This hearty chili is truly a snap to prepare. After browning the beef and stirring in the spices to give them a slightly toasted flavor, you simply toss everything into a slow cooker and let the mixture simmer all day. Garnish with sour cream, chopped fresh parsley, and chopped red onion.

1 ½ tablespoons vegetable oil
¾ pound cubed beef stew meat
2 tablespoons chili powder
1 teaspoon ground cumin
2 tablespoons all-purpose flour
1 (28 ounce) can diced tomatoes
1 (16 ounce) can black beans, rinsed and drained
1 (16 ounce) can kidney beans, rinsed and drained
1 ¾ cups beef broth, divided
1 large onion, chopped
1 small green or red bell pepper, chopped
¼ cup chopped fresh parsley
2 tablespoons barbeque sauce
1 ½ tablespoons brown sugar
2 cloves garlic, or more to taste, minced
¾ teaspoon salt

Steps:

  • Heat oil in a large skillet over medium-high heat. Add stew meat and brown for 2 minutes, stirring often. Add chili powder and cumin; cook and stir until fragrant, about 1 minute. Stir in flour and cook for 1 minute more. Transfer meat to a large slow cooker.
  • Add diced tomatoes, black beans, kidney beans, 1 1/2 cups beef broth, onion, bell pepper, parsley, barbecue sauce, brown sugar, garlic, and salt to the slow cooker; stir until well combined.
  • Cover and cook on Low, stirring occasionally, until beef is tender, 6 to 8 hours. Thin the chili with remaining beef broth as it cooks, if consistency is too thick.

2 garlic cloves (finely chopped)
1 onion (finely chopped)
½ celery stalk (finely chopped)
1 red chilli pepper (finely chopped)
1½ tablespoons sweet chilli sauce and tomato puree (each)
⅔ teaspoon paprika and coarse sea salt (each)
½ teaspoon ground cumin
⅓ teaspoon oregano, coriander and onion powders (each)
2 tablespoons olive/vegetable oil
4 tablespoons cilantro/fresh coriander (chopped, plus zest of 1 lime for serving)

Steps:

  • In a saucepan heat up the oil, add the garlic, chilli, onion and celery, stir and fry over a medium heat for 4 minutes, stirring often. Add the beans, tomatoes, tomato paste, chilli sauce, spices, stir, cover and simmer for 30 minutes, stirring occasionally.
  • Remove from the heat, add the cilantro, lime zest and serve with tacos, tortillas, rice, nachos, salsa, chopped avocado or a dollop of sour cream/yogurt.

1 tbsp olive oil
1 large onion, finely chopped
1 garlic clove, crushed
1 tbsp tomato purée
1 tsp mild chilli powder
½ tsp ground cumin
400g can chopped tomatoes
500ml vegetable stock
400g can mixed beans, drained and rinsed
1 red pepper, cut into chunky dice
tortilla chips, to serve
4 limes wedges, to serve

Steps:

  • Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 mins until combined. Sprinkle in the spices and cook for another 1 min.
  • Tip in the chopped tomatoes, half fill the can with water, and add to the pan. Pour in the stock and simmer on a medium heat for 10-15 mins, uncovered. Season, then whizz using a hand blender until smooth. Add the beans and red pepper, and cook for another 15 mins until the pepper is tender.
  • Serve in bowls topped with a small pile of tortilla chips and a lime wedge.

It's vegetarian by nature, but feel free to start the pot with sausage, slab bacon or leftover ham if you're feeling more omnivorous. If you can't find harissa, use tomato paste and a pinch of red-pepper flakes for spiciness.

