1 head cauliflower
2 teaspoons vegetable oil
2 cloves garlic, minced
2 tablespoons soy sauce
Juice of 1 lime (or a splash of rice wine vinegar)
2 green onions, sliced
1 tablespoon sriracha or other hot sauce, plus more if needed
Lime wedges, for serving

Steps:

  • Break up the cauliflower into large florets, then use your hands to break into very small florets.
  • Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower and garlic. Stir the cauliflower around in the pan, allowing it to get very brown in some parts. Cook for 3 minutes, then turn the heat to low.
  • Add the soy sauce, lime juice and most of the green onions, reserving the rest for serving. Stir and allow to cook for 1 minute, then add the sriracha and stir until incorporated. Add a little more sriracha if you want a deeper color and flavor.
  • Serve hot in a bowl. Sprinkle the remaining green onions on top and serve with lime wedges.

1 head large cauliflower, or 2 small heads, washed
1 teaspoon celery salt
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper
2 cups all-purpose flour
2 tablespoons cornstarch
1 ½ cups soy milk
1 ½ tablespoons apple cider vinegar
2 tablespoons hot sauce
vegetable oil, for frying

Steps:

  • Cut the cauliflower in large florets. Transfer to a large bowl and set aside.
  • In a small bowl, combine the celery salt, oregano, cumin, onion powder, garlic powder, paprika, cayenne, salt, and pepper. Mix well.
  • In a medium bowl, add half of the spice mix to the flour.
  • Add the cornstarch and mix.
  • In a separate medium bowl, combine the soy milk, apple cider vinegar, and hot sauce. Whisk.
  • Pour the remaining spice mix over the cauliflower florets and mix.
  • Pour the milk mixture over the cauliflower and mix well until they are coated.
  • Cover with plastic wrap and chill for 1 hour minimum.
  • Heat the vegetable oil in a large pan until it reaches 350°F (180°C).
  • Toss each cauliflower floret in the flour mixture until well-coated, shaking off any excess. Dip them back in the remaining soy milk mixture in the bowl where they marinated, then again in the flour mixture.
  • Fry the cauliflower for 4-5 minutes, until golden brown and crispy.
  • Drain the pieces on a wire or paper towels. Let cool 5-10 minutes before serving.

1 large head cauliflower, cut into large florets
1 cup unbleached all-purpose flour
1 tablespoon cornstarch, or arrowroot powder
½ teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon white pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon sweet paprika, or smoked paprika
¼ teaspoon old bay seasoning
1 teaspoon nutritional yeast
⅓ cup hot sauce
¼ cup plain unsweetened soy milk, or other non-dairy milk
1 tablespoon dijon mustard
5 cups safflower oil, or neutral oil, for frying

Steps:

  • In a medium bowl, combine the flour, arrowroot powder, salt, cayenne, white pepper, onion powder, garlic powder, paprika, Old Bay seasoning, and nutritional yeast.
  • In another medium bowl, combine the hot sauce, soy milk, and Dijon mustard and whisk until creamy.
  • In a large Dutch oven or heavy pot, heat the oil to 350°F (180°C). Double-line a large plate with paper towels and keep nearby.
  • Use one hand to dip a cauliflower floret into the wet mixture, then drop it into the flour mixture. Use your dry hand to coat it completely. Dip it back into the wet mixture and again in the dry mixture, keeping one hand devoted to wet and one to dry.
  • Carefully lower the twice-coated floret into the hot oil. Repeat with the remaining cauliflower until you can't fit any more into the pot. Do not overcrowd. Fry for 4-5 minutes, until the pieces are golden. Transfer the fried cauliflower to the lined plate and continue to fry the remaining cauliflower. Serve hot.

Boiled cauliflower was a staple in my house as a kid. If you've only ever had cauliflower cooked like that, then try it baked or fried - it'll blow your mind.

• 2 tsp salt
• ¼ tsp smoked paprika
• ¼ tsp curry powder
• ½ tsp chilli powder
• 1 litre canola oil, for frying
• 1 head cauliflower, cut into florets
• 2 tsp finely shredded curly parsley
• black pepper, to serve
• lemon wedges, to serve

Steps:

  • Combine the salt, paprika, curry powder and chilli powder and stir to combine. Heat the oil in a wok or large pan to about 180°C. Add half the cauliflower florets and fry until lightly browned, about 3 minutes. Drain and repeat for the remaining florets. While the cauliflower is still hot, sprinkle generously with the salt-and-spice mix, reserving any unused mix for a future batch. Scatter with parsley, grind over some black pepper and serve with lemon wedges. Try Adam Liaw's lamb and labne trenchers.

