SPICY SOUTHWEST CHICKEN CASSEROLE

This is a recipe I developed after tweaking many other recipes. It has become a real favorite in my household! Easily adjustable to your preference of spiciness as well. Also easy to change to your liking by adding other veggies or peppers. Save time by cooking extra chicken ahead of time when making other chicken dishes. Serve with your choice of toppings, like sour cream, guacamole, sliced avocados, sliced black olives, or whatever else you like!

1 pound skinless, boneless chicken breast halves
½ cup water, or as needed
1 large onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, partially drained
1 (14 ounce) can whole kernel corn, drained
¾ cup picante sauce
1 (4 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon ground cumin
4 (8 inch) flour tortillas
1 (10.75 ounce) can condensed fiesta-style nacho cheese soup
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring chicken breasts and water to a boil in a large skillet; cook over medium heat until chicken juices run clear and meat is no longer pink inside, about 10 minutes. Transfer chicken breasts to a large plate, reserving pan juices in skillet, and shred chicken with 2 forks.
  • Cook onion and red bell pepper in reserved drippings over medium heat until onion is translucent, 5 to 8 minutes. Return shredded chicken to skillet. Stir black beans, corn, picante sauce, chopped green chiles, chili powder, and cumin into chicken mixture until thoroughly combined. Bring mixture to a simmer and cook until heated through, about 5 minutes. Pour chicken mixture into prepared baking dish.
  • Arrange flour tortillas in a single layer over chicken mixture. Stir fiesta soup with diced tomatoes and green chiles in a bowl until thoroughly combined; spread soup mixture over tortillas. Top casserole with Mexican cheese blend.
  • Bake in the preheated oven until cheese topping has melted and casserole is hot, about 30 minutes. Cool 5 minutes before serving.

This is a real tasty, very simple, no brainer sort of chicken casserole that everyone I've made it for just LOVES. This recipe makes A LOT so it's perfect for when the whole family gets together, or if you just want leftovers for work the next day. It can be prepared hours in advance and left to cook for later leaving the cook free to entertain.

1 (8 ounce) can peas (drained)
1 (8 ounce) can corn (drained)
1 (8 ounce) can diced green chilies (don't drain)
1 jalapeno, diced (optional)
1 (14 1/2 ounce) can cream of potato soup
14 1/2 ounces cream of chicken soup or 14 1/2 ounces cream of mushroom soup
8 cups wide egg noodles
2 lbs chicken (dark or white)
3 cups sharp cheddar cheese, shredded
2 tablespoons sea salt
2 tablespoons garlic powder
1 tablespoon oregano
2 teaspoons rosemary
2 teaspoons cayenne
2 teaspoons cumin
3 bay leaves

Steps:

  • Cut chicken in 1 ½ inch cubes (this will help it to cook faster and get the seasonings throughout the whole piece of chicken).
  • Boil chicken in a big covered pot of water seasoned with sea salt, garlic powder, oregano, rosemary, cayenne, cumin and bay leaves for approximately 1 hour. (Don't let boil too hard or your broth will evaporate too quickly).
  • Have soups, veggies, green chilies and 1 cup shredded cheese pre-mixed in bowl; set aside.
  • Once cooked, scoop chicken out of pot, add more water to broth and boil egg noodles in broth until soft.
  • Drain pasta and return to pot.
  • Add chicken and soup mixture to pot and stir.
  • Pour into casserole dish and top with remaining cheese.
  • Bake at 400°F for 15 minutes.
  • Turn to broil for another 5-6 minutes checking every few minutes to make sure the cheese doesn't burn.
  • Sprinkle top with crushed red pepper and cayenne if you want it spicier.
  • I usually top half of the casserole with the red pepper and cayenne for those that want it spicier.

2 tablespoons unsalted butter, plus more for the dish
1 bunch scallions, chopped
2 cloves garlic, chopped
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 1/2 cups low-sodium chicken broth
1 cup heavy cream
1 1/2 cups salsa verde
3 cups cubed rotisserie chicken, skin removed
1 15-ounce can white beans, drained and rinsed
1 cup fresh cilantro, plus more for topping
1 8-ounce bag tortilla chips, coarsely crushed (about 4 cups)
2 cups shredded mild cheddar cheese (about 8 ounces)

Steps:

  • Position a rack in the upper third of the oven; preheat to 400 degrees F. Melt the butter in a large pot over medium heat. Add the scallions and garlic and cook until softened, about 2 minutes. Sprinkle in the flour, cumin, oregano and cayenne and stir until coated. Add the chicken broth and heavy cream and bring to a simmer. Cook until slightly thickened, about 2 minutes. Stir in the salsa and remove from the heat. Stir in the chicken, white beans and 1 cup cilantro.
  • Butter a 3-quart baking dish. Spread one-third of the crushed tortilla chips in the bottom. Top with half of the chicken mixture. Spread another layer of tortilla chips on top and sprinkle with half of the cheese. Top with the remaining chicken mixture, tortilla chips and cheese. Cover with foil and bake 30 minutes. Uncover and bake until lightly browned and bubbling, about 10 minutes. Top with more cilantro.