1 large bunch (or 2 small bunches) broccoli rabe or kale, thick stems separated from the leaves
1/4 cup olive oil, plus more for drizzling
4 garlic cloves, thinly sliced
1 medium red or yellow onion, thinly sliced
Kosher salt and black pepper
2 to 3 tablespoons harissa or tomato paste
Red-pepper flakes (optional)
3 (15-ounce) cans large white beans, such as cannellini, butter or great Northern, drained and rinsed
4 cups vegetable or chicken broth
1 preserved lemon, thinly sliced, or 1 lemon, halved, for squeezing
2 ounces feta or other salty cheese, such as queso fresco or pecorino, crumbled
1 cup parsley or cilantro, leaves and tender stems
Fried or medium-boiled eggs, for serving (optional)

Steps:

  • Tear broccoli rabe or kale leaves into bite-size pieces and set aside. Chop the stems into about 1/4-inch pieces; set aside.
  • Heat 1/4 cup olive oil in a large pot over medium heat. Add garlic and onion, and season with salt and pepper. Cook, stirring occasionally, until lightly browned and sizzled at the edges, 4 to 6 minutes.
  • Add harissa (or tomato paste and a pinch of red-pepper flakes), and stir to coat in the oil. Cook until the harissa is a nice brick red color, the sugars start to caramelize and the oil turns a nice vibrant fiery orange color, about 2 minutes.
  • Add beans, and season with salt and pepper. Using a wooden spoon or spatula, crush a few beans to release their creamy interior.
  • Add the broth and reserved stems, and season with salt and pepper. Bring to a simmer and cook until you've reached your desired consistency (less time for a brothier soup, more time for a thicker stew), 15 to 20 minutes.
  • Add broccoli rabe or kale leaves and preserved lemon or lemon juice, and stir to wilt the greens. Season with salt, pepper and more red-pepper flakes if you want it spicier.
  • Serve with feta and parsley, and with eggs, if you like.

HOT AND SPICY CHILI



Hot and Spicy Chili image

The biggest thing to know about this recipe is it is designed to be as hot or not as you want it. You can pick the hot sauce, and the type of peppers you use depending on how hot you want it. The Mongolian Fire Oil is deceiving in name. The oil adds mild warmth to the full mouth, not a flaming burst so do not worry about adding the full amount. A small taste on the tip of the tongue will show how not "HOT" it is.

2 1/2-3 lbs ground beef
1 (8 count) package hot Italian sausages
stew beef chunk, you may have to cut these down from larger pieces
1 (16 ounce) can tomato sauce
16 ounces diced tomatoes with jalapenos
16 ounces white beans (Chefs Choice)
16 ounces black beans
16 ounces kidney beans
6 jalapenos, sliced (note all peppers can be swapped with other peppers of preference depending on how spicy you want the)
6 chili peppers, sliced
1 habanero pepper, sliced
1 (12 ounce) bottle beer, i use Corona beer
1 garlic clove
1 white onions or 1 yellow onion
mongolian fire oil
chili powder
red pepper
favorite hot sauce

Steps:

  • Prep all veggies in separate containers. Slice all peppers, do not separate seeds, chop onion and slice or chop garlic.
  • Pour tomato sauce and diced tomatos into large pot and use medium to high heat. Stir often to prevent burning sticking to bottom.
  • Add peppers, onion, garlic and peppers to sauce as you stir.
  • Brown the ground beef in a separate pan over high heat until color is more brown than pink and add to pot WITH oil from browning.
  • Repeat as needed until all beef is used. I recommend doing this is small amounts using a spatula to "stir" beef. "A metal spatula is recommended as you will have to break apart pieces that stick together,.
  • Make sure the stew beef is cut into small cubes, 2 to 3 fingers in width, and brown in pan as done previously with ground beef and add to pot with oil.
  • Remove the skin from the spicy sausage and brown the filing like above and add to pot with oil.
  • add beer to pot.
  • Open and add cans of beans one at a time stirring as they are added. - Drain the beans for a thicker final chili or add all for a thinner one.
  • Lower heat to medium low and let chili simmer for an hour or two stirring to prevent sticking at bottom of pot.
  • Add Three tablespoons of Mongolian fire oil.
  • Add 1/8 to 1/4 cup chili powder Add Red pepper, chili powder and favorite hot sauce until desired spice level is attained.
  • Let simmer for 2 or more hours, stirring each 15 min max, to fully cook meat and allow for spice infusion.

