12 large eggs
1/2 cup mayonnaise
Grated zest of 1 lemon plus 2 tablespoons lemon juice
1 tablespoon yellow mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 avocado, diced
Watercress leaves, for garnish

Steps:

  • Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain.
  • When the eggs are cool enough to handle, remove the shells. Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter.
  • To the food processor, add the mayonnaise, lemon zest and juice, mustard, salt, pepper and avocado. Process until well blended and smooth, then transfer to a resealable plastic bag. With scissors, snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Garnish with watercress. Serve immediately or cover loosely and chill until ready to serve.

Two perfect foods - deviled eggs and guacamole - come together in this make-ahead party snack.

12 large eggs
1/2 ripe avocado, pitted, peeled and mashed (about 1/2 cup)
Juice of 1 lime (about 5 teaspoons)
2 tablespoons sour cream
1 teaspoon chopped fresh cilantro, plus 24 small leaves, for serving
Kosher salt
Cayenne pepper, for serving
Flaky sea salt, for serving

Steps:

  • Bring a large saucepan of water to a boil over high heat and prepare a large bowl of ice water. Gently lower the eggs into the boiling water with a slotted spoon and cook for 10 minutes. Drain the eggs with the slotted spoon and transfer to the ice water to cool completely, about 5 minutes.
  • Peel the eggs, halve each lengthwise and remove the yolks from the whites. Place the yolks in a food processor and set the whites aside on a plate. Add the avocado, lime juice, sour cream, chopped cilantro and 1 teaspoon kosher salt to the yolks and process until the mixture is smooth and light.
  • Spoon or pipe the yolk mixture into the cavities of the whites then sprinkle each egg lightly with cayenne and some flaky sea salt. Top with a cilantro leaf and serve the eggs immediately or cover and refrigerate up to 6 hours.

6 hard-boiled eggs, peeled
½ avocado, diced
¼ cup greek yogurt
½ tablespoon mustard
1 ½ teaspoons lemon juice
salt, to taste
pepper, to taste
paprika, for sprinkling

Steps:

  • Cut each egg in half and remove the yolk. Place the yolks in a medium bowl, and refrigerate the whites while you prepare the filling.
  • In a large bowl bowl, mix together the avocado, Greek yogurt, mustard, lemon juice, salt, and pepper.
  • Add the egg yolks and mash with a fork to incorporate. For a smoother filling, add the ingredients to a food processor and pulse to combine.
  • Transfer the filing to a piping bag fitted with a round tip or a zip-top bag with a corner snipped off.
  • Pipe the filling into the egg whites. Sprinkle with paprika.
  • Enjoy!

These are awesome! Very different from the typical mayo/mustard/onion deviled eggs. Great for summer parties, since there is no mayonnaise called for. Everyone has asked me for this recipe! 10 large hard-boiled eggs
2 slices double-thick prosciutto (cubed)
2 ripe avocados
1/2 small red onion (finely minced)
4 cherry tomatoes (minced)
1 tablespoon water
1/2 teaspoon ground cumin
1/4 teaspoon garlic granules (I use 1 tsp fresh crushed)
1 large lime, juice of
1 teaspoon salt
1 dash cayenne pepper, to taste
2 teaspoons fresh cilantro leaves (minced)

Steps:

  • Boil the eggs.
  • While the eggs are cooking, make guacamole.
  • Mix water, cumin, & garlic in medium bowl.
  • Halve avocados, remove pits & skin; cut into thirds (discard any brown spots); add to bowl.
  • Add onion, tomato, lime juice & salt.
  • Mash with a hand potato masher, stir to blend.
  • Add hot pepper as desired.
  • Cover with plastic wrap patted onto the surface of guacamole.
  • Peel eggs, cut in half, discard yolks (or save for another use).
  • Stir the cubed prosciutto into the guacamole and fill the eggs.
  • Sprinkle fresh minced cilantro on top and serve.

I wish I'd thought of this! This really works! The original recipe has it on a bed of red cabbage slaw, making a strong citrus component. I have posted this too, but feel free to just do the stuffed avocado. Adapted from License to Grill by ChrisSchlesinger and John Willoughby.

6 large eggs
2 tablespoons pickle relish
2 tablespoons mayonnaise
1 tablespoon mashed canned chipotle pepper (or other pepper of choice)
1 medium stalk celery, diced small
2 tablespoons cilantro, roughly chopped
salt and pepper
2 avocados, peeled, cut in half, pitted and scored (cut but don't remove from shell)
1/4 cup olive oil (optional)
8 flour tortillas (or corn(optional)
2 cups thinly sliced red cabbage (or green, but the red is prettier)
1/4 cup olive oil
1/4 cup fresh lime juice (about 2 limes)
1/4 cup molasses
1/4 cup red wine vinegar (try a spash of balsamic vinegar if you wish)
salt and pepper

Steps:

  • Place the eggs in a small saucepan and cover with cold water. Bring water to a boil and reduce heat to low. Simmer for 12 minutes. Drain and run under cold water to stop the cooking.
  • Peel the eggs and put them in a medium bowl. Add the relish, mayonnaise, chipotle, celery, cilantro, and salt and pepper to taste. Mash together with a fork until the mix is pretty uniform. Stuff 1/4 of the mixture into the center of each avocado half and set aside.
  • If you want to make tortilla chips:.
  • In a large saute pan, heat the olive oil until hot but not smoking. Put a tortilla in the pan and fry, turning once, until just crisp and lightly browned, 1-2 minute. Remove to paper towels to drain and repeat with remaining tortillas. Break the tortillas into chips.
  • If you want to make slaw:.
  • In a large bowl, combine all the slaw ingredients and mix well. Place the slaw on individual serving plates and top with the stuffed avocado halves. Serve, passing the tortilla chips separately. Enjoy!
