- Heat oven to warm about 200 degrees.
- Place warm water in large mixing bowl. Add yeast and stir. Stir in honey and let proof (start to form a creamy foam) for 5 minutes.
- Add oil, flour, and salt. Begin by adding 7 cups of flour. Start to mix using the dough hook. Add remaining 1/2 cup of flour until dough pulls away from sides of mixing bowl. Using Bosch or Kitchenaid, knead for 10 minutes at medium-high speed. If you don't own a stand mixer, you can knead by hand.
- Place a little oil on hands and shape into two bread loaves. Spray loaf pans with non-stick cooking spray. Put pans in a warm oven to let rise until double -- about 20 minutes.
- Once bread has raised, turn oven to 350 degrees. Leave bread in oven and set timer for 25 minutes.
- Check bread to see if it is golden brown. Once bread is done, remove from oven and spread butter all over warm loaves. Let cool for several minutes before removing from pan.
- Spread butter and jam or honey on warm bread.
- May freeze bread or eat within 2 days.

This is the Bosch master recipe for freshly ground whole wheat bread. My kids never used to eat the crust. Now they do! :) I have done some experimenting with this to get a more firm loaf. I think I finally have it. So the recipe is adjusted, based on my tinkering. Minimum rising time included in prep time. The original recipe is from Phyllis Stanley, a Bosch consultant. She also recommends using saved potato water for the water and pureeing any leftover veggies as part of the water. Adds more nutrition and some taste. NOTE: If you don't use freshly ground flour, you will probably have to adjust the flour amounts.

Steps:
- Put ingredients in the Bosch bowl in order listed.
- Turn Bosch on and knead on speed 1 for a total of 8 minutes.
- Quickly add (after turning on) additional flour (1/2 C at a time) if needed for dough to pull away from side of the bowl, turning off Bosch each time you add flour.
- It should only pull initially half way up the side of the bowl, and during the 5 minutes, it will completely pull away.
- Turn oven on to 375° and oil your hands and counter well, spraying 4-5 loaf pans with cooking spray or oil.
- Divide the dough between the loaf pans and let rise for approximately 30 to 45 minutes. They will rise more in the oven.
- Turn oven down to 350° and bake for 30-35 minutes, or until golden brown.
- Remove from pans and let cool on cooling racks, covering with a tea towel, before cutting (if you can wait!).

- In a large bowl stir together the active dry yeast, light brown sugar, and warm water. Let it sit for about 5 minutes -- the yeast will bloom in the bowl.

- Mix dough: Stir bulgur (or cracked wheat) and boiling water in a medium bowl. Thoroughly stir 2 1/2 cups whole-wheat flour, 1 3/4 cups bread flour, wheat germ (if using), salt and yeast in a 4-quart (or larger) bowl. Thoroughly stir 1 3/4 cups ice water, honey and oil into the bulgur. Vigorously stir the wet ingredients into the dry ingredients, scraping down the sides and mixing just until the dough is thoroughly blended. The dough should be moist and a bit sticky, but fairly stiff. If the mixture is too dry, stir in just enough additional ice water to blend the ingredients, but don't overmoisten. If the dough is too wet, stir in just enough bread flour to stiffen it slightly. Lightly coat the top with oil. Cover the bowl with plastic wrap.
- First rise: Let the dough rise at room temperature (about 70 degrees F) for 12 to 18 hours; if convenient, stir once partway through the rise. For convenience (and improved flavor), you may refrigerate the dough for 3 to 12 hours before starting the first rise.
- Second rise: Generously coat a 9-by-5-inch (or similar large) loaf pan with oil. Vigorously stir the dough to deflate. If it is soft, stir in just enough bread flour to yield a firm but moist dough (it should be fairly hard to stir). Transfer the dough to the pan. Lightly coat the top with oil. Smooth and press the dough evenly into the pan using a well-oiled rubber spatula or your fingertips. Evenly dust the top with the remaining 1 tablespoon whole-wheat flour, smoothing it out with your fingertips. Using well-oiled kitchen shears or a serrated knife, cut a 1/2-inch-deep slash down the length of the loaf. Cover the pan with plastic wrap.
- Let rise at warm room temperature until the dough nears the plastic, 1 to 2 1/2 hours. (For an accelerated rise, see Tip.) Then gently remove the plastic and let the dough continue to rise until it extends 1 inch above the pan rim, 15 to 45 minutes more (depending on temperature).

- Combine flour, instant yeast, sugar, and salt in the bowl of the stand mixer that has been fitted with a dough hook. Mix on low speed for 30 seconds.
- Combine flour, instant yeast, sugar and salt in the bowl of a food processor that has been fitted with a blade or dough blade. Pulse 10 times. If using the loaf pans, please form each half into an oval roughly the size of the loaf pan before easing them into the pans.Use a sharp knife to slash the top of the loaf about ¼ of an inch deep.
