3 tablespoons olive oil
1/2 Spanish onion, thinly sliced
4 large garlic cloves, chopped
2 teaspoons fennel seeds
1 teaspoon dried crushed red pepper
1/2 teaspoon salt, plus more for seasoning
1 cup dry white wine
2 (1/4-inch-thick) lemon slices
1/2 cup chopped fresh parsley leaves
2 1/2 pounds fresh mussels, scrubbed, debearded
1/2 cup chopped seeded tomatoes
8 slices crusty Italian bread, sliced 1/2-inch thick
Olive oil

Steps:

  • Heat grill to high.
  • Heat oil in heavy large pot on the grates of the grill. Add the onion and cook until soft. Add the garlic, fennel seeds, crushed red pepper and salt and cook for 1 minute.
  • Add wine, lemon slices, and 1/4 cup parsley; bring to boil. Add mussels. Cover pot and cook until mussel shells open, stirring once, about 6 minutes; discard any mussels that do not open. Using slotted spoon, transfer mussels to large shallow bowl. Boil broth in pot until reduced to 1 cup, about 3 minutes; season, to taste, with pepper. Pour broth over mussels. Sprinkle with tomatoes and remaining parsley.
  • Brush bread on both sides with oil and season with salt. Grill until golden brown on both sides. Serve mussels with bread for dipping.

3 tablespoons plus 1 teaspoon extra-virgin olive oil, divided
4 slices peasant bread, each about 1 1/2 inches thick (or 1 baguette, sliced in half, lengthwise)
1 whole garlic clove plus 15 cloves garlic, thinly sliced
4 scallions, thinly sliced on a diagonal
2 teaspoons salt
2 pounds Prince Edward Island mussels (or other black mussels)
2 cups tomato puree
1 cup dry white wine
2 teaspoons red pepper flakes
1 handful fresh chive stems (about 40), halved
1 cup loosely packed fresh basil, thinly sliced
1/2 cup fresh oregano

Steps:

  • Brush 1 teaspoon oil onto each slice of bread. Toast until brown and crisp. Rub both sides (one side if using baguette) with whole garlic. Cut bread in half on the diagonal. Heat remaining 2 tablespoon oil in a large skillet over medium-high heat. Cook sliced garlic, scallions and salt, stirring occasionally, until scallions and garlic color slightly, about 5 minutes. Add mussels, tomato puree, wine and pepper flakes. Bring to a boil. Reduce heat to medium, cover and cook until mussels open, 1 to 2 minutes. (Discard any mussels that don't open.) Uncover pan and add herbs; toss to combine. Divide mussels evenly among 4 bowls and spoon broth over them. Serve each with toast.

4 pounds mussels
4 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 garlic cloves, peeled and smashed
4 sprigs fresh thyme
1/2 lemon, thinly sliced
3/4 cup dry white wine
1/2 cup low-sodium chicken broth
Serving suggestion: crusty French bread

Steps:

  • Scrub the mussels with a vegetable brush under running water; discard any with broken shells or that remain opened when tapped. In a large pot over medium heat, melt 2 tablespoons butter in the olive oil. Add the garlic, thyme, and lemon slices and cook until everything has softened, about 5 minutes.
  • Add the mussels and stir to coat them with all the flavors. Add the wine, then the chicken broth; cover the pot and steam for 10 to 12 minutes until the mussels open. Remove the mussels from the pot. Take the meat out of 10 of the mussels and put them back into the pot along with the remaining butter. Using an immersion blender, buzz the liquid until the sauce thickens and becomes creamy; taste and adjust seasoning. Divide the remaining mussels among the serving bowls and spoon over the sauce.
  • Serve with plenty of crusty French bread to dip in the sauce.

6 garlic cloves, sliced
1 red onion, diced
2 tablespoons olive oil, extra-virgin
3 tablespoons fresh lemon juice
4 small dry chili peppers, diced
1/2 glass white wine
4 tablespoons low-fat plain yogurt (optional, It is just as delicious dairy free, Your choice!)
salt and pepper, to taste
parsley or dill, chopped

Steps:

  • Heat the oil in a large saucepan. Add diced onion. Sauté for 5 minutes.
  • Add the mussels, chili, wine, garlic, salt and pepper.
  • Sauté until cooked; about 20 minutes, not really sure.
  • Add lemon juice, chopped herbs and yogurt (optional). Stir well.
  • Best served with roasted veggies or baked potatoes with julienne onion on top.

