This frosty fellow is always welcome at a winter gathering, according to Susan Seymour of Valatie, New York. He's very tasty, too--and gets a little zip from horseradish and garlic.

2 packages (8 ounces each) cream cheese, softened
1 package (4-1/2 ounces) dried beef, chopped
1/2 cup finely chopped green onions
1 teaspoon prepared horseradish
1/2 teaspoon garlic powder
1/2 cup dried parsley flakes
2 cartons (4 ounces each) spreadable cream cheese
5 dried cranberries
1 baby carrot
2 pretzel sticks
1 large round cracker
4 round butter-flavored crackers
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese until smooth. Stir in the dried beef, onions, horseradish and garlic powder until blended. Shape into two balls, one slightly larger than the other. Roll each in parsley. Cover and refrigerate 8 hours or overnight., On a serving plate, place the smaller cheese ball on top of larger cheese ball, forming a snowman. Set aside 1 teaspoon spreadable cream cheese. Carefully cover snowman with remaining spreadable cream cheese. , Arrange cranberries for eyes and buttons. Insert carrot for nose and pretzel sticks for arms., Place a small dab of reserved cream cheese on top of large cracker. Top with a butter-flavored cracker. Repeat with three remaining butter-flavored crackers. Place on top of snowman. Serve with crackers.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1/4 cup finely chopped fresh chives
1/4 cup slivered almonds, toasted
1/4 tsp. ground red pepper (cayenne)
1/4 cup KRAFT Grated Parmesan Cheese
peppercorns
1 baby carrot

Steps:

  • Mix first 5 ingredients until blended. Refrigerate 1 hour.
  • Divide cheese mixture into 3 different-size balls (1 small, 1 medium and 1 large). Coat with Parmesan. Arrange in line on serving plate to resemble a snowman lying down. (Largest ball should be at bottom of plate for the snowman's base, and the smallest ball should be at the top for the snowman's head.)
  • Decorate with remaining ingredients to resemble photo.

4 1/2 ounces dried beef, diced
1 bunch green onion (4-6 onion, chopped)
1/2 teaspoon garlic powder
1 teaspoon dried parsley
8 ounces whipped cream cheese
3 black olives, pieces
8 -10 dried cranberries
2 rosemary sprigs or 2 pretzel sticks
1 teaspoon horseradish
1 maraschino cherry (optional)

Steps:

  • Mix packages of cream cheese with dried beef.
  • Add chopped green onions, reserve 1 green top for scarf.
  • Blend in garlic powder and horseradish; blend well.
  • Form 2 balls, making one slightly larger for the body.
  • Roll in dried parsley.
  • Stack on top of each other with the larger one on bottom.
  • Spread whipped cream cheese as frosting on the snowman.
  • Break off irregular pieces of black olive to form 3 buttons down the front.
  • Wrap the green onion tops around the neck for a scarf and tie.
  • Use rosemary sprigs or pretzel sticks for arms.
  • Make a halo from the dried cranberries.
  • Serve with hearty crackers.
  • May use 1 maraschino cherry for the mouth.
  • Allow to chill in refrigerator for 6-8 hours for the flavors to blend.

4 cups cheddar cheese, shredded
2 tablespoons basil pesto
1 tablespoon grated onion
1/4 teaspoon yellow mustard
2 drops red pepper sauce
1 (4 ounce) container whipped cream cheese, softened
rosemary (optional)
dried cranberries (optional)
olives, diced or raisins (optional)
pimiento or red bell pepper (optional)
radicchio or carrot (optional)
asparagus or celery rib (optional)
assorted cracker, if desired

Steps:

  • Mix 3 pkg cream cheese and the Cheddar cheese; divide into 3 equal parts.
  • Combine 2 parts to equal 2/3 of mixture.
  • Mix in pesto.
  • Mix onion, mustard and pepper sauce into remaining 1/3 mixture.
  • Cover each cheese mixture and refrigerate about 4 hours or until firm enough to shape.
  • Shape each cheese mixture into ball.

One 8-ounce block cream cheese, at room temperature
1 tablespoon Worcestershire sauce
1 1/2 teaspoons grated lemon zest (from 1 lemon)
5 cups shredded white Cheddar (1 pound)
Fine salt 1 small carrot
2 asparagus spears, blanched
3 black olives, sliced in half
One 12-inch strip English cucumber or one 12-inch piece celery shaved thinly with a vegetable peeler
Crackers, for serving

Steps:

  • Thoroughly combine the cream cheese, Worcestershire, lemon zest, 3 cups Cheddar and 1 teaspoon salt in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides with a rubber spatula as needed. Transfer to a bowl, then cover with plastic wrap and chill in the refrigerator until firm, about 30 minutes.
  • Roll the cheese mixture into three balls to form the base, body and head of the snowman. (They should be just over 4-, 3-, and 2-inches in diameter.) Roll the balls in the remaining 2 cups Cheddar to create a snowy exterior. Insert a 6- to 8-inch wooden skewer vertically into the largest ball; use it to attach the body and then the head of the snowman.
  • Cut an inch off the tapered tip of the carrot and use it for the snowman's nose. Insert the asparagus spears into the body for arms. Use two olive halves for eyes, and the remaining four for buttons. Wrap the thinly shaved cucumber or celery around his neck to form a scarf.
  • Serve the snowman on a platter surrounded by crackers.

  • Beat three 8-ounce packages cream cheese and 1 stick butter (both at room temperature) with a mixer until creamy. Beat in 1 cup confectioners' sugar, 2 teaspoons vanilla and 1/2 teaspoon salt. Divide into 3 balls (large, medium and small) and wrap each in plastic wrap. Chill 2 hours, then roll in unsweetened shredded coconut and stack the snowman. Add brown mini M&M'S for the eyes, mouth and buttons, and red and green M&M'S for the nose and scarf (attach with icing, if necessary). Add pretzel arms. Serve with fruit or cookies.

Found this in a Women's Magazine and had to make it the first chance I had. Goes together so easy and so cute, I've posted the recipe as directed but myself used pepper corns for eyes and buttons. Great for the holidays. Recipe states use a processor, but I just mixed up in my Kitchen Aid and think you could even just do it by hand. Cook Time is chilling time

2 (8 ounce) packages cream cheese
1 (8 ounce) package sharp white cheddar cheese, shredded
1 (1 ounce) package ranch dressing mix, mix
1/4 cup fresh chives, minced
1 red bell pepper, halved
2 raisins
1 baby carrot
1 roasted pepper, drained

Steps:

  • In processor, puree cream cheese, cheddar and seasoning mix, scraping down sides of bowl occasionally.
  • Pulse in chives.
  • Transfer to bowl, cover.
  • Chill 1 hour.
  • Meanwhile take halved red bell pepper and carefully slice a hat shape out of it, set aside.
  • Divide chilled cheese mixture in 1/3 and 2/3 portions.
  • Wrap each portion in a sheet of plastic wrap, twist ends to form into a ball.
  • Freeze 1 our or until firm.
  • Unwrap cheese balls.
  • With moistened hands, shape each into a smoother ball.
  • Stack on serving platter.
  • Arrange raisins for eyes and bell pepper hat on top ball.
  • Place baby carrot for nose.
  • Cut small Strip of roasted pepper for mouth, and press into place.
  • Wrap 2 strips of roasted pepper around neck for scarf.
  • Serve with slice veggies and crackers.
