EVERYTHING BAGEL CHEESE CRACKERS



Everything Bagel Cheese Crackers image

Number Of Ingredients 7

8 ounces white Cheddar, shredded
1 cup all-purpose flour, plus more for dusting
1 tablespoon everything bagel seasoning
A good pinch of kosher salt
A few turns of black pepper
4 tablespoons unsalted butter, cold and cubed
2 to 4 tablespoons cold water

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Place the cheese, flour, everything bagel seasoning, salt and pepper in a food processor and pulse until combined. Add the butter and pulse until the mixture turns to small pea-size pieces. Continue pulsing and add the water, 1 tablespoon at a time, until the mixture resembles couscous and sticks together when you squeeze a small amount in your hand. Turn it onto a lightly floured surface and use your hands to work the mixture together into a ball of dough. Roll it out to 1/4 inch thickness and then cut out 1 1/2-inch squares. Place them 1 1/2 inches apart on your baking sheets, sprinkle with a bit more salt if you'd like and bake until they're lightly browned, about 20 minutes.

BAKED BAGEL EGG-IN-THE-HOLE

6 tablespoons salted butter, melted
4 everything bagels, halved
8 medium eggs
Kosher salt and freshly ground black pepper
2 sticks (16 tablespoons) unsalted butter
3 large egg yolks
Juice of 2 lemons, plus more if needed
1/2 teaspoon cayenne pepper
Kosher salt
8 ounces smoked salmon, sliced
1/4 cup diced red onion
2 tablespoons chopped chives
2 tablespoons capers, drained

Steps:

  • For the baked bagel egg-in-the-hole: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Brush the parchment with 2 tablespoons of the melted butter.
  • Using a 2-inch round cutter, make the center of each bagel half larger. Save the cutout pieces. Brush the cut side of the bagels and bagel cutouts with 2 tablespoons of the melted butter.
  • Place the bagels cut-side down on the prepared baking sheet. Line up the cutout pieces down the center of the baking sheet cut-side down as well. Using the palm of your hand, press the bagels into the baking sheet. This will help make sure they are touching the baking sheet so the eggs won't seep out before they're cooked.
  • Brush the tops of the bagels and cutouts with the remaining 2 tablespoons butter. Crack an egg into each bagel hole. Season the eggs with salt and pepper. Bake for 11 to 14 minutes, depending on how you like your eggs; 11 minutes will give you a runny yolk, while 14 minutes will give you a fully cooked yolk.
  • For the hollandaise: In a small saucepan, melt the butter until sizzling.
  • Put the egg yolks in a blender and turn on a low speed to allow them to combine. While the machine is running, slowly begin pouring the hot butter into the blender in a thin, steady stream. Once all the butter is in, immediately begin adding the lemon juice.
  • Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir and then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning if necessary. Transfer to a serving pitcher and cover with foil until serving.
  • For the garnish: Transfer the bagels and cutouts to a serving platter. Arrange the salmon around the bagels and garnish with the red onions, chives and capers. Serve with the warm hollandaise on the side.

Inspired by a viral video of a vendor in India making a similar dish, we created this version that's perfect for breakfast, lunch, or dinner (with a salad alongside).

3 large eggs
1 scallion, finely chopped
1 tablespoon unsalted butter
2 slices white bread
Kosher salt
2 slices American cheese

Steps:

  • Combine the eggs, scallion and 1 tablespoon water in a small bowl and whisk to combine.
  • Heat the butter in a large nonstick skillet over medium-high heat until melted and starting to brown around the edges. Add the egg mixture and swirl the pan to coat the bottom. Working quickly, dip 1 slice of the bread in the eggs, then flip it and place close to one edge of the pan. Repeat with the remaining slice of bread, setting it across the pan from the first bread slice (near the opposite edge) so they are in a straight line with eggs all around. Season with a pinch salt.
  • Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large metal spatula under the bread slices and flip the whole omelet in one single motion. Put the cheese on top of the omelet, covering the bread slices. Using the spatula, fold one side of the omelet (but not the bread side) over the bread and cheese followed by the other side. Then fold in half to form a sandwich and continue to cook until the bread on the bottom is golden brown, 1 to 2 minutes. Flip and cook until the other side is golden brown, 1 to 2 minutes.