1¼ kg chicken thighs and drumsticks (approx. weight, we used a 1.23kg mixed pack)
1 tbsp olive oil
2 onions, sliced
1 garlic clove, crushed
2 red chillies, deseeded and chopped
250g frozen peppers, defrosted
400g can chopped tomatoes
420g can kidney beans in chilli sauce
2 x 400g cans butter beans, drained
400ml hot chicken stock
small bunch coriander, chopped
150ml pot soured cream and crusty bread, to serve

Steps:

  • Pull the skin off the chicken and discard. Heat the oil in a large casserole dish, brown the chicken all over, then remove with a slotted spoon. Tip in the onions, garlic and chillies, then fry for 5 mins until starting to soften and turn golden.
  • Add the peppers, tomatoes, beans and hot stock. Put the chicken back on top, half-cover with a pan lid and cook for 50 mins, until the chicken is cooked through and tender.
  • Stir through the coriander and serve with soured cream and crusty bread.

The mother of a friend taught me to make this..she is from Texas, so it is a little spicy. You can modify the tomatoes to the mild kind. ( I do for my 7 year old...she loves it)Or use spicy for adults. My whole family loves this recipe. Add a salad and bread for a quick easy meal.

1 lb chicken (bone in is fine)
5 -7 soft tortillas, taco sized
1 (10 1/2 ounce) can hot Rotel Tomatoes (or original, or mild)
2 (10 1/2 ounce) cans cream of chicken soup
fresh mushrooms, diced
4 cups shredded monterey jack and cheddar cheese blend
3 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Remove skin from chicken if it has any. Put in large pot, cover with water. Turn on high, cover, and forget about it for a while. (Until chicken is thoroughly done and coming off bone, or easily shredded with fingers)Allow to cool, then shred chicken into small pieces.
  • While chicken is cooking, dice mushrooms and chop onions.
  • Spray a large pan (preferably glass)with non stick cooking spray. Put a layer of tortillas on the bottom. Cover with a 1/2 of shredded chicken.
  • Mix soups, mushrooms, tomatoes, and salt and pepper together in large bowl. Put 1/3 of mixture on top of chicken, spread, and add 1/3 of cheese.
  • Add another layer of tortillas, cover with remaining chicken, 1/3 of soup mixture, and 1/3 of cheese.
  • One more layer of tortillas. Cover with remaining soup mixture and cheese. Sprinkle green onions on top.
  • Bake at 350 for 30-40 minutes, or until cheese is bubbling and a little browned at edges.

1 cup green bell pepper, chopped
1 tablespoon butter or 1 tablespoon margarine
1 (14 ounce) can chicken broth
1 (10 3/4 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can diced tomatoes with mild green chilies
1 (11 ounce) package 6-inch corn tortillas, torn
4 cups monterey jack cheese, shredded
1 1/2 lbs boneless skinless chicken breasts, cooked & shredded
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F. In small skillet cook onion and bell pepper in hot butter until tender; remove from heat and set aside.
  • Combine chicken broth, mushroom soup and undrained tomatoes.
  • In a 3 quart rectangular baking dish layer half of the soup mixture, half of torn tortillas, half of chicken, half vegetable mixture and half of cheese. Repeat layers.
  • Bake uncovered 45 minutes. Let stand 5 to 10 minutes before serving.

This recipe is one that is a mixture of many simular recipes I have tried in the past, but none of them impressed me that much. So through many trials and failures I came up with my own combination of ingredients. I think it is quite good! So decided to share this recipe with you to see what you think.

4 boneless skinless chicken breasts, cut into eight cubes
2 tablespoons olive oil
1 (1 ounce) envelope taco seasoning
1 cup frozen corn, cooked as directed
2 (15 ounce) cans s and w brand caribbean black beans
1 (7 ounce) can diced green chilies
1 (14 ounce) can diced tomatoes with jalapenos
1 (2 1/4 ounce) can sliced olives, drained
1/2 cup medium salsa
1 tablespoon chicken soup base, paste (Smart and Final brand if interested) (optional)
1 (8 1/2 ounce) package sweet cornbread mix (Jiffy brand)
1/2 cup grated colby cheese or 1/2 cup cheddar cheese
1/2 cup grated monterey jack cheese

Steps:

  • In a hot skillet add the olive oil and chicken cubes, cook just until no longer pink.
  • Stir in the taco seasoning.
  • Add all the remaining ingredients with the exception of the corn bread mixture and the cheese.
  • Blend together and pour into a greased 9x12 inch casserole dish.
  • Mix, but do not bake the corn bread as directed on the package.
  • Spread the uncooked cornbread mixture on top of the casserole.
  • Sprinkle the cheeses that have been blended together evenly on top of the cornbread mixture.
  • Bake in a hot oven at 350 degrees for 35-45 minutes.
  • You want the cheese and the corn bread to turn a nice light golden brown color.
  • If you are a cornbread lover like myself, use two packages of prepared cornbread instead of one.

SPICY CHICKEN AND RICE CASSEROLE

Plain old chicken and rice gets a flavor booster from spicy soup and pepper jack cheese. If you can't find Campbell's Chicken Verde soup (my store sometimes doesn't have it) use regular cream of chicken and add about 2 T jalepeno juice.

1 1/2 cups uncooked rice (NOT Minute rice)

Steps:

  • Preheat the oven to 350 degrees.
  • Place shredded chicken evenly in a 9x13 dish. Top with rice and then cheese.
  • Mix the remaining ingredients well and pour over chicken, rice and cheese. (This is going to look VERY runny--it is supposed to. It all cooks down and cooks the rice. This is why you cannot use Minute Rice).
  • Cover with foil and bake for one hour. Remove the foil and bake 30 minutes longer, or until all liquid is absorbed.