1 large white onion, chopped
1 to 2 fresh jalapeño chiles, seeded and chopped

2 teaspoons dried oregano, crumbled
1/3 cup chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne
14 1/2-ounce can beef broth
1 cup brewed coffee
1 cup water
28- to 32-ounce can crushed tomatoes with purée
2 (19-ounce) cans small red beans or kidney beans, rinsed and drained
Accompaniments: toasted salted pumpkin seeds , chopped red onion, torn fresh cilantro sprigs, diced avocado, lime wedges, sour cream, and warmed corn chips or tortilla chips

Steps:

  • Cook bacon in a 6- to 8-quart heavy pot over moderate heat, turning, until crisp. Transfer with tongs to paper towels to drain and pour off all but 2 tablespoons fat from pot. Crumble bacon. Pat pork dry and season with salt and pepper. Add oil to pot and heat over moderately high heat until hot but not smoking. Brown pork in about 6 batches without crowding and transfer with a slotted spoon to a plate. Add onion and jalapeños and cook over moderate heat, stirring, until softened. Add garlic, oregano, chili powder, cumin, and cayenne, then cook, stirring, 1 minute. Return pork to pot with any juices accumulated on plate and add broth, coffee, water, and tomatoes with purée.

1 small aubergine (about 250g), cut into 3cm dice
2 medium onions, halved and finely sliced
1 yellow pepper, deseeded and cut into 3cm dice

1 medium sweet potato (300g), peeled and cut into 2cm dice
1 tsp ground coriander
½-1 tsp hot chilli powder

600ml cold water
1 large courgette, halved lengthways and cut into 1.5cm slices
2 tsp cornflour
2 tsp cold water
freshly squeezed juice of ½ lime
4 tbsp half-fat crème fraiche
flaked sea salt
fresh coriander leaves, to garnish (optional)
lime wedges, for squeezing

Steps:

  • Heat the oil in a large, deep non-stick frying pan, saucepan or sauté pan. Stir-fry the aubergine over a high heat for 3 minutes until nicely browned. Add the onions to the pan and cook for 2 minutes, stirring often. Scatter the peppers and sweet potato into the pan and stir-fry with the aubergine and onions for another 4 minutes. Sprinkle over the spices and cook for 1 minute, stirring constantly. Add the chopped tomatoes and beans and stir in the 600ml of water. Season with a good pinch of salt, bring to a simmer and cook for 10 minutes, stirring occasionally. Add the courgette, return to a simmer and cook for a further 10 minutes, stirring regularly. Mix the cornflour with the 2 teaspoons of water to make a thin paste and stir this into the bean mixture. Cook for 5 minutes or until the sweet potato is just tender and the sauce is thick. Stir regularly, especially towards the end of the cooking time to prevent the sauce sticking. If it does start to stick, add a splash of water. Remove the pan from the heat, stir in the lime juice and serve the stew topped with half-fat crème fraiche and scattered with fresh coriander leaves if you like. Add lime wedges for squeezing.

10 garlic cloves

1 cup canned tomatoes

Steps:

  • Place the chicken into a roomy baking pan. Add the red chili, garlic cloves, parsley, cinnamon, and cumin.
  • Pour the water over it, cover with the lid, and bring to a boil over medium heat. Reduce to a simmer and cook for 30 minutes.
  • Remove the chicken from the pan and set it aside. Strain the cooking liquid into a bowl. Set this chicken stock aside, too.
  • Heat 1 tablespoon of vegetable oil in a saucepan over low heat and add the onion. Cook and stir until tender and season with salt, pepper, paprika, and sugar, in the process.
  • Add the canned tomatoes. Cook and stir until it bubbles.
  • Add the chicken stock and stir it in. Cover with the lid and simmer for 20 minutes.
  • Add the sweet corn and red beans and stir them in. Season with lime zest and lime juice. Cook and stir for 30 seconds, then remove from heat and set aside.
  • Heat 1 teaspoon of vegetable oil in a skillet over low heat. Cook the tortilla wedges until golden brown.
  • Carve the chicken and serve it with a bowl of stew and 5 - 6 tortilla wedges.

