CHEESE WAFERS
These are savory crackers that are a real hit with all especially at Christmas.

Steps:
- In a medium size mixing bowl, blend together butter or margarine and flour. Mix in the Cheddar cheese, salt, red pepper, hot pepper sauce, and pecans. Form the dough into a roll, wrap in parchment paper, and refrigerate over night.
- Preheat oven to 350 degrees F (175 degrees C).
- Slice dough into very thin wafers. Bake for 15 to 20 minutes, or until crisp.

SPICY CHEESE WAFERS

Steps:
- Place all ingredients into a large bowl. Initially, work through the ingredients with your fingers to distribute evenly, then start working with the heel of your hand, incorporating dry ingredients into mascarpone/egg white to bind. This will take nearly 5 minutes - so don't give up! And don't worry about keeping the rice krispies whole, just smush right down on those babies and work the dough!
- Separate the dough into 2 pieces and shape each piece into a firm, 6-inch log. Roll up tightly in plastic cling film and refrigerate a minimum of 4 hours before proceeding with recipe.
- Preheat oven to 400°F Line a baking sheet with parchment paper.
- Remove first roll of dough. With a sharp knife, cut the dough log into 1/4-inch-thick slices (no thicker!). Place slices on baking sheet and bake in the middle rack of the preheated oven for 18-20 minutes. Repeat with second pan, if necessary. When done baking, place both pans in oven, staggering one up, the other low down, and leave in hot, turned-off oven for another 40 minutes. This will ensure you have a nice, dry, crisp wafer, with a rich, brown colour.
- Remove and allow to cool completely. Store in an airtight container.

CRISPY CHEESE WAFERS
Steps:
- Preheat oven to 350 degrees
- Grate the cheese on the fine side of a cheese grater.
- Combine cheese, butter, flour, cayenne pepper, Worcestershire sauce, and salt in a large bowl. Mix together with a wooden spoon. You may have to use your hands to get it mixed together well.Note: You can use an electric mixer for this step, but mix the Rice Krispies in by hand.
- Once all the flour has been incorporated, add the cereal and gently mix it in.
- Shape mixture into 1-inch balls. Place them spread out on 2 ungreased baking sheets. Flatten each ball some with a fork.
- Bake for 15 minutes. Cool on pan.

Steps:
- Mix softened cream cheese and oleo using electric mixer.
- Blend in flour slowly.
- Stir in Rice Krispies and Cayenne.
- Drop batter by teaspoons on ungreased cookie sheet and flatten with fork to make round wafers. (I flatten mine with fork dipped in flour about 3 times).
- Bake at 375 degrees for 10 minutes.
- Store in airtight container to keep crisp.

- Preheat oven to 350.
- Cut butter into flour.
- Add cheese and seasonings.
- Fold in cereal.
- Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.

- Don't let them get too brown!

- In a medium bowl, whisk together all-purpose flour (spooned and leveled), salt, and cayenne pepper. Add finely grated cheddar cheese and softened butter; work with hands until a dough forms.
- Transfer to a sheet of waxed paper. Form into a 1 1/2-inch-diameter log; roll up tightly in paper. Refrigerate until firm, about 2 hours.
- Preheat oven to 400 degrees. Slice dough into 1/4-inch-thick rounds (discard ends, if desired); arrange 1 inch apart on baking sheets. Bake until edges are golden, 16 to 18 minutes; transfer crisps to a rack to cool.
PISTACHIO CHEESE WAFERS
Incredibly tasty. I love the peppers which gives these wafers a hint of fire. At a recent dinner these were the hit served as an appetizer with wine.

Steps:
- In a proccesor or electic mixer beat together the butter and cheese. Then add 1 cup of flour and mix. In a seperate bowl combine the, salt and black and cayenne pepper. Add to the cheese mixture and beat until blended. Stir in the pistachios.
- Turn the dough onto a floured surface and divide in half. Shape each piece into a log and 1 inch across. Wrap in plastic wrap and chill until firm.
- Preheat oven to 350 degrees.
- Cut the chilled dough into 1/4 slices and place them about 2 inches apart on ungreased cookie sheet. Bake for 10 to 12 minutes, until golden brown around the edges.
- Transfer to a rack to cool.

- Set butter out to soften completely.
- Grate cheese into a large bowl.
- Mix together cheese, butter, flour, and red pepper. (easiest to just use your hands mixing until it forms into course crumbs.).
- Mix in rice krispies.
- Shape dough into 1" balls and chill in fridge overnight.
- Preheat oven to 350°F.
- Flatten cheese balls on ungreased baking sheet with fork.
