SPICY CUCUMBER STACKS

Steps:
- Place the cucumber slices on your serving platter. Top each slice of cucumber with 2 teaspoons hummus.
- Use an egg slicer to slice your hard-boiled eggs- or slice them thinly with a very sharp knife. Place an egg slice on top of each mound of hummus.
- Drizzle Sriracha sauce on top of each egg slice, and garnish with a cilantro leaf. Serve immediately.

Whisk 1 tablespoon rice vinegar, 2 teaspoons each sugar and soy sauce, 1/2 teaspoon sesame oil, 2 sliced scallions, 1 minced garlic clove and a pinch of red pepper flakes in a large bowl. Drain the cucumber and toss with the dressing; season with salt. Top with chopped cilantro.

- Peel cucumbers and cut them lengthwise. Scrape out seeds with small spoon, leaving hollow shells. Cut cucumbers crosswise into 1/4 inch strips. Combine soy sauce, vinegar, sugar, sesame seed oil, hot sauce, salt and pepper in a small bowl and mix well. Add cucumber and toss to coat each slice. Chill before serving.
