CHIPOTLE LIME TOFU
This smokey meaty tofu makes a great taco or burrito stuffing, or as the protein for your bowl!

Steps:
- Preheat oven to 375 degrees
- Cut tofu into ½-inch cubes and set aside.
- Combine cornstarch, garlic powder, salt, and some cracks of fresh ground pepper in a large bowl, stir until completely combined. Toss tofu cubes in and set aside.
- Heat a large oven-proof skillet over medium heat. Add 4-5 tbs oil so the entire bottom of the pan is covered. Once oil is heated enough, carefully add tofu cubes.
- Cook 4-5 minutes on each side
- While tofu is cooking, make the glaze. Combine chipotle, adobo sauce, steak sauce, brown sugar, veggie broth & lime juice in a small blender or food processor until smooth.
- Once tofu is cooked on both sides, pour the sauce over it, flipping to cover each piece completely. If you don't have an oven proof skillet, transfer the tofu to a baking sheet to bake. Just make sure you pour the leftover oil on top too!
- Bake for 15 minutes, flip, then bake for another 10 minutes.
SPICY CHIPOTLE LIME GRILLED TOFU
This a great way to grill tofu with a different flavor than usually. It can be adjusted to your liking. Great for summer barbecues or a quick dinner. I like it with garlic bread, fresh corn on the cob, and a green salad. Prep time includes pressing the tofu.

- Slice tofu into 4-5 slices. Wrap the tofu in paper towl and press for 20-30 minutes under some heavy cans on a cookie sheet.
- When tofu is done pressing, mix 1/2 the packet of marinade mix, garlic powder, hot sauce, oil, water, and 1/2 the lime juice in a small bowl. Add more water if it seems too thick. The garlic and hot sauce can be adjusted to your liking.
- Place tofu in shallow pan or plate and cover with the marinade, turning to coat. Let marinade for 10 minutes.
- Grill on a grill pan or outdoor grill on medium-high heat until searing marks are on both sides, and outside becomes crispy. About 10 minutes.
- Using a wedge or two of the remaining lime, sprinkle the juice over the cooked tofu for extra zing.
CHIPOTLE LIME DIP AND BBQ'D TIGER SHRIMP
On it's own this is an awesome Dip with unlimited possibilities - and it's ready in just minutes. The grilled shrimp is great, as is grilled chicken. I have substituted the new Tabasco Chipotle Flavour hot sauce and it's a great flavour. Originally from Food and Drink.

- In a bowl, stir together mayonnaise, sour cream, chipotle sauce, garlic, lime rind and lime juice.
- Cover and refrigerate until serving (up to one day) Using metal skewers or wooden skewers that have been soaked in water for at least 30 minutes, thread two or three shrimp on each skewer.
- Place each skewer on greased grill and grill until pink (about 1 1/2 to 2 minutes per side).
- Serve either hot or cold with Chipotle Lime Dip for dipping.

GRILLED MARINATED FLANK STEAK WITH LIME-CHIPOTLE SAUCE
This is wonderful for Summer BBQ (even though I fire up the grill even during the middle of the winter). The flavors are wonderful. It may be a little spicy for some, but for the daring it's great. I found this recipe in the Oregonian newspaper, from Portland Oregon. I have many requests for this for dinner and for the recipe. Enjoy!!

- To make meat: Carefully trim steak of any fat.
- Mix together chipotle, garlic, cilantro, oil, wine and soy sauce; pour over steak. Cover and refrigerate 4 to 6 hours or overnight, turning occasionally. I always marinate overnight for the best flavor. To make sauce: In food processor, briefly blend honey, chipotle, vinegar, mustard, lime juice, garlic, cumin, allspice, cilantro and salt. Set aside. Correct seasoning with salt and pepper.
- Prepare grill and hot coals according to manufacturer's instructions. Remove steak from marinade and discard marinade. Pat steak dry and grill over hot coals to desired doneness, approximately 4 to 5 minutes per side for medium-rare. Let steak rest 3 minutes before slicing.
- To serve, slice meat thinly across grain on angle and arrange on warm plates with grilled sweet onions and peppers. Drizzle sauce over or serve on side.
- NOTES : This is a great outdoor dish because it doesn't involve any stove-top or oven cooking. Any leftover meat and sauce can be turned into a filling for tacos or burritos.

