SPICY CHICKEN CURRY (DIABETIC/ CROCK POT)

Spicy Chicken Curry (Diabetic/ Crock Pot) image

From the Fix-it and Forget-it Diabetic Crock pot Cookbook submitted by Tom and Sue Ruth of Lancaster, PA. Sounds easy but there are a lot of ingredients! There are 2 steps to the cooking process and the first takes 2 hours so this isn't the kind of recipe you can throw together and leave all day. The second part takes 4-6 hours to cook. Sounds tasty.

CHICKEN CALIENTE - CROCK POT

Chicken Caliente - Crock Pot image

Medium - mild spicy chicken Dish. Really quick and easy to make. I got this from a coworker but had to work out the portions for myself. Took 3 tries, but I got it. I use prepackaged Shredded Cheese and Frozen Vegetables. To change serving size: use more or less chicken. All other ingredients remain the same. To decrease or increase spicy: use more or less cheese.
