1 cup thin-sliced apple (1/4-inch by length)
1/4 cup white wine, sauvignon blanc or riesling
1/4 cup (1/2 stick) butter, at room temperature
1/2 teaspoon ground nutmeg, optional
1/2 teaspoon turmeric, optional
2 tablespoons grape seed oil
Eight 4-ounce fresh boneless pork loin chops
1 teaspoon ground pepper
1 tablespoon kosher or sea salt
1 teaspoon fresh mint, chopped
Potatoes of choice, for serving

Steps:

  • For the apple compote: In a large saute pan over high heat, add the oil and allow to heat to the verge of smoking. Then add the onions and reduce the heat to medium. Allow the onions to cook, stirring throughout, until light brown in color, about 2 minutes. Then add the bacon and allow to cook until the bacon has begun to brown. Then add the apples. After adding the apples, allow all the ingredients to blend in flavor for a final 2 minutes. Add the wine to deglaze the pan and allow the alcohol to cook off. After reducing the wine, reduce the heat to low and whisk in the butter and optional spices, stirring for 1 to 2 minutes to create a sauce. Finish with the mint and hold warm until serving.
  • For the chops: In large a saute pan over medium-high heat, add the oil and allow to warm. Sprinkle the chops with salt and pepper equally on both sides and add to the warm oil. Allow the chops to brown on the first side for 3 to 4 minutes, and then flip and repeat cooking on the second side for a final 3 to 4 minutes. Once cooked, remove from the pan and serve with potatoes of choice. Finish with the apple compote.

1 ½ teaspoons rubbed sage
1 teaspoon dried minced garlic
1 teaspoon dried thyme leaves