This is a wonderful, inexpensive dish that's great for a crowd. The broth-like sauce is light, yet full of great flavor. I choose not to add any butter, but rather use the lighter taste of olive oil for the fat in this dish. A word of caution: this recipe feeds about 6, but takes up a lot of room, especially once the mussels are all opened in their shells. I gave a small hint at the end of how one might serve this without overflowing their bowl. You might also like to spoon the pasta into individual serving bowls, and then top each one with mussels and broth, whichever you prefer. Use your best judgment!

2 lbs mussels, scrubbed and de-bearded
1 lemon
1 1/2 teaspoons salt
1 lb your favorite pasta
2 tablespoons extra virgin olive oil
3 shallots, minced
5 cloves garlic, sliced paper-thin
1/2-1 teaspoon crushed red pepper flakes, to taste
2 cups fish stock (chicken or vegetable ok - can sub 1 cup white wine and 1 cup stock as well)
1 (14 ounce) can diced tomatoes with juice
salt & freshly ground black pepper, to taste
1/4 cup fresh basil leaf, torn
1 loaf crusty bread, for serving

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • The following step is optional, but it works really well.
  • After you’ve given the mussels a quick scrub and pulled off any of the beards, place them in a large bowl filled with cold water and several ice cubes.
  • Squeeze the juice of the lemon into the water, toss in the squeezed halves, and add the heaping tsp of salt.
  • Allow mussels to sit for about ½ an hour, and they will “spit” out any sand or other stuff that might be inside their shells.
  • (This is an old Neapolitan trick my husband’s mother used for all shellfish).
  • After about ½ hour, drain mussels, give then a quick rinse under come running cold water and set aside while you make the broth.
  • Preheat large skillet over medium heat, and add olive oil.
  • Next add the minced shallots, and sauté for a minute or two.
  • Add the sliced garlic, and crushed red pepper to taste, and sauté for another minute, careful not to let the garlic get too brown.
  • Slowly add the fish stock.
  • (If using wine and stock, add the wine first, bring it up to a boil and then add the fish stock) Let the stock simmer for a few minutes with the shallot and garlic, and then add the diced tomatoes.
  • When sauce comes to a boil, add the mussels to the pan, give then a quick toss, and put the lid on and let stem for about 3-5 minutes.
  • Add pasta to boiling water and cook for 7 minutes, or until done to your liking.
  • When mussels have all opened, turn off the heat, give them another stir to get all the liquid up from the bottom, add the fresh basil and put the lid back until the pasta is finished.
  • Drain pasta.
  • To Serve: Unless you have an enormous pasta-serving bowl, here’s what I suggest.
  • Add a couple ladles of the cooking broth in the bottom of your serving bowl and add about half of the pasta.
  • Scoop out about half of the mussels with broth and lay over top the pasta until bowl is filled.
  • Add the remaining pasta back into the skillet with the rest of the broth and mussels.

2 shallots, thinly sliced
2 garlic cloves, thinly sliced
Fine sea salt and freshly ground white pepper
2 links spicy Italian sausage, casings removed and roughly chopped
1 cup dry white wine
1 rosemary sprig
3 pounds small mussels, scrubbed and beards removed
1 tablespoon chopped flat-leaf parsley
2 tablespoons fresh bread crumbs, toasted

Steps:

  • Place the olive oil in a large heavy-bottomed pot over medium heat. When the oil is hot, add the shallots and garlic, season with salt and pepper, and cook until the shallots are translucent but still have a bit of crunch, about 3 minutes.
  • Add the sausage to the pan and cook, stirring to crumble it, for 5 minutes, or until thoroughly cooked. Add the wine and rosemary and bring to a boil. Lower the heat to medium, add the mussels, cover the pan, and steam until the mussels open, 3 to 5 minutes.
  • Sprinkle the parsley and bread crumbs over all. Divide the mussels among six bowls and ladle the broth and sausage over them. Serve with crusty bread.

Of all of the mussel recipes I tested this week, this was the hands-down favorite. Inspired by a spicy mussel dish I enjoyed at Bar Pilar, a tapas bar in Valencia, years ago, this dish is made special by the crunchy almond and hazelnut picada added after the mussels are steamed.