1 head cauliflower
5 tbsp corn starch (plus more for dusting)
1¼ cup water
1 cup all purpose flour
1 tsp baking soda
2 tbsp sesame oil
¼ cup gochujang
½ cup water
3 tbsp honey
Chopped chives or green onion
Chopped peanuts
Toasted sesame seeds
Salt and pepper
5-6 bamboo skewers
2 litres canola oil

Steps:

  • Break your cauliflower down into small bite-sized chunks. Once you remove the stem you should be able to break them apart with your hands.
  • In a large pot filled with an inch of water, steam your cauliflower until tender, 2-3 minutes depending on size. You don't want to over-cook it or else it'll give you trouble when trying to skewer it! Once steamed, remove from pot and set aside to cool.
  • In a large bowl, combine water, flour, cornstarch, baking soda, a pinch of both salt and pepper and the sesame oil. The batter should be thick, not runny and have a strong sesame scent.
  • Take your steamed florets and skewer them through the stem onto the stick, about three large or four medium will do. Dunk them in the batter one at a time. Transfer to a baking sheet and sprinkle with a healthy amount of extra corn starch. Deep fry at 350F for 2-3 min or until golden brown. Remove from oil and allow to drain and slightly cool.
  • In a pot over medium heat, add water, honey and gochujang. This is a very basic sauce, spicy and sweet. If you want less heat, simply add more honey. Just make sure to slightly reduce the sauce to obtain that perfect saucy, sticky consistency.
  • Chop peanuts, chives or green onion and set side. Brush sauce on each skewer then sprinkle with your garnishes.

1 egg
2 teaspoons milk
1 cup cracker crumbs
4 cups oil for deep frying

Steps:

  • Place cauliflower into a pan of lightly salted boiling water. Cook for 5 to 8 minutes, or until tender. Remove from heat, drain and cool.
  • Heat oil in a deep-fryer to 365 degrees F (180 degrees C). In a small bowl, whisk together the egg and milk with a fork. Place cracker crumbs in a shallow dish. Dip cauliflower in the egg mixture then roll in cracker crumbs.
  • Fry coated cauliflower in the hot oil until golden brown. Drain on paper towels.

6 tbsp vegetable oil
large piece ginger, finely chopped
2 tsp chilli flakes
2 tbsp cumin seed
2 tsp turmeric
1¼ kg (after trimming and removing leaves) cauliflower, broken into pieces
small bunch coriander, chopped

Steps:

  • Heat the oil in a big pan or wok with a lid, then add the ginger and spices. Swirl everything around for a few secs until the spices are aromatic. Reduce the heat, then stir in the cauliflower and some seasoning. Put the lid on and cook for 10 mins or until softened, stirring occasionally. Sprinkle over the coriander before serving.

1 small head cauliflower (500g), broken into medium florets
150g baby spinach
1 tbsp rapeseed oil
1 red onion, sliced
120g halloumi, cut into cubes
1 garlic clove, crushed
1 thumb-sized piece ginger, finely grated
1 tsp ground turmeric
1 tbsp medium curry powder
2 x 250g pouches brown basmati rice
1 red chilli, finely sliced

Steps:

  • Bring a large pan of salted water to the boil and cook the cauliflower for 5 mins over a high heat, adding the spinach for the final 2 mins. Drain and set aside.
  • Heat the oil in a large frying pan or shallow casserole dish and fry the onion over a medium heat for 5 mins. Turn up the heat, add the halloumi, cook for a further 5 mins, then add the garlic, ginger, turmeric and curry powder, and cook for 1 min more. Stir through the rice, cauliflower and spinach to warm everything through, adding 1 tbsp water if it looks a little dry. Season and scatter over the chilli.

  • Make the spicy sesame sauce by combining the sesame oil, garlic, soy sauce, rice vinegar, sugar and sriracha.
  • Bring the sauce to a boil then add the cornstarch slurry. Mix in and let the sauce thicken.
  • Add the fried cauliflower and toss to coat in sauce.
  • Garnish with sesame seeds and chopped scallions. Serve with rice.