SPICY CHIPOTLé-LIME SALSA
The sauce-like salsa has a surprising spiciness to it. At first it is more of a smoky taste, then the spice hits you. But the great thing is it does not leave your mouth burning. I combined salsa inspirations from 2 places I have lived. Ecuadorian "Aji", and Mexican Salsa. It won the big salsa competition at work. It was named "Shut You Up" Salsa, but also was nicknamed "Sneak Attack Salsa" and "Delayed Reaction Salsa"

- Combine lime juice, chili peppers, garlic, onion, and cilantro, in a food processor or blender. Blend until the mixture is uniform. (Doing these items first is important. If don't, you will get unwanted chunks.).
- Add Tomato, and Chipotlés, blend until smooth.
- Add garlic powder, onion powder, crushed red pepper, black pepper, and "Chipotlé Tabasco" sauce.
- Blend mixture until smooth.
- Let sit 3-6 hours, or even better, overnight for flavors to blend.

CILANTRO LIME GRILLED TOFU

- Place the block of tofu onto a plate and place another plate on top. Set a 3 to 5 pound weight on top (a container filled with water works well). Press the tofu for 20 to 30 minutes, then drain off and discard the accumulated liquid. Slice the tofu lengthwise into 4 thick slabs or cut into cubes and thread on skewers. Place tofu pieces or skewers on a plate.
- Whisk together the lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt, and black pepper in a bowl. Brush the tofu with the marinade. Cover the plate with plastic wrap, and marinate tofu in the refrigerator for 2 hours or overnight.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Grill the tofu until almost blackened in spots, brushing occasionally with the marinade, about 10 to 15 minutes.

SPICY GRILLED TOFU
Be sure to use extra firm tofu and press out as much of the water as you can. To prevent sticking, give the tofu slices and the grill rack a generous coat of nonstick cooking spray. Cooking time includes marinading the tofu for 4 hours. This is from VT May/June 2006.

- Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
- Place the tofu in a single layer in the bottom of a 13x9 glass baking dish.
- In a small bowl, whisk together the lime juice, maple syrup, tamari, chile paste, garlic, and pepper.
- Pour mixture over the tofu, stirring to coat all the slices.
- Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours or overnight.
- When the tofu is marinated and ready to cook: Spray grill rack or pan with nonstick cooking spray. Heat grill or grill pan to medium heat.
- Place tofu slices on the grill. Reserve the marinade.
- Grill tofu 3 or 4 minutes on each side, or until the outside is browned and crisp.
- Return tofu to the baking dish and toss the slices with the reserved marinade.
- Serve immediately.

- Heat a lightly greased grill to medium heat. I like to use my stovetop double-burner grill for tofu. If using a grated grill, instead of greasing the grill I'd instead place tinfoil on the grill. This will prevent you from losing any tofu bits in the event one of your steaks split/break. This can happen if the grill isn't greased enough, so better safe than sorry.

- Unwrap the tofu and rinse off with fresh water. Wrap in cheesecloth or a clean dish towel and place on a plate or tray with a heavy object such as a book or skillet on top for 20 minutes.
- Combine all the ingredients for the marinade in a blender or food processor. Pulse or blend until smooth.
- Combine all the ingredients in a food processor and pulse to chop all the veggies. It should be thick and slightly chunky.
- Place the vegetables for the skewers in a bowl, drizzle with 1 tablespoon olive oil and toss to coat the veggies. Thread the skewers alternating vegetables and tofu. Place on a baking sheet or plate while you finish making the skewers and until you are ready to cook. Drizzle the remaining marinade over the skewers and add a bit of salt and pepper to taste.