3 1/2 pounds black mussels
2 tablespoons extra virgin olive oil
10 toasted, skinned hazelnuts
10 toasted, skinned almonds
4 large garlic cloves, minced
1 medium onion, finely chopped
1/2 dried red chili, crumbled, or 1/4 teaspoon dried red pepper flakes
1 14-ounce can crushed tomatoes or chopped tomatoes with juice (if using chopped tomatoes, pulse them to a purée in a food processor)
Pinch of sugar
Salt and freshly ground pepper to taste
1 cup dry white wine
Pinch of saffron (optional)
1/4 cup chopped flat-leaf parsley

Steps:

  • Clean the mussels. Inspect each one carefully and discard any that have opened (if some are partly open, tap them with your finger and if they close back up they are O.K.) or have cracked shells. Place in a large bowl, fill the bowl with cold water and rinse several times, swishing the mussels around in the water, pouring out the water and refilling. Clean the shells, if necessary, with a brush or the end of one of the mussels, and pull out the beards - the hairy attachments emerging from the shells. Do not do this until just before cooking, or the mussels will die and spoil.
  • Heat 1 tablespoon of the olive oil in a large Dutch oven, soup pot or lidded frying pan and add the hazelnuts and almonds. Cook, stirring, until the nuts are golden brown and smell toasty, and add half the garlic. Cook, stirring, until the garlic is fragrant, taking care not to let it color and burn, about 30 to 60 seconds. Remove from the heat and transfer to a mortar and pestle or a mini food processor. Allow to cool, then mash or pulse until the mixture is just short of pasty; the nuts should retain some finely chopped texture. Work in 1 tablespoon of the parsley and set aside.
  • Heat the remaining tablespoon of olive oil over medium heat and add the onion. Cook, stirring often, until it is tender and translucent, about 5 minutes. Add a generous pinch of salt, the remaining garlic and the chili and cook, stirring, for another minute, until the garlic is translucent. Add the tomatoes, a pinch of sugar and salt and pepper to taste, and turn the heat to medium-high. Bring to a boil, reduce the heat, cover and simmer 20 to 30 minutes, stirring often, until the mixture has cooked down and is very fragrant.
  • Add the white wine and saffron and bring to a boil. Add the mussels, cover and steam 4 to 5 minutes, until they open. Stir the mussels halfway through to make sure they are evenly exposed to the heat. As they open, remove to a bowl with tongs. Discard any that have not opened. Keep warm.
  • Stir the nut and garlic mixture and the remaining parsley into the tomato sauce. Taste and adjust seasoning. Distribute the mussels among 4 wide soup bowls and spoon the sauce over. Serve with bread for sopping up the sauce.
  • To skin hazelnuts, toast in a 300-degree oven for 20 minutes, until they begin to smell toasty. Remove from the heat and wrap in a clean dish towel. Rub the nuts in the towel and the skins will slip off. Turn the oven up to 350 degrees and roast for another 5 to 10 minutes, until light brown and toasty.

2 bunches cilantro, leaves and tender stems, coarsely chopped, about 2 cups
1 2-inch piece fresh ginger, peeled and thickly sliced
2 garlic cloves
1 or 2 serrano chiles, split lengthwise
1/2 cup grated unsweetened coconut, fresh, dried or frozen
1 teaspoon Vietnamese fish sauce
1/2 teaspoon salt
2 teaspoons brown sugar
1 4-inch stick fresh lemon grass, sliced 1/4-inch thick
4 pounds mussels
2 tablespoons unsalted butter
1 cup chicken broth, vegetable broth or water
3 or 4 scallions, thinly sliced
Lime wedges

Steps:

  • To make a green curry paste, put cilantro, ginger, garlic, chiles, coconut, fish sauce, salt, sugar and lemon grass in a blender or food processor. Blend to a coarse paste, adding a little ice water if necessary.
  • Rinse the mussels under cold water and remove the beards. Discard any mussels with broken shells, as well as any that are not tightly closed.
  • Melt the butter in a heavy-bottomed soup pot over a medium-high flame. Add the mussels and stir well to coat. Raise the heat to high, add the broth or water, and put on the lid. Cook for 2 minutes.
  • Add 1/2 cup of the green curry paste, stir well, and continue cooking for 4 to 5 minutes, until all of the mussels have opened. Sprinkle with the scallions.
  • Bring the pot to the table and serve in wide soup bowls, ladling some of the broth over the mussels, along with a squeeze of lime juice. Pass the remaining green curry paste separately, if desired.