1/2 lb red kidney beans, uncooked
5 cups water
1 tablespoon olive oil
1/2 lb onion, peeled and finely chopped
1 garlic clove, crushed
1/2 lb mixed vegetables, scrubbed and chopped (e.g. celery, pepper, carrot)
1/2 teaspoon dried basil
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1 (14 ounce) can tomatoes
2 tablespoons tomato puree
3 tablespoons red wine
2 ounces bulgur wheat or 2 ounces couscous
2 1/2 cups stock (liquid reserved from cooking the beans)
1 tablespoon lemon juice
salt and pepper

Steps:

  • Soak the beans overnight in water, drain and rinse well.
  • Bring the beans to the boil in the 5 cups of water, let boil for ten minutes.
  • Then cover the pot and simmer for a further 35 - 40 minutes.
  • When the beans are soft, drain and reserve the stock for use later.
  • Heat the oil in a large saucepan, gently fry the onions and garlic for a few minutes and then add the chopped vegetables, beans, and spices.
  • Stir well and cook for 5 minutes
  • Add the tomatoes, tomato purée, red wine, bulgur wheat or couscous
  • Stir and then add the stock.
  • Bring the mixture to the boil, cover the pan and simmer for about 30 minutes.
  • Add the lemon juice, season with salt and pepper.
  • Cook 20 - 30 minutes
  • Serve hot.

Steps:

  • Pat the chicken dry and then cut it into bite-sized cubes. Set aside.
  • Peel the onions and chop them.
  • Heat the olive oil in a large nonstick saucepan over medium-high heat. When the olive oil is hot and shimmering, add the chopped onion and minced garlic; saute for about 3 to 4 minutes, or until the onion begins to brown.
  • Add the cubed chicken to the onion and cook for about 4 to 6 minutes, or until lightly browned on all sides, stirring frequently. A add the chopped jalapeno, coriander, cumin , diced tomatoes, and beans.
  • Reduce heat to low and simmer for about 5 minutes

¼ cup ground ancho chili pepper
1 tablespoon ground chipotle chili pepper
2 tablespoons ground cumin
2 teaspoons dried oregano
1 teaspoon ground coriander
½ teaspoon cinnamon
¼ cup cornmeal
1 (4-pound) beef chuck roast, trimmed of excess fat and cut into 1½-inch cubes (see note below)
8 ounces (about 8 slices) bacon, cut into ¼-inch pieces (see tip below)
2 teaspoons salt
2 small yellow onions, cut into 1-inch chunks
5 garlic cloves, chopped
3 jalapeño chiles, cored, seeded and finely diced (see note)
4 cups (32 oz) low-sodium beef broth
2 cups water water, plus more for the chili paste and deglazing the pan
1¼ cups lager beer
1 cup canned crushed tomatoes
1 tablespoon molasses, such as Grandma's Original
2 teaspoons natural unsweetened cocoa powder
Fresh chopped cilantro
Shredded Cheddar or Monterey Jack cheese

Steps:

  • Mix the chili powders, cumin, oregano, coriander, cinnamon and cornmeal in a small bow and stir in ½ cup water to form a thick paste; set aside.
  • Season the beef with the salt; set aside.
  • In a large pot or Dutch oven, fry the bacon over medium heat, stirring frequently so it doesn't stick, until the fat renders and the bacon crisps, about 10 minutes. Using a slotted spoon, remove the bacon to a paper towel-lined plate. Pour all but a few teaspoons of fat from the pot into a small bowl; set aside.
  • Increase the heat to medium-high. Sear the meat in three batches (it should be in a single layer), until well browned on one side, about 4 minutes per batch, adding more of the reserved bacon fat as necessary. (Hint: Once the meat is in the pan, don't stir or touch it - leaving it alone will allow it to develop a nice brown crust on one side.) Place the seared meat on a plate.   • Note: When selecting the meat, be sure not to buy anything generically labeled "stew meat." Also, you will lose about ½ pound after trimming the fat, so if you buy the meat already trimmed and cubed, you'll only need about 3½ pounds.
  • Tip: To make bacon easier to chop, try placing it in the freezer for 15 to 20 minutes first. The colder it is, the easier it is to cut.
  • Note: Always be careful when handling jalapeño peppers. Wash your hands well when done and avoid touching your eyes.
