Steps:
- In a small bowl, combine the soy sauce, sugar, salt, orange zest, garlic and pepper. Pour half of the marinade into a large shallow dish. Add the chicken; turn to coat. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade. , Drain the chicken, discarding marinade. Transfer chicken to a greased 13x9-in. baking dish. Cover and bake at 325° for 1-1/2 hours or until chicken juices run clear., Using tongs, transfer chicken to a greased 15x10x1-in. baking pan. In a small bowl, combine the chili powder, cayenne, pepper sauce and reserved marinade. Drizzle over chicken. , Bake, uncovered, for 30 minutes, turning once. In a small bowl, whisk the dip ingredients. Serve with wings.

SPICY CHICKEN WINGS
Steps:
- Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
- Preheat a grill to medium-high.
- Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
- Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.
CHICKEN WINGS IN GARLIC SAUCE
Steps:
- Rinse the chicken wings in cold water and pat dry with paper towels. Place flour in a shallow platter and season it by adding paprika, salt and pepper. Toss to incorporate, then dredge the wings in the flour.
- Heat oil in a skillet and brown the chicken wings on all sides. Remove the chicken from the pan and set aside on a platter. Add the pepper flakes, bay leaf, lemons, garlic, oregano, sherry, and chicken broth to the pan.
- Cook for 2 minutes to evaporate the alcohol. Return the chicken to the pan. Cover the pan and simmer for 15 minutes, or braise in a preheated 375 degree oven for 20 minutes.
SPICY GARLIC CHICKEN WINGS WITH BLUE CHEESE DIP

- Combine all the ingredients in a small bowl. Break up any large pieces of blue cheese, cover and refrigerate until ready you dip.
- Preheat your oven to 425°. Line a rimmed baking sheet with aluminum foil (nonstick if you can find it) and brush with a olive oil.
- Toss the wings in 3 tablespoons of olive oil. Arrange the wings on the prepared pan and bake for 30 minutes, rotating halfway through. Then turn on the broil and position the wings on the top rack just under the broiler until the skin crisps and is golden brown.
- Meanwhile prepare the wing sauce. In a sauce pan pour in the Frank's, grate in the fresh garlic and add in the sugar, black pepper, cayenne pepper and Worcestershire sauce. Stir while it is brought up to a simmer for for a few minutes until hot then remove off the heat.
- In a large bowl whisk together the egg yolk, water and cornstarch. While whisking, slowly stream a little of the warm hot sauce into bowl with the egg/cornstarch. Once combined, gradually add in the rest of the sauce.
- Add cooked wings into the spicy garlic sauce and toss to coat.
- Serve with the blue cheese dip and enjoy!

Steps:
- Mix all dip ingredients and chill overnight if possible.
- Spread wings out on a lightly oiled cookie sheet.
- Mix melted butter, vinegar, and hot pepper sauce.
- Brush butter mixture onto wings.
- (Can do this ahead and hold for 2 hours maximum if at room temp).
- Bake at 400° for 20- 30 minutes, or until wings are cooked through.
- Baste one time during cooking.
- Sprinkle cayenne during last 5 minutes of cooking for more heat.
- Serve hot with dip and celery sticks.
BUFFALO WINGS WITH BLUE CHEESE DIP

- Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
- Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
- Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side