1 spring onion
a few sprigs of fresh coriander
2 large eggs
1 tbsp sunflower oil
½ -1 tsp chopped fresh red chilli , or a generous pinch dried chilli flakes
25g mild grated cheddar

Steps:

  • Chop the spring onion and coriander quite finely and beat the eggs together with salt and pepper. Heat the oil in a small frying pan then tip in the onion, coriander and chilli and stir round the pan for a second or two so they soften a little. Pour in the eggs and keep them moving until two thirds have scrambled.
  • Settle the eggs back down on the base of the pan, scatter over the cheese and cook for about a minute until the omelette is just set and the cheese has melted.
  • Carefully fold the omelette using a palette knife and slide from the pan to a serving plate. Eat while the omelette is hot and the cheese still melted.

1 pickled jalapeno, chopped
1 Tbs chopped onions
2 Tbs chopped kielbasa sausage
2 eggs
2 tsp olive oil
1 bagel
Shredded cheese (for topping)

Steps:

  • Chop up jalapeno, onions, and kielbasa into small pieces
  • Mix in a small bowl with the eggs
  • Stir with fork until eggs are well combined with all ingredients
  • Grease a small pan with olive oil
  • Pour contents into the pan and heat on medium
  • Cook one side for about 3-5 minutes or until bottom starts to turn a light brown
  • Flip with spatula and cook the other side for another 3-5 minutes
  • Toast the bagel. Remove omelet from pan and sprinkle with cheese
  • Fold omelet onto the toasted bagel and enjoy!

2 bagels, sliced
4 teaspoons diced ham
4 teaspoons finely chopped green bell pepper
4 teaspoons finely chopped red bell pepper
1 scallion, finely chopped
4 large eggs, beaten
1 tablespoon milk
Kosher salt and freshly ground black pepper
4 slices extra-sharp Cheddar
1 tablespoon chopped fresh flat-leaf parsley
Hot sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a small baking sheet with aluminum foil and spray generously with nonstick cooking spray.
  • Place the bagel halves cut-side up on the baking sheet. Use your fingertips to work around the middle of each bagel half, scooping out the excess bread. Be careful to keep the shape and integrity of the bagel; if the bagel tears or cracks, flatten a piece of interior to mend the hole. Sprinkle 1 teaspoon each of the ham, green peppers and red peppers in each bagel half "moat," then sprinkle each with one-quarter of the scallions.
  • Put the eggs in a container with a pour spout. Whisk in the milk and 1/2 teaspoon each salt and pepper. Slowly pour one-quarter of the egg mixture into each bagel half "moat," making sure the egg does not overflow.
  • Bake until the eggs are just set and the edges of the bagels are turning golden brown, 12 to 15 minutes. Remove the baking sheet and place a slice of cheese on top of each bagel half. Return to the oven and bake until the cheese is melted and bubbling, about 3 minutes. Serve warm sprinkled with fresh parsley and a dash of hot sauce as desired.

4 fresh asparagus spears
2 tablespoons olive oil, divided
1/2 cup fresh broccoli, chopped
1/4 cup red bell pepper, chopped
1/8 cup purple onion, chopped
3 fresh mushrooms, sliced
3/4 teaspoon garlic powder
4 large eggs, lightly beaten
1 1/2 cups monterey jack pepper cheese, shredded

Steps:

  • Snap off the tough ends of the asparagus. If your asparagus is woody, remove the scales from the stalks with a vegetable peeler or knife. Cut diagonally into 1/2 inch slices. Set aside.
  • Heat 1 tbsp olive oil in a 10 inch non-stick skillet over medium heat. (You can also use a good seasoned cast iron skillet). Add the asparagus, broccoli, bell pepper, onion, and mushrooms. Cook until crisp tender; stir in garlic powder. Remove vegetable mixture from the pan and set aside.
  • Heat the skillet again over medium heat; add the remaining tablespoon of olive oil. Rotate the skillet to coat the bottom.
  • Add eggs. As the mixture starts to cook, gently lift the edges of the omelet with a spatula, and tilt the pan so the uncooked portion flows underneath.
  • When it starts to look firm and the bottom is golden, sprinkle the entire egg surface with the cheese. Add the veggies to one side of the omelet, thin flip the omelet over in half, so the veggies are covered. Cover and cook another 2 minutes to allow the cheese to melt over the veggies inside. Enjoy!
